Strawberry Cheesecake Pie

Well, I'm on my 3rd Strawberry Cheesecake Pie using Mr B's Carolina Dips and Dessert Mix . I made the first one, and the hubby polished it off in two days. It's a good thing I licked the spoon when I made it! LOL This has got to be the easiest pie you can make! Only three ingredients and a pie crust, and boom, you are done! Check this out... Mr B's Strawberry Cheesecake Dessert Mix 8 oz Cream Cheese, softened 8 oz tub Whipped Topping Graham Cracker Pie Crust Mix the cream cheese and dessert mix until smooth. Scrape the sides and bottom of the bowl, and add the whipped topping. Mix until combined. Pour into the pie crust and refrigerate until set, or freeze until set for an ice cream style pie. Cucumber and Radish Appetizers ~ Two Ways

This passed weekend was our Annual Adult Easter Egg Hunt Party, and the food was always a hit. We did an informal hamburger and hot dog spread, but had a little of the fancy-shmancy stuff too. There was potato salad, slaw and deviled eggs to name a few of the sides, but the appetizers were a hit. Here are the recipes for the Cucumber ~ Radish Bites. Herbed Cream Cheese Cucumber and Radish Appetizers (on the long tray) 4 oz cream cheese, softened 2 tablespoons mayonaise 1/2 teaspoon dill weed 2 teaspoons ranch dressing mix 1/2 teaspoon finely grated fresh lemon zest 1/8 teaspoon table salt Pinch of cayenne, or to taste 1-2 medium pickling cucumber 3 medium radishes 1 teaspoons minced fresh basil and Kosher salt for sprinkling Stir together cream cheese, herbs, zest, lemon juice, table salt, and cayenne. Taco Cheese Dip

I made this dip today with what I had on hand for my son and his friend while they were working on his car! Nice treat for a job well done!  2 cups prepared Taco Meat 8 oz Cream Cheese, room temp 1 cup Cheddar Cheese 10 oz can Rotel (Diced Tomatoes and Green Chiles) Combine and pour into a baking dish. Bake at 350 degrees for 15-20 minutes or until melted and bubbly! Serve with chips or crackers.

Meatball Sub Macaroni and Cheese

Macaroni and Cheese Base: 16 oz box elbow pasta 3 tbsp butter 3 tbsp all purpose flour 1/4 cup diced yellow onion 1 tsp minced garlic   2 cups milk 8 oz cream cheese � mayonnaise 1 tsp Italian seasoning 1 cup shredded mozzarella cheese 1/2 cup freshly grated Parmesan cheese Salt and pepper   Meatball Topping: 24 meatballs, cooked (or more, if you like) 2 cups spaghetti sauce � cup mozzarella cheese � Parmesan cheese Preheat oven to 350 degrees. Prepare pasta according to the box directions.  Sit out cream cheese until room temperature. Combine with mayonnaise and Italian seasoning, and stir until smooth. Set aside. In a medium saucepan, melt 3 tbsp of butter, add in onion and garlic. Saute over medium heat until the onions become translucent. Add garlic and stir. Sprinkle the onion and garlic mixture with the 3 tbsp of flour, whisking until a paste forms. Slowly mix in milk, whisking until smooth. Continue mixing until it comes to a low boil. It's always a good idea to have a stash of blueberries in your freezer for just such an occasion! I might have just enough left  for waffles next week! I sent half of this danish with my Step-Son and his wife on there trip to North Carolina. I hope they have some left for her parents when they get there! LOL For the dough: 1 package active dry yeast � cup warm water 1� cups warm milk � cup sugar, divided 1 teaspoon salt 4� cups flour, divided � cup shortening, melted For the filling: 2 - 8 ounces cream cheese, softened 1/2 cup granulated sugar 1 large egg yolk (at room temperature) 1 teaspoon pure vanilla extract fresh blueberries (about a pint, more or less per your taste) 1 tablespoon butter, melted In a large bowl, dissolve yeast in warm water. Pimento Cheese

Pretty much everyone in the South has an aunt or grandmother that has a pimento cheese recipe. I combined the ideas from several recipes and came up with this one. I made it for a wedding reception this weekend, and it was a smash hit. I had several people tell me that it was the best they ever had! I love it! Yay! Even the bartender (my step-son took him some sandwiches) said that the pimento cheese is awesome! 1 lb Extra Sharp Cheddar Cheese, grated 1 8oz package Cream Cheese, softened 1 cup diced Pimento 1 cup Mayonnaise 2 tablespoons onion, grated 1 teaspoon garlic powder Salt and Cayenne Pepper, to taste Combine all the ingredients, mixing well. Refrigerate 2 to 3 hours for flavors to mix. (Overnight is best.)

Low Carb Strawberry Cream Cheese Muffins

I created this recipe from a 'regular' one. My husband calls it 'low carbing' them. These don't always work out very well but this one turned out fantastic! I figure there are about 4 carbs per muffin when all is said and done. I ate one warm from the oven and they are really good but if you wait until the next day, they are even better! I think it gives the almond flour time to meld with the cream cheese. Batter: 2 C Almond flour 12 packets of Stevia or the equivalent of 1/2 C sugar 2 tsp. baking powder 1/2 tsp salt Mix these together in a bowl then add: 2 eggs, beaten - less 2 Tbl beaten egg to be used in the cream filling 1/4 C olive oil 1/2 C cream 1 tsp. vanilla Cream cheese filling: 6 oz. cream cheese  8 packets stevia or 1/3 C sugar equivalent 2 Tbl beaten egg 1 tsp. Truly, truly a ''yummmm...yummm" dessert in both this cherry version ~  or the alternate blueberry option! Servings: (12) Prep Time: 15 mins Refrigerate to set: Minimum of 4 hrs or overnight INGREDIENTS Crumb mixture: 2 cups graham cracker crumbs 1/2 cup (1 stick) unsalted butter, melted 1/2 cup granulated sugar Creamy mixture: 1 (8 oz. pkg.) regular cream cheese, room temperature (not whipped) 1 teaspoon vanilla extract 1/2 cup confectioners' sugar, sifted 1 (16 oz. container) whipped topping, thawed (or 2, 8 oz. containers) Filling: 1 (32 oz. can ) prepared cherry pie filling (or 2, 16 oz. cans) - Blueberry is an option too! Garnish: 2 tablespoons confectioners' sugar, sifted over top METHOD Using a fork, combine crumb mixture ingredients in a medium bowl. Berry Cream Cheese Pudding Dessert

Almonds, finely chopped (about 1-1/4 cups) 1/4 cup sugar substitute 6 Tbsp. butter or margarine, melted 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 2 Tbsp. cream 1 tub (8 oz.) COOL WHIP Lite Whipped Topping or use your own whipped cream sweetened with sugar substitute, thawed, divided 4 cups fresh strawberries or any other low carb fruit, halved 2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Sugar Free Instant Pudding 2 cups cream mixed with 1 1/2 cups water Make It Mix chopped almonds, sugar substitute and butter; press onto bottom of 13x9-inch pan. Bake at 400 degrees for fifteen minutes and then refrigerate until cool and ready to use. Beat cream cheese and 2 Tbsp. cream in large bowl with whisk until blended. Stir in half the  Lite COOL WHIP; spread over crust. Top with berries. Beat pudding mixes and 3-1/2 cups cream and water mixture with whisk for 2 min.; pour over berries.  Refrigerate 4 hours. Spread with remaining Lite COOL WHIP just before serving.

Ham Roll-ups

These are great little appetizers. That great thing is that really have no carbs in them or at least very little. One pound of sliced lunch meat ham. Small dill pickles or large ones quartered lengthwise. Cream cheese So how easy this can be?!? Peel off the ham slices one at a time and dry them with a paper towel. Spread the ham with softened cream cheese. Put a slice of the quartered pickle on one end and roll it up. Insert toothpicks into the rolled ham and slice between them. Viola! Ham Roll-ups! Enjoy! These are a great hours d'ouvre to bring to.a party. At least you won't feel guilty about eating these.

Cranberry Cream Cheese Holiday Salad

1 1/2 cups crushed Almonds 4 1/2 tablespoons Splenda 3/4 cup butter, melted 1 tsp salt 1 cup Splenda 2 (8 ounce) packages cream cheese 1 (8 ounce) container frozen lite whipped topping, thawed 1 (6 ounce) package sugar free Jello brand raspberry flavored gelatin 2 cups boiling water 1 (16 ounce) package frozen raspberries 8 ounces of cranberries (chopped) Directions Preheat oven to 350 degrees F (175 degrees C). Mix together the almonds,1 tsp salt,  4 1/2 tablespoons Splenda and melted butter. Press into the bottom of a 9x13 inch pan. Bake for 10 minutes, or until lightly toasted. Set aside to cool completely. In a medium bowl, beat the Splenda and cream cheese until smooth. Fold in whipped topping. Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes. In a medium bowl, stir together the gelatin mix and boiling water. Mix in frozen raspberries and chopped cranberries then stir until thawed. Pour over cream cheese mixture in pan. Ultimate Cheesecake

Okay, I don't know if this is the "ultimate" cheesecake. I'm only using that title because it's what this cheesecake is called on Mel's Kitchen Cafe , where I originally found this recipe. But if it's not the ultimate cheesecake, this is certainly a cut above many of the cheesecakes I've tried. And as an added bonus, it's pretty easy to make--no water baths, etc. If you like a creamy cheesecake, this recipe is for you. I made this (slightly adapted) to rave reviews for a family Easter celebration today. I topped each piece of cheesecake with sliced fresh strawberries.
