SANDRA'S NO-BAKE CHOCOLATE PEANUT BUTTER MARSHMALLOW OAT COOKIES

These a incredibly tasty cookies that are a cross between candy, cookies, and brownies! Plus, they're fantastically easy to make, no baking required! Yields: Appx. 4 dozen Prep: 10 Mins. Cool at room temp: 30 Mins. INGREDIENTS 1-2/3 cups granulated sugar 1/2 cup unsweetened cocoa powder 1/2 cup condensed unsweetened milk 1/2 teaspoon ground cinnamon 1/8 teaspoon kosher salt 1/2 cup creamy peanut butter 5 tablespoons unsalted cold butter, cut into 1/2" cubes 1 teaspoon vanilla extract 3 cups quick-cooking rolled oats 1/2 cup miniature marshmallows METHOD Whisk sugar, cocoa, milk, cinnamon and kosher salt in cold medium-size heavy-bottom saucepan. Place over medium heat and cook, while whisking constantly, for 5 minutes, just until sugar has dissolved. (Do not boil.) Remove saucepan from heat. Double Chocolate Oatmeal Chocolate Chip Cookies

If you like chocolate cookies, you'll like these. Another great recipe from Mel's Kitchen Cafe . 1 cup (2 sticks, 8 ounces) butter, softened to room temperature 1 cup (7 ounces) packed light brown sugar 1/2 cup (3.5 ounces) granulated sugar 1 teaspoon vanilla extract 2 large eggs 1 1/4 cups (6.25 ounces) all-�purpose flour 1/2 cup (2 ounces) natural unsweetened cocoa powder 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup (3.5 ounces) old� fashioned oats 1 cup (3.5 ounces) quick oats 2 cups (12 ounces) semisweet chocolate chips Preheat oven to 350 degrees F. Line two large, rimmed baking sheets (11 x 17 �inches or so) with parchment paper. Peanut Butter Granola

I tried this recipe for peanut butter granola quite awhile ago but never got around to posting it. While I didn't love it as a cereal, I have found that I enjoy this granola very much as a snack. I've been munching on it at work. So here it is, peanut butter granola, courtesy of Mel's Kitchen Cafe . 1/3 cup creamy peanut butter 1/3 cup honey or pure maple syrup 1 teaspoon vanilla 2 tablespoons coconut oil Pinch of salt 1 cup chopped, toasted nuts (almonds, peanuts, etc) 3 cups old-fashioned rolled oats 1/2 cup mini chocolate chips (also optional) Preheat the oven to 325 degrees F. Line a large, rimmed baking sheet with parchment paper and lightly grease the parchment with nonstick cooking spray. In a bowl (for the microwave) or in a saucepan (for the stove), combine the peanut butter, honey, vanilla, coconut oil and salt. Melt over low heat until the ingredients are smooth and well-combined. An amazing combination of ingredients all rolled into once terrific cookie recipe,  you're going to love, love these yummy morsels! Yields: (Appx 5 doz) Prep: 15 Mins. Bake: 10 to 12 Mins. INGREDIENTS Wet 1 cup unsalted butter, room temperature 1 cup granulated sugar 3/4 cup light brown sugar, packed 2 large eggs 1 cup pumpkin puree (not pumpkin pie filling) 1 teaspoon vanilla extract Dry 1-3/4 cups all-purpose flour 1-1/2 teaspoons ground cinnamon 1/4 teaspoon freshly grated nutmeg 1/4 teaspoon ground ginger 1 teaspoon baking soda 1/2 teaspoon double-acting baking powder Pinch of salt Additions 3 cups quick-cooking oats 1/4 cup toffee bits METHOD Preheat the oven to 350 degrees. This cookie recipe creation yesterday turned out phenomenal! Back in the kitchen today, upon request, to bake an additional double batch ~ Gotta keep my guys happy... Yields: 30 (Appx.) Prep Time: 15 Mins. Bake: 8 to 10 Mins. INGREDIENTS � cup (1 stick) unsalted butter, at room temperature � cup + 2 tablespoons packed brown sugar 2 tablespoons granulated sugar 2 tablespoons molasses (spray spoon first) 1 large egg 2 teaspoons vanilla extract 1/2 teaspoon double-acting baking powder (or regular) 1/4 teaspoon baking soda � teaspoon ground cinnamon 1/4 teaspoon ground ginger Pinch of salt � cup + 2 tablespoons all purpose flour 1-1/2 old-fashioned oats (not quick cooking) � cup raisins METHOD Preheat oven to 350 degrees. Baked Oatmeal

A lot of people don't like oatmeal because of the texture. It looks like something disgusting that is plopped on metal trays and given to people in prison. I don't necessarily feel that way but some people do. ;-) For those of you who may have unresolved issues with oatmeal, I encourage you to try baked oatmeal. The texture is slightly crunchy/chewy on the top and soft in the middle. Today was my first time making baked oatmeal, so I have much more to learn, I'm sure. I'm going to play with the recipe some more--maybe try adding nuts or fruit, try steel-cut oats, experiment with a few different sweeteners, etc. But I liked the initial result. 1/2 cup (1 stick) butter 3 cups old fashioned rolled oats 1 cup brown sugar 2 teaspoons baking powder 1 teaspoon salt 1 cup whole milk 2 eggs, slightly beaten 2 teaspoons vanilla extract Preheat oven to 350 degrees. Cowboy Cookies

Another recipe from my cousin Katy, who is also the organizer of the dinner group I belong to. Katy's cooking never fails to please. Anyway, Katy made a batch of these cowboy cookies the other night, and I had to have the recipe! Who doesn't love a good oatmeal chocolate chip cookie? Cream together: 1 cup butter 1 cup brown sugar 1 cup white sugar 2 eggs Add dry ingredients: 2 1/4 cups flour 1 teaspoon salt 1 teaspoon soda 1/2 teaspoon baking powder Add other ingredients: 1 teaspoon vanilla 1 1/2 - 2 cups chocolate chips 2 cups rolled oats Heat oven to 350 degrees. Drop onto greased baking sheet and bake for 8 minutes. Makes about 5 dozen cookies. You can also roll the dough in plastic wrap and store in the fridge. When you want to bake them, cut off slices and bake them.

Granola

I tried my hand at making granola yesterday. I've always liked granola, but it tends to be pretty expensive. Also, I'm not a big fan of raisins, which seem to be a part of most granolas. So I set out to make my own version of homemade granola. I started with a very positively-reviewed recipe (called Megan's Granola) from allrecipes.com and then made some minor alterations based on my personal preferences. For example, the original recipe calls for 1 cup sunflower seeds. I don't dislike sunflower seeds, but they seemed like an odd ingredient for granola. Plus, I didn't want the additional expense. I also didn't add the two cups raisins or craisins (No offense, but yick to craisins!) for the reason mentioned above. But you are welcome to add raisins or craisins (yick) if you so desire, after the granola has cooled. I also adjusted a few of the ingredient amounts, though nothing major. Oatmeal Pancakes

I tried this recipe for the first time this morning, and I'm hooked! The oatmeal mixture is incredibly easy to make, and you can store it in the fridge or freezer to use whenever the mood strikes you. Once you have the mix, all you need to do is just add an egg and a cup of buttermilk, and you're ready to go! Also, a friend recommended a delicious variation on this recipe. Try adding a mashed ripened banana along with the buttermilk and egg, before you cook the pancakes. That's the variation I'm most fond of currently. Or I've also made blueberry pancakes by tossing in fresh blueberries, when I've had some on hand. One other note. Since a single batch of this pancake batter makes more pancakes than I can eat at one sitting, I usually cook all the pancakes up and then freeze the extras. That way, when I want a quick breakfast, I just pull a few pancakes out of the freezer, microwave them till they are warm, and add the butter and syrup. Very yummy and so easy. Th...
