HOMEMADE DUMPLINGS

This recipe is from my aunt. 2 cup sifted self-rising flour (or Bisquick) 1/2 cup butter flavored shortening 3/4 cup sweet milk* Cut shortening into the flour until it has the appearance of cornmeal. Put in the milk and work until real firm, then work some more. Roll real thin and cut. Drop dumplings into boiling broth, with a few drops of yellow food coloring. Continue to cook for 10 to 15 minutes then cover and turn off the heat. Let set about 15 minutes. Note: This recipe may be made, rolled out and cut then laid on waxed paper and frozen for later use. *Sweet milk is whole milk NOT sweetened condensed milk!  Note: File Photo

NOSTALGIC CHICKEN AND DUMPLINGS

6 bone-in chicken breast halves, skin removed 2 whole cloves 12 frozen pearl or small whole onions, thawed 1 bay leaf 1 garlic clove, minced 1/2 tsp salt 1/2 tsp dried thyme 1/2 tsp dried marjoram 1/4 tsp black pepper 1 cup chicken broth 3 tbsp cornstarch 1/4 cup cold water 1/2 tsp browning sauce, optional 1 cup Bisquick baking mix 6 tbsp milk 1 1/2 tsp parley flakes Place chicken in a slow cooker. Insert cloves in an onion and add to slowcooker. Add bay leaf and remaining onions. Sprinkle chicken with garlic, salt, thyme, marjoram, and pepper. Pour broth over chicken. Cover and cook on low 4 to 5 hours until the chicken juices run clear. Remove chicken and keep warm. Discard cloves and bay leaf. Increase temperature to high. In a small bowl, combine cornstarch, water, and browning sauce until smooth. Slowly stir into the slow cooker. In another bowl, combine biscuit mix, milk, and parsley. Chicken and Dumplings, With Potato Dumplings Total Time 2hrs 30mins Prep 30 mins Cook 2 hrs Here in the Southern US we pronounce it "dumplins". This is a staple as I grew up, if you want the very basic recipe just leave out the optionals. A very comforting dish. My Father makes this without the options and uses canned biscuits, which is what I grew up on. Ingredients Servings 5 soup 1 (3 lb) chicken 2 1/2 quarts water 1 cup diced onion 2 -3 garlic cloves 1 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon dry basil 1/2 teaspoon rosemary 1 cup chopped celery 1/3 cup heavy cream (optional) dumplings 2 cups flour 1 1/2 teaspoons baking powder 3/4-1 teaspoon salt, if not using potato use 3/4 t 3 tablespoons butter, melted 1 cup milk 3/4 cup shredded potato (optional) Directions Place all ingredients except the celery, cream and dumplings into a large pot, bring to just a boil and reduce heat to a very slow simmer. SANDRA'S HEALTHIER PEL'MENI in 5-MINUTES

My healthier version of pel'meni in 5 minutes... we're nearly addicted to 'em  ??  they're that good, really... Servings: (2) Prep//Cook: 5 Mins. INGREDIENTS: 14 frozen potstickers (Costco Bibigo veggi brand ) 1 tablespoon coarse sea salt 2 tablespoons unsalted butter (Costco  brand, again ) 1 tablespoon dry cilantro ( McCormick Signature Gourmet brand ) 1 tablespoon sriracha 1 tablespoon rice vinegar 1 tablespoon sour cream METHOD: Bring 4 quarts of water to boil in a medium sauce pan/pot. In the meantime, melt 2 tablespoons unsalted butter in a large ramekin in the microwave for about 1.5 minutes. Add the dry cilantro leaves and let bloom for a couple of minutes (they need the melted butter to do so). When water comes to a boil, add the sea salt (doing so just beforehand or it will pit your pot).
