Zebra Cake

The first time I saw this cake being made was in a Loraine Pascale's cooking show. I  never realized it was such an easy recipe. The boys love to make this with me although the finished result isn't as neat but still has the wow effect. I love slicing into the cake and taking the first slice and still get excited when I see the dark brown and white lines. The recipe is taken from Lorraine Pascal's website here . I have searched all over youtube for the video but couldn't find one. Spiced Plum Pavlova

I love making pavlovas and  I love the reaction I get every time  I make one especially to someone who has never eaten one. Last Ramadhan I started taking orders for pavlovas because  I felt not everyone likes cake and its the kind of dessert that really puts a smile on your face. This particular recipe was inspired by a recipe by Lorraine Pascal. She used pears and other stone fruit in her recipe.  I changed it to just plums because I love plums and I love the ruby red color of the poaching liquid. plums, cinnamon, star anise and strip of orange rind  I reduced the liquid so it was quite thick and syrupy and divine. I swirled some of the syrup into the cream and drizzled some on top as well. yumm, I don't mind eating this straight from the bowl. Plum And Pear Crumble

I love crumbles. They are easy to make and you can make it healthier by adding oats and nuts to the topping. Then there is the fruit stewing in the bottom and served warm with custard its absolute yumm. On my last visit to the market, I bought these beautiful plums. Plums are quite expensive here in the Maldives, so to make the most of it I used it along with a pear to make this delicious crumble. You can make this ahead and set it aside and bake an hour before serving. Its perfect weather for crumbles. No, we don't get Autumn, but it is gloomy and rainy so a warm dessert is great to serve. I even ate the leftovers for breakfast, guilt free too. Tres Leches Cake

During the Ramadhan month, I had a few readers asking me for various recipes. Just recently I had a request for the recipe of this cake.  I have heard of this particular cake but never tried to make it. Tres Leches cake is a  cake soaked in three kinds of milk product. Hence the name Tres Leches cake, meaning three milk cake. I was not sure how the cake was going to taste, but it was surprisingly delicious. The cake soaks up the sweet milk mixture and you get a sweet pudding-like cake. For me, it was a bit sweet so I served it with strawberries or passionfruit. Tuna and Tomato Galette

I love make galettes , its a free form tart.  No blind baking required. I saw a few tomato galettes on Pinterest and wondered if I can use some tuna along with it and extra cheese. It turned out quiet delicious and I think any Maldivian will like it as its got that chili kick ( although I dont go mad with the chilli like some people), the tuna flavor and the cheese and  sweet tomatoes. So give it a go and serve it along with a nice green salad. If you are making this on a hot day, chill the dough after rolling it  before you put the filling. This way it makes it easier to fold the edges. Victorian Sponge Cake

Who is planning to watch the Royal wedding tomorrow? I know I am looking forward to it.  I remember as a  kid I had this Ladybird book  about Prince Andrew and Sara Fergurson Wedding. As any little girl , princes and princesses was pretty fascinating and a real one was like WOW!!.  So  to enjoy watching the big wedding, how about making a delicious Victorian Sponge cake. Of course I will be having mine after the Magrib prayers????. I have tried a few Victorian Sponge Cakes,  but the one I did by following Mary Berry's recipe was the best one.I didn't have self raising flour so I used regular flour and used 2 teaspoons of baking powder. Instead of caster sugar I used regular sugar. Passionfruit Meringue Roulade

I love meringue, whether its in plain mini ones , pavlovas  etc.  After making pavlovas I wanted to do something abit more challenging. Having seen this recipe on one of my magazine cut outs, I wanted to give it a try. It was a lemon curd meringue roulade. The first time I tried it was for a dinner with  friends and  after rolling out the meringue I wondered how I was going to transfer it to a serving plate, so hubby offered to help. He took the two ends why I slid a spatulla underneath  the middle half and  plop!, the whole thing just fell apart! on to the middle of the table! I almost threw the whole thing but hubby suggested I can still come up with something  to fix it ,so  mixed it up with some extra whipped cream added some fruit and a tropical Eton mess saved the day. I try and participate when ever I can with the ladies in IHCC , I heart cooking clubs group. They always have some chef,  whose recipes we will try for a certain period of time.  Now they are doing Ina Garten. I was not familiar with her shows,  so I checked out. Her recipes are pretty simple and straight forward. This week's theme was French Bistro Recipes, now I have never been to a french bistro but I  think they will probably have something simple and delicious like this french apple tart. I found this recipe on food net work channel. I used half of the recipe, because its usually me and my hubby who eats these kind of deserts, while the boys would just take a small bite, say its nice and when I ask them if would like  a slice they would go no. Lentil Tart

Now this is something all three boys in the house ( third one being my hubby)  love!. And its an almost vegetarian dish! I say almost vegetarian as I added just  a little bit of dried tuna because it goes very nicely with this meaty flavoured brown lentils.   I found this recipe in and old Margret Fultan' s book of Vegetarian Cooking . In the book its called a quiche but for me its more like a tart  so I renamed it tart LOL.  I adapted the filling to suite our taste but  and I love the cheesy pastry,. Pumpkin and Spinach Calzone

 Calzones are just folded up pizzas , or portable pizzas. The topping goes on one side and then its folded in half and sealed , ufresh from the oven the cheese just oozes out , that is if you have used mozzarella. I made this one while trying out a recipe for pumpkin. As a child I used to hate pumpkin  but now adays I like it better than I did when growing up. Cassava Cake ( Dhandi Aluvi boakibaa)

Cassava is grown around Maldives, and one of the most well known recipes using cassava is this cassava cake. Locally known as dhandi aluvi, maybe because it resembles a stick (dhandi) and is a root vegetable like potato (aluvi).  My husband once brought some very fresh Dhandi aluvi or cassava for me to cook and I have to say its probably the most freshest ones I have ever  handled. No blue veins or  stringy bits , very nice and  white flesh.  In this recipe I took a short cut when it came to ground rice as I was running out of time and needed to get it done before I headed to fetch little one from school. So I used store bought ground rice. Peach And Almond Galette

I love making Galettes , they are so easy to make , no blind baking , just chuck everything in and bake.  I came up with this peach galette using canned peaches. Fresh peaches are very expensives here in Male' and not so easily available at times so I used canned peaches. The almonds I added  for texture and also into the pastry.  I spiced up the peaches with cloves and cinnamon. NOTE:  sometimes when the weather gets too hot its best to make sure you chill the dough well. Manu Fidel's Tart Tatin

When the ladies at the Muslimah Bloggers group , on Facebook ,announced that this month's challenge for us was to cook something which we had kept scrapbooked  , the first recipe that came into  my mind was this tart tatin recipe by Chef Manu fidel which I had kept filed to try someday. I started scrap booking recipes when I was studying in Karachi, Pakistan. When I moved to Malaysia  where hubby went for his studies,  I always bought  food magazines and after sometime I had a pile of magazines and my little guy was busy ripping through them.
