Strawberry Syrup

I had a request for strawberry syrup, so I went to my friend Jay at Willard Farms .  They smelled delicious, and the hubby could not resist eating a few off the top on the ride back home. Once home, the prepping begins. It takes quite a while to clean and chop two gallons of strawberries! The syrup recipe is a simple one and can be used to make any flavor syrup you would like to try. I've made Blueberry and Blackberry already. Now strawberry, and I think I'll make cherry next. They are great to have on hand for pancakes, crepes, ice cream, yogurt and much more! Basic Syrup 1 cup fruit 3/4 cup sugar 1/3 cup water Clean and chop fruit. Combine fruit water and sugar. Bring to a boil, then simmer until thickened.* (about 20-30 minutes) Cool and pour in jars. Store in the refrigerator or process in a water-bath for 10 minutes for pints and 15 minutes for quarts. *The request I had for syrup was to leave the fruit in the syrup, but you can strain it out if you like. Honey Lime Fruit Salad

This fruit salad is colorful, easy, and delicious! What more could one ask for? And you can substitute a variety of fresh fruits, depending on what you prefer and what is in season. The recipe is slightly adapted from Mel's Kitchen Cafe . 1 (20�-ounce) can pineapple chunks, drained well, or about 1 1/2 to 2 cups chopped fresh pineapple 1 (15-�ounce) can mandarin oranges, drained well 1 cup blueberries 1 cup green grapes, halved 1 cup strawberries, quartered Zest from one lime, about 1/2 tablespoon 1 to 2 tablespoons honey 1/2 to 1 teaspoon poppy seeds (optional) Combine the fruit in a serving bowl. Add the lime zest and toss. Strawberry Jam 3 Ways!

My friend Mary at All Things Food~Cooking with Mary and Friends  brought me two gallons of strawberries the other day from Willard Farms . They are beautiful, fragrant and delicious! I decided to make three different types of jam. One regular batch of Strawberry Jam. One batch of Strawberry Jalapeno and one batch of Strawberry Basil Jam. I washed and trimmed the stems of one gallon of strawberries. That yielded about 6 cups of chopped strawberries. It would have been a little more, but my hubby and son kept sneaking strawberries from the bucket! LOL Strawberry Jam Base: 6 cups chopped strawberries 8 cups sugar (more or less depending on the sweetness of the berries) 1 pkg Sure-Jell fruit pectin Add the strawberries to a large pot and mash a little with a large spoon or potato masher. When some juice has been extracted, add the pectin and stir to dissolve. Bring to a boil and add the sugar. Bring back to a rolling boil for at least one minute. I cooked mine a bit longer. SANDRA'S STRAWBERRY-BANANA-ORANGE SMOOTHIE

A perfect, sinfully scrumptious afternoon snack... Serving: (1) Prep: 5 Mins. INGREDIENTS 1 cup Dole Pineapple-Orange-Banana juice 1 ripe banana 1 cup frozen, whole strawberries 1 (5.3 oz container) Chobani Greek Yogurt (I used strawberry) 1/8 teaspoon ground cinnamon 2 teaspoons Organic Light Agave (or honey) METHOD Add all ingredients in order listed to the blender pitcher, cover, and blend until smooth. ~ Enjoy!

Strawberry Freezer Jam

I made strawberry freezer jam for the first time this year, thanks to a recipe from my friend Angie. So easy to make, and it's wonderful on toast, English muffins, etc. Angie says she usually triples the batch, so that's what I did. 1 quart strawberries, washed and hulled 4 cups granulated sugar 1 (1.75 ounce) package dry pectin 3/4 cup water Mash or put 1 quart fruit in a food processor and blend to desired consistency, depending on whether you like your jam smooth or chunky). Pour 2 cups of mashed fruit in a large bowl and mix in 4 cups sugar. Let sit for 10 minutes. While it sits, whisk 1 pkg. fruit pectin into 3/4 cup water in a small pot on the stove. Heat to boiling over high heat, stirring constantly. Remove from heat and stir one minute. Then pour pectin mixture into fruit mixture and stir for 3 minutes until sugar is all but dissolved. Ladle into jars/containers, leaving about a half inch at the top for expansion. Screw on lids and let sit at room temperature for 24 ho...

Strawberry Cake with Powdered Sugar Glaze!

My house smelled totally AWESOME when this cake was baking! It smelled like sweet, hot strawberries!!! 1 package white cake mix 1 small package strawberry gelatin 1 cup water 1/2 cup oil 3 eggs, beaten 1/2 cup mashed strawberries Powdered Sugar Milk or Water Preheat oven to 350�. In a large bowl, combine dry cake mix, gelatin powder, water, oil and eggs. Beat on low speed 1 minute or until moistened; beat on medium until well blended. Don't over mix or the cake will be tough.  Fold mashed strawberries into cake batter.  Pour into greased and floured 9X13 baking pan. Bake 30 minutes or until a toothpick comes out clean. Cool 10 minutes. Slowly poke holes in the cake, as many as you want. Remove from pan and place on serving tray. Mix powdered sugar and water (or milk) to make a glaze. Generously pour over the cake, filling the holes! Cool completely and cut and serve!

Simple Fresh Fruit Salad

Simple Fresh Fruit Salad Cantaloupe Watermelon Honeydew Melon Strawberries Grapes, Red and Green Granny Smith Apples Gala Apples Pineapple (can/cans of  DOLE� chunk) Mint, optional Simply cut the fruit into bites size chunks and toss. I used  DOLE�  canned pineapple and use part of the juice as a sauce for the salad. If you use apple or a fruit that might brown, quickly toss in the pineapple juice after slicing.

SANDRA'S LICKITY-SPLIT FRUITY LAYERED JELLO DESSERT

My lickity-split and delicious fruity jello layered dessert now has a much-less chilling time to under 30 minutes. This process used to take 2 hours for the 1st layer, then overnight for the second in the refrigerator...Whew. This newly created quicker method I've just devised has truly made my day!   Servings: (8 to 10) Prep: 15 Mins. Chilling: 25 Mins. INGREDIENTS 2 (small 3 oz pkgs) strawberry jello 1 cup boiling water 1 (16 oz pkg) frozen whole strawberries, thawed, drained (reserve juice) then cut into quarters 1 (8 oz can) pineapple tidbits-or crushed, drained (reserve juice) 3 slightly ripe bananas, quartered lengthwise and diced 1/4 cup pecans, finely chopped, (optional) 1 cup sour cream 2 tablespoons confectioners' sugar (more or less to your desired sweetness) 1 teaspoon vanilla extract METHOD In a medium bowl, dissolve gelatin in water. Stir in strawberries, pineapple, bananas, and pecans. Add 1/2 cup of reserved strawberry-pineapple juice. Mix to combine. Pour half ...

Strawberry Freezer Jam

Confession. I haven't made this recipe myself, but I have eaten the end result. My neighbors, Joe and Lisa Nielsen, gave me a jar of this delicious concoction, and I HAD to have the recipe! This is so delicious on homemade bread or toast! I'm going to have to make a batch of this sometime soon. It doesn't look hard at all. The original recipe comes from MCP, a manufacturer of pectin. 3 1/4 cups prepared fruit (buy about 2 quarts fully ripe strawberries) 1/4 cup fresh lemon juice 1 box pectin 1 cup corn syrup 4 1/2 cups sugar, measured into separate bowl Rinse clean plastic containers and lids with boiling water. Dry thoroughly. Crush strawberries thoroughly, one layer at a time. Measure exactly 3 1/4 cups crushed strawberries into large bowl. Stir in lemon juice. Stir in pectin; let stand 30 minutes, stirring every 5 minutes. Stir in corn syrup. Gradually add sugar, stirring until well blended. Stir an additional 3 minutes, or until sugar is completely dissolved and no lon...
