Chocolate Chip Cookies

Image
Oops, it's been a few weeks between recipes! This is a recipe from my husband's childhood. These are his mom's go to chocolate chip cookies. It's been a while since I've made them, but we made them as a family a few weeks ago, and it's obvious why the recipe has been around forever. They looked pretty and they tasted great too! Chocolate Chip Cookies 1 1/2 cups sugar 1 1/2 cups packed brown sugar 1/2 cup Crisco (I used butter flavored) 1 cup margarine (2 sticks) 3 eggs 3 tsp vanilla 5 1/4 cups flour 1 1/2 tsp baking soda 1 tsp salt 12 ounces chocolate chips Cream together the Crisco, margarine and sugars until light and airy (about 3-4 minutes), mix in the eggs and vanilla. Mix together the dry ingredients in a separate bowl and add gradually to the wet ingredients until combined. Stir in the chocolate chips. Scoop with a mall scoop. Bake at 375 degrees for 8 to 10 minutes.

Gluten Free Peanut Butter Cookies

Image
I've seen recipes for this kind of cookie before, but never really gotten around to trying them. Things that are gluten free usually don't taste very good to people that aren't allergic to gluten. But these cookies really are amazing! I love that you can make them so quick. The dough goes together really quickly, I think the total time between making the dough and baking the cookies was less than half an hour. They are also really versatile, you can make them like standard peanut butter cookies, rolling them in sugar, or add chocolate chips to it and make them like a chocolate chip cookie. I doubled the recipe so that we could try them both ways. Our family loved these cookies.  Gluten Free Peanut Butter Cookies as seen on Our Best Bites 1 cup peanut butter 3/4 cup packed brown sugar 1 egg 1 teaspoon vanilla 3/4 teaspoon baking soda 1/4 teaspoon salt granulated sugar for rolling (optional) or 1/2 cup chocolate chips (optional) Cream together the peanut butter and brown suga...

Sugar Cookie Bars

Image
Sugar cookies are one of my very favorite treats and for me, a must have on Valentine's Day. I was unable to make regular sugar cookies this year, but I came across this recipe on Our Best Bites and knew I had to try it. I love the easy, no refrigeration, no roll out method of making these. But I think my very favorite part was the flavor of the cookies. These cookies taste like yummy shortbread cookies with yummy frosting. They are well worth the few minutes that it takes to put them together! For our family, I halved the recipe and simply baked it in my 9 x 13 metal pan. Next time I'll make the full batch in the cookie sheet and share with neighbors.  Sugar Cookie Bars as seen on Our Best Bites For the cookie bars :  2 cups butter (4 sticks), softened 2 cups sugar 2 eggs 2 teaspoons vanilla 1 tablespoon almond extract 6 cups flour (make sure to spoon lightly into measuring cup) 1 tablespoon baking powder 1 teaspoon salt Preheat your oven to 350 degrees. Lightly spray a cook...

How to Glaze Sugar Cookies Like a Pro

Image
If you've followed our blog for awhile you know that Cutler's will occasionally host a cooking class. Unfortunately, we've run out of both parking and room for people to come for a class, so we've come up with a new idea with Si from A Bountiful Kitchen , the virtual class. Last week, we were able to go to Si's amazing kitchen and whip up some of Cutler's Famous Sugar Cookies . Si especially wanted to do the glazed ones, and that's kind of what I wanted to show you, this has been one of those things when we've done cooking classes that make people go crazy.  I'm not actually going to post the recipe here, you can check out the link above from last year when I posted it though. I am posting just a few pictures from that fun day though.  The first picture is Curt making sugar cookie dough and to the left is Si cutting out the cookies. You can also go to Si's blog and check out her step by step instructions for making these great sugar cookies. I h...

Cutler's Mint Brownies

Image
I've had several people comment in the last little bit that we have the recipe for the marshmallow brownie on our blog, but not the mint brownie. I guess that's just because the base of the cookie and the chocolate frosting are exactly the same in both. The only real difference is the mint frosting. These cookies are one of our very most popular cookies that we sell in our bakeries. They are really yummy! Cutler's Mint Brownies For the cookies : 1 cup butter 1 2/3 cup white sugar 2 eggs 1 1/4 teaspoon vanilla 3/4 cup unsweetened cocoa 1/4 teaspoon salt 1 1/4 teaspoon baking powder 2 1/3 cups flour (we use cake flour, but you can also use all purpose) Cream butter and sugar. Add eggs and vanilla and mix until well blended. Add dry ingredients and mix. Cookies can be rolled, formed into drop cookies, or pressed into a 9 x 13 inch baking pan (double both the recipe and the baking time). To get brownies like Cutler's roll out the dough to about the thickness of a pencil, c...

Sugar and Spice Cookies

Image
We made these cookies for the first time this year just a couple of weeks ago, and within minutes half of the tray was gone. Did we sell any of them? Nope, the cookies smelled so heavenly that all of the employees wanted to eat the cookies right then! You could try making them yourself, or you could come and get some before we stop making them for the season again!  Sugar and Spice Cookies 2 sticks of butter 1 1/3 cups packed brown sugar 1 1/2 tsp baking soda 1/4 tsp salt 1/2 tsp ginger 1 tsp cinnamon 1/8 tsp allspice 1/8 tsp cloves 2 3/4 cups flour (spooned into measuring cups and leveled) 1 1/2 tablespoon molasses 1 egg Cinnamon/Sugar mixture for sprinkling Preheat oven to 350 degrees, and prepare baking sheets by covering with parchment paper. Cream together the butter and brown sugar, something I've discovered with cooking at home is that if you don't cream the mixture long enough your cookies will turn out flat like papers, so you probably want to cream them for 4-5 minute...

Chocolate Chip Lava Cookies

Image
This is another cookie recipe that I found on my Pinterest page. I loved the idea, I had never heard of such a thing before. These cookies were so yummy! They actually turned out in our oven, not many do! Our kids also enjoyed eating these and especially the little surprise in the center. I'm sure that you could use whatever chocolate chip cookie dough you wanted for this recipe, here's one of ours , but I just went with their recipe, because I knew it would make the right amount of dough for what I was doing. I was able to make a dozen of these cookies, because I don't like unbaked cookie dough, but if you are a dough-eater, you may need to plan to make fewer than a dozen. Chocolate Chip Lava Cookies adapted from  Kevin and Amanda 1 stick butter, softened 1/2 cup brown sugar, packed 1/2 cup granulated sugar 1 large egg 1/2 tablespoon vanilla 1 3/4 cup all purpose flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1 (11 1/2 ounce bag) semi-sweet chocolate chips Preheat oven t...

M & M's Cookies

Image
I got a new cookbook last week, and I've had a great time looking through it. It's called the Romney Family Table by Ann Romney. There were tons of recipes in this one that I wanted to try and I loved hearing about Ann's family traditions. This recipe was one of those that I marked to try. The best thing for me was they actually turned out in our oven! I halved the recipe and still ended up with almost 5 dozen cookies. I think next time I will take out about a half a cup of oatmeal and add the extra bit of light corn syrup, because when they cooled they were crispier than I would have liked. They still tasted delicious, and there's no flour in this recipe, looks like it's gluten free to me! M & M's Cookies The Romney Family Table by Ann Romney, page 18 2 cups sugar 2 cups brown sugar 1 cup butter 6 eggs 1 teaspoon vanilla 3 cups peanut butter (recipe calls for crunchy, but I only use light and it worked fine!) 2 to 4 tablespoons light corn syrup 4 teaspoons ...

Pumpkin Chocolate Chip Cookies

Image
I know that I posted this recipe earlier, but I didn't have a picture with it. I decided to re-post it with a picture that I was able to take last week. These cookies are super yummy and are just flying out the door at our 5th South location right now, and they are guaranteed to fill your house with that yummy fall spicy smell.  Pumpkin Chocolate Chip Cookies 1 cup butter, softened 3 cups sugar 2 eggs 2 cups pumpkin 2 teaspoons vanilla 2 teaspoons cinnamon 1 teaspoon nutmeg 1/2 teaspoon ground cloves 5 cups cake flour (5 cups all purpose works too!) 1 teaspoons salt 2 teaspoons baking powder 2 teaspoons baking soda 2 cups chocolate chips Preheat oven to 350 degrees. Beat butter and sugar together for about 2 minutes or until smooth. Add eggs, pumpkin, vanilla and spices. Continue beating for about 2  additional minutes.  Add rest of ingredients to bowl and mix just until flour disappears and all ingredients are combined. Using a large cookie (or ice cream) scoop, place do...

Cake Mix Crinkle Cookies

Image
I found this recipe on my Pinterest boards the other day when I needed a quick treat. It originally comes from Six Sisters Stuff, but I didn't have the kind of cake mix that they called for in their recipe, so I substituted my own. The really cool thing about this recipe is that you can make it with whatever flavor of cake mix you want and it would turn out equally delicious. It's also super fast, easy, delicious and they actually turned out in our oven! Cake Mix Crinkle Cookies 1 (15.25 ounce) box cake mix, whatever flavor you want, I used Chocolate Fudge   1/2 cup vegetable oil 2 eggs 1/2  cup powdered sugar Don't follow the cake mix directions! Preheat oven to 350 degrees. Mix the cake mix, oil and eggs together, until they form a stiff dough. Form into balls you want them to be around 1 inch, I used my small cookie scoop, but you could just use a spoon, roll balls in powdered sugar. Place on a parchment lined baking sheet. Bake cookies for 7-9 minutes, don't over-ba...

Cinnamon White Chocolate Chip Cookies

Image
You know how on blogs everything always looks perfect. Well, it's not! Today we're going to be keeping things real. Here's a picture of what 90 percent of the cookies I bake at home turn out looking like.  Not so pretty, right? They usually taste okay, but they may have a bit of a greasy texture. The thing is, I can take the exact same dough to Cutler's and bake it in their commercial oven and have the same batter turn out great. Not sure what's causing this, but I'm guessing there's something wrong with our oven. Usually it's just cookies that turn out like this but we have issues with cake mixes too. I wish I knew what was causing it, then I could fix it. Does anyone have any suggestions? With these cookies I added a bit more flour to the next batches and they turned out better, though still not Cutler's quality. Enough of my oven issues, now for the recipe. I've seen recipes using cinnamon chips all over the blogosphere, but I've been unab...

Homemade Oreos

Image
We've been having a heatwave here in Utah. Of course our air conditioning had to go out on the hottest day of the year. Our youngest daughter had planned to have these homemade Oreos for over a week, but the day happened to be the day that our air conditioner needed fixed and it was 103 degrees. Not wanting to heat up our house even more than it already was, I tried to talk her out of making these, but no such luck. Luckily, they were worth turning on the oven and making them. The original recipe calls for you to use your hands to shape the cookies, but the dough was super sticky and that didn't work at all (maybe it was simply too hot in our house!). I recommend using a small ice cream style scooper and not filling it all the way full. Homemade Oreo Cookies Favorite Family Recipes pg 238 Cookies:   2 packages devil's food cake mix 3/4 cup shortening or margarine, softened 4 eggs 1 tsp vanilla Frosting:   8 oz cream cheese, softened 1/2 cup butter or margarine, softened 3 t...

Cutler's Double Chocolate Oatmeal Cookies

Image
I have to tell you that this is one of my very favorite cookies, but cookies just haven't been turning out lately when I bake them at my house. :( I was thrilled when this recipe actually did turn out really well. I thought that the cookies taste just the same as when you buy them at Cutler's. This is an amazing recipe, make sure to try it! Cutler's Double Chocolate Oatmeal Cookies 1 cup butter or margarine (or use half and half like I did) 1 1/2 cups brown sugar 1/2 cup sugar 1 1/2 tsp vanilla  2 eggs 2 tablespoons milk 3/4 cup cocoa 1/2 tsp salt 3/4 tsp baking soda 1 1/4 cup flour 3 cups oats (I used quick cooking) 1 cup semi-sweet chocolate chips Cream the butter and sugars in the bowl of your stand mixer. When creamy, add vanilla, eggs and milk. Combine the dry ingredients, making sure to mix them together. Slowly add the dry ingredients, mix until no dry flour remains. Add the chocolate chips. Scoop with a small ice cream type scoop or drop by tablespoons onto a parchm...

Lemon Shortbread Cookies

Image
Last week I posted the Lemon Meltaway Cookie recipe, so I thought that this week I would post the amazing cookie that we replaced it with. The recipe for this cookie came together quite by accident. Instead of doing the usual creaming of butter and sugar, this was accidentally all dumped into the mixing bowl and mixed together, the result is an amazingly yummy, tender cookie! Lemon Shortbread Cookies Tatyana Thompson 2 sticks butter - room temperature 2 cups cake flour (all purpose works too!) 3/4 cup sugar 1/2 tsp baking powder 1 tbsp lemon emulsion or extract (We use emulsion for the better flavor it gives. available at kitchen specialty stores.) 1/2 tsp vanilla Lemon Icing Icing Ingredients Powdered Sugar Lemon Juice Yellow food coloring, if desired Combine all ingredients in a stand mixer until blended. Form dough into balls, then press down the palm of your hand to shape the cookies. Bake at 325 for about 18 to 20 minutes. To keep these soft, make sure not to over-bake. Let them c...

Lemon Meltaways

Image
Ever since we discontinued the Lemon Meltaway cookies at our Bountiful and Centerville stores we have had tons of requests for the recipe. A fun fact about this cookie is that it was originally the Studio 5 Signature Cookie. The show came to us and asked us to come up with a cookie that only had 5 ingredients. The neat thing about this cookie is how versatile it can be. Instead of having lemon on the top, you can have lime, strawberry, pink lemonade...the sky really is the limit. I've also heard of people using this dough as a kind of pie dough. So get creative!  Since we aren't making this cookie anymore, and it's not something I'd make at home, I did a quick internet search for images. I found this picture and copied and pasted, so I need to apologize to whoever I stole this picture from!    Lemon Meltaway Cookies Cookie Ingredients 1 cup butter cup powdered sugar 1 tsp lemon juice cup cornstarch 1 2/3 cup flour Icing Ingredients Powdered Sugar Lemon Jui...

Chocolate Sugar Cookies - Again!

Image
I know this isn't a new post, sorry, I am posting another recipe for Chocolate Sugar Cookies . I wasn't really thrilled with how the cookies came out with the recipe the way that America's Test Kitchen had it. So I've been playing with it, I've made these cookies several times and I think that they turn out way better this way, so instead of just changing what I had posted before, I decided to just re-post the recipe, the way that it turns out better. That way, you can compare the recipes and even try them both yourself. Maybe you will like the cookies better the original way!  Chocolate Sugar Cookies adapted from Cook's Country Magazine 14 tablespoons butter, softened 1 cups packed brown sugar 1 tablespoon vanilla extract 1 large egg 1 large egg yolk teaspoon salt 1 cups plus 2 tablespoons all-purpose flour cup unsweetened cocoa powder (we use Dutch Processed) teaspoon baking soda teaspoon baking powder 1/3 cup granulated sugar Pre-heat oven to 350 ...

Chocolate Sugar Cookies

Image
In my mailbox last week I found the current issue of Cook's Country Magazine. I was so excited, I love these magazines! While I was looking through it a recipe for Chocolate Sugar Cookies caught my eye, and I couldn't wait to try them. Here is the recipe, including my own changes for flavor. Chocolate Sugar Cookies Adapted from Cook's Country Magazine 1/3 cup granulated sugar 1 1/2 cups plus 2 tablespoons all purpose flour 3/4 cup unsweetened cocoa powder 1/2 teaspoon baking soda 1/4 teaspoon baking powder 14 tablespoons unsalted butter 1 3/4 cups packed brown sugar (the original recipe calls for dark brown sugar, but I like the flavor of light brown sugar better) 1 tablespoon vanilla extract 1/2 teaspoon salt 1 large egg plus 1 large yolk Place the granulated sugar in a shallow bowl and set aside. Preheat your oven to 350 degrees and line 2 baking sheets with parchment paper. Mix flour, cocoa, baking soda and baking powder in a bowl. Microwave 10 tablespoons of butter in a...

Raspberry Truffle Cookies

Image
Last week, I saw a recipe on Six Sisters blog for Thin Mint Cookies, I was going to just make that this week, but then I found a bottle of Raspberry extract and decided to make a chocolate raspberry cookie instead. It was awesome! They were a big hit in our bakery.  I changed a few other things too, but whether you make these with mint or raspberry, or if you have a completely different idea, they will be awesome! Raspberry Truffle Cookies adapted from Six Sisters Stuff Cookies : 1/2 cup butter, softened 1/2 cup Smart Balance for baking, softened 1 cup powdered sugar 1 teaspoon vanilla extract 1 cup unsweetened cocoa powder 1/2 teaspoon salt 1 1/2 cup cake flour Raspberry Chocolate Coating : 2 cups semi-sweet chocolate chips 1 1/2 teaspoons Raspberry extract 8 Tablespoons butter Dough kind of crumbly. In mixing bowl of Kitchenaid mixer, beat butter and Smart Balance until light and fluffy. Add powdered sugar and mix well. Mix in vanilla, salt and cocoa. Mix in the flour, the dough...

Oatmeal Scotchies

Image
I've been looking for an amazing recipe. This recipe is a yummy oatmeal cookie with Butterscotch chips. I found the recipe on the back of a bag of Nestle Butterscotch Morsels, and let me tell you, it is amazing! Oatmeal Scotchies from the back of the Nestle Butterscotch Morsels package 1 1/4 cups all purpose flour (I used 1 1/2 cups cake flour) 1 tsp baking soda 1/2 tsp salt 1/2 tsp ground cinnamon 1 cup (two sticks) butter or margarine, softened 3/4 cup granulated sugar 3/4 cup brown sugar 2 large eggs 1 tsp vanilla extract 3 cups quick or old-fashioned oats 11 oz package Nestle Butterscotch Morsels Preheat oven to 375 degrees.  Mix together flour, baking soda, salt and cinnamon in a small bowl and set aside. Meanwhile, mix butter, brown and granulated sugars, eggs and vanilla in the bowl of your stand mixer until fluffy. Add dry ingredients a little at a time. Stir in oatmeal until combined. Stir in Butterscotch morsels.  I use a small ice cream style scoop to scoop them ont...
