SANDRA'S INDIVIDUAL HASH BROWN BREAKFAST CASSEROLES

The ideal romantically intimate breakfast for two (utilizing a 'real' potato)... Servings: 2 Prep: 10 Mins. Bake 30 Minutes Stand: 5 Minutes Special Equipment: --2 Individual Ceramic Dishes INGREDIENTS Base: 1 large russet potato, peeled, grated and par-baked Vegetables and seasoning: 1 teaspoon Mazola oil 1/4 cup diced yellow onion 2 tablespoons diced orange bell pepper Pinch of kosher salt Pinch of pepper 1/4 teaspoon garlic powder Filling: 4 large eggs, beaten 2 tablespoons 2% milk 1/4 cup Mexican blend shredded cheese Topping: 1/4 cup Mexican blend shredded cheese 6 sliced grape tomatoes Garnish: 2 basil leaves, julienned METHOD Preheat oven to 350F. Rub the inside of 2 individual ceramic dishes with Mazola oil; set aside. Shred potato on the largest holes of a box grater; squeeze dry. Pizza Toast

Mama called it Cheese Toast, but my son calls it Pizza Toast. It is such a simple, easy and tasty treat. Whether it'd for an after school snack or add meat for a meal, it's sure to please kids of any age! I used my own homemade Pizza Sauce, but you can use your favorite brand. I also used a Colby Jack Cheese blend, but again use your favorite. The possibilities are endless! 1 French Bread Loaf, cut in thick slices Pizza Sauce  (or spaghetti sauce) 2 cups Colby Jack Cheese blend (optional) pepperoni, onion, peppers, olives Preheat oven to 400 degrees. Spread slices of bread with a tablespoon or so of sauce. Top with the toppings of your choice, or simply top with cheese. Place them on a cookie sheet and bake for about 10 minutes or until golden brown. If serving to children, be sure to let them sit until the cheese has cooled enough to be safe. 

Hamburger and Potato Casserole with a Bechamel Twist

I was trying to figure out what to cook for supper with the things I had on hand. The cabinets are getting pretty bare, and those that know me, know that "running to the store" is not an option out here. I need a couple of hours to be able to do the shopping. Well, I had ground beef in the freezer and thawed it out. I had a few potatoes, a couple of onions and some cheese. Most recipes would call for some cream of mushroom or broth next, but I didn't have any on hand. I decided to go with a bechamel with a garlic kick. Here's a step by step, and the recipe is at the end. Layer potatoes and onions. Next combine hamburger, spices and bechamel, then top the potatoes and onions. Next Cheese! Another layer of potatoes and onions. More meat mixture. Continue layering. After 4 hours cooking on high. All plated and ready to gobble up! Southern Style Tomato Pie

I asked the Hubby to go pick the ripest, prettiest tomatoes he could find from the garden. I told him that I wanted to cook a tomato pie. He said, "A what?" I laughed and told him he'd like it! Most people don't know much about tomato pie unless their Grandmama made it. Quite frankly, I don't remember Mama or my Grandmama making a tomato pie. The first time I tried it was in Santee, SC at  Lone Star Barbecue & Mercantile . That first taste was enough to inspire me to make them from then on! I finished the pie and offered a slice to him. He is now hooked!  I was short on tomatoes because I had already processed a lot for sauce the day before, so this pie is a little pitiful. The next one will be more substantial! I was looking for a picture today and ran across this one. I know what some people will say, but I don't make this one often. My hubby loved it and would love one every week! I dusted off the waffle maker and used tater tots to make a waffle bun**. Thus the Bacon, Egg and Cheeseburger on a Tater Tot Bun was born... at my house at least! Here's a good, but different burger mix to incorporate some sausage into your burger. Beef and Pork Burger Patties 1lb Italian Sausage, de-cased 1lb ground beef Salt, Pepper and Garlic Powder 16 small  slider buns, dinner rolls or Tater Tot Waffle Bun Onion, diced very small 2 cups cheddar cheese, grated In a large bowl, combine sausage and beef. I was thumbing through a few old church cookbooks and an old Hometown Recipes book and came across my Aunt Dot's recipe for "Cheese Pennies". They are much like cheese crackers or cheese straws. I decided to make some and make more of the family recipes in these books! It's fun seeing the names under each recipe and remembering these women and a few men too! 1 lb extra sharp cheddar cheese, grated 1 stick butter 1 1/2 cups all purpose flour 1 tsp salt 2 tsp baking powder 1 cup chopped nuts * 1/4 tsp cayenne pepper Mix grated cheese with room temperature butter. Add the rest of the ingredients, and mix well. Divide dough into 4 balls. Roll each ball into a 6"- 8" log about the diameter of a penny. Wrap in plastic wrap. Refrigerate overnight. Slice into pennies and bake on parchment paper for 15 minutes at 325 degrees. Sausage and Spinach Pasta Bake

Pasta, Green Beans, BLT salad and Garlic bread! 1 (12 ounce) package pasta* 1 pound ground sausage, cooked and drained 1 (10 ounce) package frozen chopped spinach, thawed 2 eggs 1/4 cup olive oil 5 cups tomato and roasted garlic pasta sauce 2 cups shredded Cheddar cheese 2 cups shredded Mozzarella cheese Preheat oven to 350 degrees F. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and sausage. Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. We have been having a rough time in the South/Southeast after Hurricane Matthew. North Carolina is continuing to have flooding issues. Here in South Carolina, many people remain in the dark with no power. I am lucky. I have my power back on, but just 2 miles down the road they are still without power. It is possible that they will be without power for a few more days! With that being said, we got a little tired of the grill. I have never missed my stove more! Ham and Swiss Sliders

These yummy sliders would work well as an appetizer, a snack, or a main dish. Very easy to whip these up for a Super Bowl party or a quick meal. This dish is adapted slightly from a recipe found here . 1/2 cup melted butter (the original recipe called for 3/4 cup) 1 tablespoon Dijon mustard 1 teaspoon Worcestershire sauce 2 teaspoons brown sugar (I used a little more sugar because I wasn't using King's Hawaiian rolls.) 1 tablesppon poppy seeds 2 teaspoon dried minced onion 12 King's Hawaiian dinner rolls (I used regular Parkerhouse rolls from a local bakery.) 9 ounces thin sliced deli ham 8 ounces thin sliced Swiss cheese Preheat oven to 350. Grease a 9 x 13-inch baking dish. Combine butter, mustard, Worcestershire sauce, brown sugar, poppy seeds, and dried onion. Slice the rolls in half to make sandwiches. Remove tops and set aside. Basic Cheese Strata

You put this dish together the night before, so it's a great choice for a leisurely breakfast because all you have to do is bake it. The recipe comes from Becky Ririe, a former neighbor and friend. 6 slices white bread 2-3 cups shredded mild or medium cheddar cheese 3 eggs 2 cups milk 1/4 teaspoon seasoning salt 1 teaspoon dry mustard 1/2 of 4-oz can of diced green chilies Cut bread into small cubes. Layer bread and cheese in a buttered 7 x 10-inch baking dish. Beat together eggs, milk, salt, and mustard; mix in green chilies. Pour over cheese and bread. Cover and refrigerate overnight. Bake uncovered at 350 degrees for 45 minutes or until light and fluffy. Serve immediately. Homemade chili sauce is perfect with this. Serves 6.

A simple but addicting breakfast/brunch casserole with sausage, mild green chilies, cheese and tater tots, oh my! INGREDIENTS: 1 lb. ground country style sausage, browned 1 (4 oz. can) mild diced green chilies, drained (or medium-heat for spicier flavor) 2 cups medium shredded cheddar cheese 2 cups milk 3 large eggs, beaten 1-1/2 lbs. frozen crispy Ore Ida tater tots (='s 3/4's of a 2-lb. bag) METHOD Preheat oven to 350 degrees. Place sausage in a large skillet, and cook over medium-high heat until evenly brown using a spatula to bread into small bits. Drain, and spread evenly in bottom of a glass 9x13" baking dish. No Carb Cheetos!

If you are like me sometimes the low carb lifestyle leaves me longing for crunchy foods! I got this recipe from 'mariamindbodyhealth'. These golden crunchy puffs are delicious and satisfied my craving for Cheetos. I don't know how long it has been since I have had real Cheetos. There are some things that I would change with this recipe. Maybe adding some cheese flavored popcorn salt would do the trick about halfway through the baking process. 3 egg whites beaten until very stiff 1/8 tsp. cream of tarter (add this to the egg whites before beating) 1/2 cup frozen cheddar cheese that has been pulsed in the food processor or blender until it is in tiny bits. Add the cheese bits gently to the egg whites. Be sure you don't let all,the air out of the egg whites.
