Bacon Carbonara Pasta

WHAT YOU WILL NEED: 1 pack (175 g) DEL MONTE Spaghetti (Merienda Pack), cooked (reserve 3 tbsp pasta broth) 1 pouch (250 g) DEL MONTE Carbonara Sauce 80 grams bacon, sliced 1/4 cup (28.75 g) grated cheddar cheese HERE'S HOW: FRY bacon until crunchy. Set aside bacon, reserve drippings.  COMBINE drippings with DEL MONTE Carbonara Sauce, pasta broth. Cover, simmer for 3 minutes. ADD cheese and half of bacon, then pour over pasta. Toss. Top with remaining bacon.    Good source of Calcium- for strong bones and teeth

Cafe' Rio's Sweet Pork Burrito

These are a bit time consuming to prepare, but totally worth it. So if you have time to plan ahead, try these! They are super good!! (I didn't make the ranch dressing, but I did make the pork, rice and beans) Sweet Pork Ingredients: 2 pounds pork roast (boneless ribs can be used as well) 3 cans Coke (NOT diet), buying the 2 ltr . is cheaper 1/4 cup brown sugar dash garlic salt 1/4 cup water 1 can sliced green chilies 3/4 can enchilada sauce (I use Old El Paso brand, mild spiciness but any will work) 1+ cup brown sugar Directions: 1. Put the pork in a heavy duty ziploc bag to marinade. Add about a can and a half of coke and about 1/4 c. of brown sugar. Marinate overnight. 2. Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on low for 6- 8 hours. 3. Remove pork from crock pot and drain any liquid left in the pot. Shred pork. When you press your thumb into the flesh�it is firm. If it�s soft and has a sweet smell to it, the papaya is already overripe. 5. A good rule when buying is to check the integrity of the skin. My profession is that of a Personal Cook to a well-to-do family. Myself and the 'Lady' of the house work together to come up with just the right menus for each and every occasion. This being the end of my season with them, we wanted to serve something different than we had placed on the table so far. I suggested stuffed peppers and she seconded the motion and came up with this wonderful recipe from our 'Bible' of cookbooks (we both own a copy)~"Cooking With Class", published by 'The Parents' Council Charlotte Latin Schools, Inc.; Charlotte, North Carolina. I need to start this recipe post with a WARNING: This sweet popcorn is highly addictive! You may find yourself craving it every evening! I could not keep my hand out of the bowl long enough to take the above photo. Kettle corn is popular at fairs and carnivals here in the mid-west. It's simply sugar added to popcorn during the cooking process. The trick is to NOT burn the sugar. Kettle Corn 1/2 cup popcorn 1/4 cup vegetable oil (I use Canola.) 1/4 cup white sugar (use brown sugar for a caramel corn taste.) Dump the popcorn into a medium sauce pan. This is actually our POPCORN pan: Add the oil and heat over... here's the important trick here: MEDIUM heat. I usually pop corn at medium/high heat... but after scorching several batches with the sugar... learn from my mistake.. MEDIUM! When the oil starts to sizzle and the kernels look ready to POP... I am posting this recipe because we have eaten it for dinner the past three nights at my husband's request. He LOVES Caesar Salad! This dressing recipe is AWESOME! Caesar Salad Dressing 1/3 cup mayonnaise 1 tea. minced garlic 1 tea. Worcestershire sauce 1 anchovie packed in oil in a can olive oil 'til smooth Salad Romaine lettuce Freshly grated parmesan cheese Croutons (I'll show you how to make your own.) Add grilled chicken to make a meal. In a food processor...I use my mini, add the anchovie to the mayonnaise. I know what you're thinking... Anchovies????  Ick!! PLEASE use the anchovie even if you hate fishy fish. It doesn't taste like fish in this recipe... it adds an amazing bite to the dressing and it's just not a real Caesar without it. You can find cans of anchovies in the aisle with canned fish by the tuna. add the minced garlic... Add the Worcestershire sauce. Vanilla Cream Cheese Frosting

I just made a batch of this frosting for a pan of pumpkin chocolate chip bars. It is SO delicious! I had to fight the urge to consume most of it before I even put it on the cake. 1 (8 ounce) package cream cheese, softened 1/4 cup butter, softened 2 1/2 cups confectioners' sugar 1 1/2 teaspoons vanilla extract Milk, as needed, to achieve proper frosting consistency In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Add milk, as needed, until frosting is of a suitable consistency for spreading. Store in the refrigerator after use. Makes enough to frost an 11 x 13-inch cake.

Breakfast Ideas!

There is no picture for this but this is my favorite low carb breakfast! Ham and Cheese Omelet with sour cream and Salsa! Other ideas are: Watermelon Strawberries and cream Scrambled eggs Omelets with mushrooms Omelets with Veggies Fat Free Cocoa ( FYI if you look at the carb count on sugar free cocoa and fat free cocoa, surprisingly the fat free kind has about half the carbs, make sure you watch your labels)  I add some table cream to the cocoa and that makes it delicious, but no longer fat free ;) Sugar free breakfast drink. My favorite is Walmart brand grapefruit. Perfect to wake you up in the morning. Bacon Sausage Breakfast is my favorite meal of the day because I can get away with absolutely no carbs and be full and satisfied. There are a few types of  cereal that work.  If you can find a bran cereal that is not sweetened the carb count is not terrible.  Then add cream instead of milk and splenda or stevia.

If you love to bake, you know how expensive it is to buy pure vanilla extract. Vanilla is the second most expensive spice because the beans are difficult to cultivate from orchids. You can make your own vanilla extract right now, in time for Christmas baking... and it's FUN! You can find many websites that sell quality vanilla beans.  They can be quite expensive. I bought my beans at my local health food store for $6 apiece. You will need three beans about six or seven inches long. Using a sharp knive, slice each bean lengthwise... Leaving about one inch uncut like this: You will see the fragrant vanilla seeds inside and that's what will leach into the alcohol. You need a fifth of high proof alcohol...at least 80 proof, like vodka, bourbon or rum. I bought this mid-priced vodka for $13 mostly because it was in a plastic bottle. Stick the cut vanilla beans into the vodka right in the bottle. Now just let them sit in the alcohol for at least two months. The vanilla will leach fr...
