SANDRA'S QUICK HOMEMADE SAUERKRAUT with CARROTS

  Absolutely the freshest and best tasting sauerkraut, in my humble opinion, which is great on venison or moose Reuben grilled sandwiches or Smoked Brat hot dogs... Yield: (3 cups) Prep: 5 Mins. (more time if shredding your own veggies) Cook: 45 Mins. Store: Refrigerated up to 2 wks INGREDIENTS 1 (16-oz. pkg) Organic Shredded Cabbage and Carrots --or 1/2 head of medium-size green cabbage thinly sliced into shreds and 1 shredded carrot on large holes of box grater-- 1/4 cup distilled white vinegar 3/4 cup water 2 teaspoons kosher salt 1/4 teaspoon whole caraway seeds METHOD Add all the ingredients to a non-reactive Dutch Oven (or heavy-bottom stainless steel pot).   Stir, and bring to boil over medium-high heat. Reduce heat to low to a gentle simmer, cover, and cook for 45 minutes, while occasionally stirring. Last March, I won a Meyer Lemon Tree in a giveaway sponsored by Simply Citrus Nursery , and it has been an adventure! The lemons are finally ripening, and I am having a blast with all the possibilities! Find the giveaway story in the link above. Beautiful Meyer Lemons, and they taste delicious! I decided to start with what I had on hand. I love roasting and caramelizing vegetables in the oven, especially root vegetables! I had carrots, potatoes and onions on hand so I threw in some lemon juice and lemon slices. OMGoodness!!! We already ate one lemon by itself, but roasting the slices and eating them rind, pith and all was more than delicious! My mouth is watering as I think about it! An incredible and  tasty one-pot-wonder that is quite versatile in that you can change it up by substituting halibut with shrimp, chicken, or pork, and so on.. . Servings: ( 8 to 10) Prep: 15 min Cook: 10 min INGREDIENTS 3 tablespoons canola oil, divided 3 eggs, lightly beaten 8 oz. fillet halibut, cut into 1" cubes 2 cups *pre-steamed carrots and sweet petite peas (See How To TIP below) 1/2 teaspoon ground ginger 1 teaspoon granulated garlic 1 tablespoon dried minced onion Freshly ground pepper, to taste 5 cups cooked white rice 1/4 cup low-sodium soy sauce 1/8 teaspoon sesame oil 1/4 teaspoon rice vinegar METHOD In a Dutch Oven, heat 1 tablespoon of the canola oil over medium-high heat. Beef and Broccoli with Cauliflower Rice

Beef and Broccoli served over rice with a substitution of cauliflower rice for those on the New Year's Resolution diets is the casserole of the week! Comfort food doesn't have to be fattening or loaded with carbs! Cauliflower is a great substitution for carb loaded vegetables and starches. It has a neutral taste that blends well with any flavors it is teamed. Try using it in place of rice or mashed potatoes!  Cut carrots at a diagonal and boil in salt water until tender-crisp. Cut the broccoli into flo rets. I also used some of the stems. I sliced the stems thin and boiled them the same as the carrots. I also sliced onions into large wedges and cooked them in a little butter covered to steam them until tender-crisp also. It is important not to over cook the vegetables. Cooked and cooled vegetables.
