The BEST Breakfast Casserole

When I tell you that this is the BEST breakfast casserole it is no joke. I have made a few breakfast casseroles in my day and this one became an instant favorite! I especially loved this casserole because it was so hearty and full of wonderful breakfast goodness. It is a classic breakfast casserole with amazing flavor. It has hash browns packed right inside which was my favorite part. This breakfast is perfect any time of the year but great for Christmas! You take everything out the night before and throw it in the oven in the morning. It can feed a lot of people which is awesome. Hamburger and Potato Casserole with a Bechamel Twist

I was trying to figure out what to cook for supper with the things I had on hand. The cabinets are getting pretty bare, and those that know me, know that "running to the store" is not an option out here. I need a couple of hours to be able to do the shopping. Well, I had ground beef in the freezer and thawed it out. I had a few potatoes, a couple of onions and some cheese. Most recipes would call for some cream of mushroom or broth next, but I didn't have any on hand. I decided to go with a bechamel with a garlic kick. Here's a step by step, and the recipe is at the end. Layer potatoes and onions. Next combine hamburger, spices and bechamel, then top the potatoes and onions. Next Cheese! Another layer of potatoes and onions. More meat mixture. Continue layering. After 4 hours cooking on high. All plated and ready to gobble up! SANDRA'S CHEESY HASH BROWN CASSEROLE

Delicious sides dish that's a 'crowd pleaser'  when the recipe is doubled, or for a smaller family (as in recipe shown below) it's just as great too! After all, you can't go wrong with potatoes and cheese... (Serves 2 to 4) Prep: 10 Mins. Bake: 30 Mins. INGREDIENTS 1-1/4 cups shredded medium cheddar cheese, divided 1-1/4 cup shredded mozzarella, divided 1 tablespoon unsalted cold butter, divided 1/4 cup low sodium beef broth 2 tablespoons dried minced onion 1 teaspoon granulated garlic 1/2 teaspoon freshly ground black pepper 10 ozs. (about 2 cups) frozen hash browns (do not thaw)  ~ I make my own freezer hash browns using russet potatoes METHOD Preheat oven to 425 degrees. Spray, with butter spray, a 6x6" casserole dish and set aside. Sausage and Spinach Pasta Bake

Pasta, Green Beans, BLT salad and Garlic bread! 1 (12 ounce) package pasta* 1 pound ground sausage, cooked and drained 1 (10 ounce) package frozen chopped spinach, thawed 2 eggs 1/4 cup olive oil 5 cups tomato and roasted garlic pasta sauce 2 cups shredded Cheddar cheese 2 cups shredded Mozzarella cheese Preheat oven to 350 degrees F. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and sausage. Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. We have been having a rough time in the South/Southeast after Hurricane Matthew. North Carolina is continuing to have flooding issues. Here in South Carolina, many people remain in the dark with no power. I am lucky. I have my power back on, but just 2 miles down the road they are still without power. It is possible that they will be without power for a few more days! With that being said, we got a little tired of the grill. I have never missed my stove more! I microwave the sweet potatoes with 1 TB of water so as to retain their utmost flavor versus boiling them in the traditional fashion. This makes for a phenomenal sweet potato casserole... Servings: (6) Par-Cook: 7-10 Mins. Bake: 30 to 35 Mins. INGREDIENTS 4 (about 1 lb.) of regular-size sweet potatoes, peeled and cut into 1/2" cubes 2 tablespoons cold, unsalted butter, diced 2 tablespoons real maple syrup (more or less, to your desired sweetness) 1 tablespoon orange juice 1/4 teaspoon ground cinnamon Pinch of freshly ground nutmeg --2 cups miniature marshmallows DIRECTIONS Preheat oven to 350 degrees. Set aside an 8x8" casserole dish. Place sweet potatoes in a medium glass bowl with 1 tablespoon water, cover with a large microwaveable plate, and cook in microwave on high for 7 minutes. Chicken Alfredo Casserole

2 Chicken Breasts, browned and chopped 2 cups chicken broth 2 garlic cloves, minced 1 cup heavy cream � teaspoon white pepper � teaspoon salt 1� cups grated Parmesan cheese 1 lb Penne Pasta, cooked In a medium sauce pan over medium heat add broth, garlic, cream, pepper, and salt. Bring to a low boil and reduce heat to medium low and simmer for 8 minutes.* Remove from heat and slowly add cheese. Return to stove on low and cook for 2 to 3 minutes, stirring constantly. Serve hot. *If you want a thicker Alfredo, or it doesn�t reduce to the correct thickness, make a slurry of 3 tsp corn starch and 2 tsp water. Add to boiling sauce and stir or whisk constantly until desired thickness.

Mexican Pizza Casserole

1 pound Ground Beef 1 package Taco Seasoning, or use your own blend 4-8 lrg Flour Tortillas, torn into four pieces 1 can Black Beans 1 can Pinto Beans 1 can Diced Tomatoes 1 can Corn 1 can Green Chiles Salsa (about a cup)* 2 cups Shredded Colby~Jack Cheese ** Possible Toppings... Lettuce, tomatoes, sour cream, guacamole and/or scallions Brown hamburger, drain and season with a couple of teaspoons your favorite taco seasoning. Drain all the cans corn, tomato, chiles and beans. Combine with meat mixture, and add salsa. Season with more taco seasoning if needed. Add salt, pepper and garlic powder to taste. In a 13X9 Casserole dish, layer meat mixture, cheese, tortillas and repeat ending with cheese.  Bake for 20-30 minutes at 350 degrees or until cheese is melted and starting to get golden brown. Chicken Asparagus Casserole

I know that casseroles like this are old fashioned and not particularly healthy because of the canned soups and the mayonnaise, but I made this on a nostalgic whim this past week, and I have to admit that I quite liked it. The asparagus, mushrooms, chicken and pasta worked well together. Very much comfort food. Also, I substituted fresh asparagus and fresh mushrooms for the canned versions, and that was a big plus. One of my favorite and most prepared recipes I created when I was craving scalloped potatoes au gratin and loaded baked potatoes at the same time... Serves: (10 to 12) Prep: 25 Mins. Bake: 1 Hr. Stand: 15 Mins. INGREDIENTS 4 slices of bacon, cut into strips and browned 8 cups yellow potatoes, peeled and thinly sliced to 1/8� --(I used 6 medium-large potatoes, and sliced them using a mandoline) 1 green onion, sliced (both white and green parts) 6 tablespoons unsalted butter 6 tablespoons all-purpose flour 3 cups milk � teaspoon granulated garlic � teaspoon kosher salt � teaspoon freshly ground pepper 1/8 teaspoon cayenne pepper 2 cups grated medium cheddar cheese � cup sour cream 1 cup additional grated medium cheese, to sprinkle on top Paprika METHOD Preheat oven to 350 degrees.  Spray a 9�x13� casserole dish, and set aside. Melody's Mock Lasagna Casserole

Here is a main dish that both adults and kids will like. It is easy to prepare and uses ingredients that many people have on hand already. Thanks to my friend Melody for this. 1 16-oz. package twisty noodles, cooked and drained 1 cup cottage cheese 2 cups sour cream 2 pounds hamburger, browned 1 30-oz. jar spaghetti sauce 2 oz. cans tomato sauce 2 tablespoons sugar 1 teaspoon garlic salt (Mozzarella cheese to sprinkle on top) Stir together first three ingredients and spread in 9 x 13" pan. Combine remaining ingredients and spread on top of the noodle mixture. Sprinkle grated cheese on top. Bake 25 to 30 minutes at 350 degrees.

Sweet Potato Casserole

This sweet potato side dish is the kind of thing you could serve at Thanksgiving or Christmas, among other times, but instead of toasted miniature marshmallows on top, this has a brown sugar pecan topping. It is rich and yummy! Sweet Potato Layer 8 cups sweet potato, cubed (3 or 4 sweet potatoes) 1/3 cup white sugar 2 eggs, beaten 1/2 teaspoon salt 4 tablespoons butter, softened 1/2 cup evaporated milk 1 teaspoon vanilla extract 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg Topping 1 cup packed brown sugar 2/3 cup all-purpose flour 6 tablespoons butter, softened 1 cup chopped pecans Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash. In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, evaporated milk, and vanilla extract. JUST LIKE STUFFED BAKED POTATOES

16 ounce package frozen cauliflower * 8 ounce cream cheese, softened 8 ounce cheddar cheese, shredded 4 green onions, chopped 1/4 teaspoon salt or to taste 1/4 teaspoon pepper 3 pieces bacon, chopped and fried until crisp Paprika, optional Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up florets a bit with a spoon (it's also very good if the cauliflower is still a little chunky). Put in a greased 8 x 8" baking pan or 2-quart casserole. Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Dust top with paprika, if desired. Bake at 350� for 20-40 minutes, until browned and bubbly. Or, microwave, loosely covered, for about 40 minutes on 50% power, turning dish after 20 minutes.

PINEAPPLE CASSEROLE

This is for all the mothers out there....Happy Mother's Day! 1 (20oz.) can crushed pineapple, drained, reserve juice 1/4 cup sugar 3 tablespoons flour 1 cup sharp cheddar cheese, grated 1/2 cup Ritz cracker crumbs 1 stick butter, melted Preheat oven to 350 degrees. With a wire whisk, combine pineapple juice, sugar and flour. Add pineapple and cheese, pour into a buttered 9-inch pie plate. Top with cracker crumbs and pour melted butter over the top.
