Hot Hamburger Dip

An old familiar classic.  2 lb. ground beef or pork 1/2 med. onion, chopped 3 green onions, sliced 1/2 green pepper 1/2 red pepper 1 cup processed cheese 1 can cream of mushroom soup 1 can tomato soup 2 tsp. chili powder 1/2 tsp. garlic powder salt to taste Fry meat with onions and peppers.  Drain fat if desired.  Add remaining ingredients.  Simmer 20-30 min.  Serve with chips or as a topping for baked potatoes.

Southern Biscuits

This recipe is from my friend, Vanessa, who was a genuine Southern girl from Mississippi.  Super easy... only 5 ingredients! 3 cups flour 1 tsp. salt 2 T. baking powder 1/2 cup shortening 1 1/4 cups milk Mix flour, salt and baking powder together.  Cut in shortening.  Add milk.  Mix gently with a fork and knead a little just until dough stays together.  Press the dough out with your hands to about 1 inch thickness. Cut with a biscuit cutter, or cut into squares.  Bake at 425 degrees for 8-10 min.  Yield: 12-14 biscuits.

Creamy 9th of December Chicken Enchiladas in a Skillet

Here's the recipe from the previous post... 2 large chicken breasts, chopped 1 green pepper, chopped fine � purple onion, chopped fine 1 (10 oz.) tin cream of chicken soup (pg.   366 in Meals Around the World) � cup sour cream � cup milk Seasoning salt, garlic salt and cumin to taste 4 large tortillas cut into 2� pieces 1 � cups shredded cheddar cheese Fry chicken, peppers and onions in a little oil until cooked.   Add spices, chicken soup, sour cream and milk.   Heat through and let simmer a few minutes.   Stir in tortilla pieces and sprinkle shredded cheese on top.   Cover and simmer on low for 5 minutes.   Or, if it�s in a skillet that can be placed safely in the oven, broil until the cheese is melted and browned.     Serve with salsa, corn, and a beautiful green salad! Serves 4-6

The Way it Happens...

4:46 p.m.:    I sit at the sewing machine.   Somewhere in the depths of my memory I catch a whiff of some homemade casserole baking in the oven.   I close my eyes and sniff again.   Yes, that�s it!   Enchiladas!!   Hot and bubbling, full of cheese and beans.   The perfect food for a chilly, dreary day.   A colorful green salad topped with creamy dressing finishes the plate nicely. 4:47:   I call Alice to ask about ordering calendars.   And to ask if we can please come for supper and would she please make us a pan of enchiladas.   She kindly declines on the grounds that she has no tortillas and it�s a little late.   I lean against the patio wall and pet the happily purring cat as we chat.   She tells me that Joanna made Creamy Green Enchiladas on Sunday for Monica�s birthday.   I remember my Quick Burrito Skillet recipe from Kraft. 5:26 (or so):   I dig in the freezer hoping to find some ground pork. ...

Shrimp Tacos

I actually tried a new recipe last night.  Haven't done that for a looong time.  We thought these colorful tacos were really good.  Quick to make is another bonus. Brownies

Basic and good.  And easy.  What more do you want?!!  Dress them up with nuts or whipped cream and chocolate sauce.  Or serve them with strawberries. 1.  Preheat oven to 350 degrees. 2.  Mix:      1 cup margarine, softened                   4 eggs                   2 cups sugar 3.  Add:     1 cup flour                  1/3 cup cocoa                  1 teaspoon vanilla 4.  Mix together on low speed and spread in greased 9x13 pan. 5.  Sprinkle 1 cup chocolate chips on top. 6.  Bake for 30 minutes. 

Baked Beans With Ham

I've made this for times when I had to take something to a potluck on short notice.  Like one Saturday when I heard at 12:15 that there was a potluck lunch for the work bee at church.  The taco seasoning and cilantro give it a nice twist, but I've certainly made it without the cilantro, too.  Another substitution is to use some bacon in place of some of the ham. 1 can (28 ounces) baked beans 2 cups cubed fully cooked ham 1/4 cup tomato paste 2 tablespoons molasses 1 tablespoon brown sugar 1 tablespoon Worcestershire sauce 1 teaspoon dried minced onion 1 teaspoon taco seasoning   1 teaspoon minced fresh cilantro In a 1-1/2-qt. microwave-safe bowl, combine all ingredients. Cover and microwave on high for 3-5 minutes or until heated through, stirring once.   Yield :  5 servings.

Mexican Chicken

Keep the ingredients for this in your cupboard and you can throw together a casserole in minutes.  Good enough to serve company.  Recipe is from Jo and Bren. 2 cans Costco chicken (or 2-3 cups cooked chicken) 1 can mushroom soup 1 can cream of chicken soup 1 can stewed tomatoes 1 tsp. chili powder 1/4 tsp. salt 1/2 lb. grated cheese 1 bag crushed tortilla chips (Dorito Nacho Cheese) 1 small onion, diced Mix together and put in greased 9X13 pan.  Bake at 350 for 45 min.  Serve with lettuce, tomatoes, salsa, and sour cream.  I like to save a handful of chips and cheese to sprinkle on top.

Quick-Fix Beef Burrito Skillet

Another quick recipe from Kraft.  It tastes like enchiladas.  1 lb. (450 g) extra-lean ground beef 1 pkg. Santa Fe Chicken

An easy skillet meal.  I make it for lunch when Ryan has hired boys over and I suddenly need a proper meal! 1 large onion 1 T. butter 1 1/4 c. chicken broth 1 c. salsa 1 c. uncooked long grain rice 1/8 tsp. garlic powder 4 boneless, skinless chicken breasts 3/4 c. shredded cheddar cheese Saute onion in butter until tender.  Add broth and salsa.  Bring to a boil.  Stir in rice and garlic powder.  Place chicken over rice.  Cover and simmer 10 min.  Turn chicken and cook 10-15 min. more.  Remove and sprinkle with cheese.  Cover and let stand for 5 min.
