Green Chile Chicken Recipe
Recipe courtesy of Ree Drummond Show: The Pioneer Woman Episode: Friendship Fiesta Total:5 hr Active: 40 min Yield: 6 servings Level: Easy Ingredients 1/2 cup olive oil 3 tablespoons lime juice 1 teaspoon ground cumin 1 teaspoon salt 1/2 teaspoon freshly ground black pepper 2 canned chipotle peppers in adobo sauce, or more to taste 2 cloves garlic 6 boneless, skinless chicken breasts 6 poblano chiles 8 ounces Monterey Jack cheese, cut into 6 slices Directions First, make the marinade for the chicken: Combine the olive oil, lime juice, cumin, salt, pepper, chipotle peppers and garlic in a blender and mix until totally pureed. Pour into a large resealable plastic bag with the chicken breasts. Seal the bag, smush it around to coat the chicken and place it in the fridge to marinate for at least 4 hours (overnight if possible).
