Chicken Noodle Casserole

This is one of those recipes that every member of our family actually will eat without complaint. I started with a pretty basic Tuna Noodle Casserole recipe, but we don't eat any kind of fish at our house, so I substituted canned chicken (it would also be fabulous using one of those rotisserie chickens, or just chicken breasts or tenders) from Costco. There are many other things that I tweaked from there to get it just right, including halving the noodles while leaving the sauce the same, it just gives it a better casserole texture. I love how easy it is to substitute ingredients that you have on hand or that your family likes to this recipe. It's January now, so the focus of the recipes on our blog is going to be simple, easy, healthy dinners. This is a recipe that I got from Cook's Country, I've changed it a bit to meet our family's needs and likes. I like to make it because it's fast and easy. Another of my favorite things about it is that you only need to dirty (and clean up) one pot. That makes it even faster and easier! I always half this recipe, and it feeds our family of four, we usually have leftovers for about 1 person as well. When my husband brought me this recipe to try, just based on the title, I thought it was kind of strange. But then I looked at the ingredients and I knew that I could do something with it, even if I had to adapt just a few of them. After making these the other day, I have to say they were a hit, even with our pickiest eater. It was kind of funny, because neither of us thought she would like it, so we gave her half of an enchilada, she was the first one done (very rare) and asked for more (even more rare!). This was a fun recipe that I will be making again! Pineapple Chicken

For this recipe I took a basic recipe for Sweet and Sour and instead of leaving some of it sour, I figured out a way for it to be all sweet. Our family really enjoys this pineapple chicken. I really love the breading with the Panko crumbs, because you get a really crisp piece of chicken with really no extra work. I usually cut this recipe in half for our family of four and usually still have enough for leftovers for a couple of us. I also make the full amount of sauce and use half on the chicken, and half in a pot to warm up and put over the top, you can even thicken it a bit if you want to using a cornstarch/water mixture. Pineapple Chicken 2 pounds chicken, cut into bite-size pieces 3 cups Panko crumbs  3 eggs, beaten 2-3 tablespoons vegetable oil 1 (20 ounce) can pineapple (either tidbits or chunks), drained, but reserve juice 3/4 cup sugar 4 tablespoons ketchup 1/2 teaspoon salt 1/2 cup pineapple juice (use reserved juice and add extra if needed) 2 tablespoons soy sauce Preheat...

Sloppy Joes

This is a recipe I've been making for a really long time. I found it in a Taste of Home magazine years ago. I really enjoy these Sloppy Joes. They are simple to make and I always have all of the ingredients on hand to make them. I always half the recipe and it's the perfect amount for our family to have these and have left-overs one time.  Sloppy Joes 2 pounds ground beef 1 large onion, chopped 1 1/4 cups ketchup 1/2 cup water 1 tablespoon brown sugar 1 tablespoon white vinegar 1/2 teaspoon salt 1/2 teaspoon ground mustard 1/2 teaspoon chili powder 1/4 teaspoon ground allspice hamburger buns (10-12) In a Dutch oven (I don't have one, I use a slow cooker like this one ), brown ground beef with the onion over medium heat, just until meat is no longer pink. Drain, I usually use 93% lean ground beef, so I never need to drain it. Add the rest of the ingredients, except the hamburger buns. Bring mixture to a boil. Skillet Lasagne

I've posted so many dessert recipes lately that I decided it was time for something different. This was dinner last night, it came together quickly, it was awesome, my family really enjoyed it! This is an awesome recipe to add to your dinner rotation, I halved the recipe for our family and served it with garlic bread sticks. Skillet Lasagne adapted from Six Sisters Stuff pg 11 1 pound lean ground beef 1 (12 ounce) package bow tie noodles 1 (26 ounce) jar marinara sauce 1 tablespoon olive oil 1 1/2 teaspoon garlic salt 1 teaspoon Italian seasoning (or to taste) 1/2 cup shredded mozzarella cheese 1/4 cup Parmesan cheese (get the grated kind)  1/2 cup sour cream Start water boiling for the pasta, cook according to the directions on the package. Stuffed Pizza Rolls

This was a really fun change from the regular pizza that our family eats. Our family really enjoyed being able to dip these in whatever sauce they liked. I liked the easyness of preparing the meal and the ease of cleanup. I also really liked that I can use the bread stick dough and Alfredo sauce that I usually make. Panera Summer Berry Poppy Seed Salad

Last summer when we were in St. Louis on our family vacation we ate the most amazing salad at a place called Panera (they don't have locations in Utah). This is a recreation of that salad using the Panera Poppy Seed dressing that you can buy at Target. I know this is a really summery salad, but it's also perfect for anytime that you want to eat something really healthy, tasty and the best part - low fat! I also like how versatile it is, you can serve it with chicken, or just the berries. Add a chunk of French Baguette or Peasant Bread  and you have a meal just like they serve at Panera. Tomato Basil Parmesan Soup

This is one of my family's very favorite soups to have. It's been so cold here (single digits at night) that I've wanted warm food for nearly every meal! I love the combination of flavors in this soup, the basil makes the soup super yummy and I love the Parmesan cheese in her too! I also really like how fast and easy this soup is to put together. You just throw together the tomatoes, carrots, onions, celery and broth in your slow-cooker in the morning and allow to cook most of the day. Then the roux goes together pretty quickly and heat the milk at the same time. This time I tried something new with my soup, running it through the blender to get rid of the big chunks, I'm really glad I did! The soup was so creamy and it really brought out the flavor of the basil. One of our favorite shows to watch is The Food Nanny. It's on BYU TV, and the whole point of the show is that Liz Edmunds, The Food Nanny, goes to people's homes to help them learn how to have dinner as a family. I knew I had to have her cookbook, which is super amazing. This is a recipe that I found in her cookbook, and it's our family's favorite way to make chicken. We have a daughter that will not touch breaded chicken of any kind, except for this recipe. You should make it, you won't regret it! I like to use recipes that use other ingredients that I already have on-hand or know how to make really quickly. This is one of those recipes for me. It starts with a basic bread stick dough and then you add chicken, left-over would work great and a few other things. It comes together really quickly and it tastes amazing! It's kind of like an inside-out pizza. Salsa Chicken

I've seen lots of recipes similar to this one. The first place I saw it was on my friend's blog 365daysofcrockpot.com , but I couldn't just make it how it was, I had to do my own thing with it. The first thing that I do different is leave my chicken frozen. I rarely remember to thaw my chicken ahead of time for anything, and it has seemed to work just fine for this recipe to not thaw it. I also add a can of refried beans to it. Leaving the chicken frozen adds a bit of extra water to the mixture at the end and the beans do two things for me, they get rid of the extra moisture and they add a little extra vegetables and fiber to the dinner (shhhh....don't tell our kids!). This recipe is really fast and easy, it's a go to recipe for Mexican night at our house. I love to find quick and easy dinner ideas and this is one of my very favorites! I love that it's super fast and simple. I love that I can change up the way it tastes by varying a couple of the ingredients. I love that it's cheesy (who doesn't love that!). I also love that you can make it smaller, I always half this recipe and it turns out great! Most of all, I love that everyone in our family will eat this with no complaints. One of my very favorite shows to watch on TV is the Food Nanny. Liz Edmunds is the Food Nanny and she travels around to families and helps them to make having dinner as a family work for them. She's got a meal planning system, a cookbook and a TV show. I was able to meet her last weekend and she was so sweet and energetic! Today's easy dinner recipe comes from her cookbook. For the month of November, I'm going to focus on some fairly simple dinner ideas that our family has enjoyed. I'm starting with Pepperoncini Beef Sandwiches.
