Onepot Chicken And Chickpea Pilaf

If you are wondering where is the new blog she was talking about , well, it turned out to be a lot more difficult to make so I finally decided I will first have to learn a few tech stuff and just gave up.  I work alone so trying to figure out wordpress  finally took its toll and I  just stopped. Maybe someday I will get some nice techie to help me to make a beautiful blog. So for now, lets get back to my usual topic, food! I love one pot recipes and this one is the kind of meal I make when I have left over  roast chicken.  I love to make this  for lunch , and serve with some raita or tzatziki sauce.  And best of all not much to wash later. Tuna and White Bean Stew

In Maldives we get tuna fresh from the surrounding sea and although we make it into curries and smoke them, I wanted to make something different. I saw this recipe , via pinterest where some white fish is cooked with white beans in tomato sauce and flavored with basil.  I decided to use tuna instead and basil can be easily found  in Maldives, White beans is not especially in the islands. So the second time I did this recipe I used a can of baked beans. I drained (yes I can hear a few gasps) the tomato sauce and used just the beans instead. I used a chilli to give a bit of heat . Now this is something all three boys in the house ( third one being my hubby)  love!. And its an almost vegetarian dish! I say almost vegetarian as I added just  a little bit of dried tuna because it goes very nicely with this meaty flavoured brown lentils.   I found this recipe in and old Margret Fultan' s book of Vegetarian Cooking . In the book its called a quiche but for me its more like a tart  so I renamed it tart LOL.  I adapted the filling to suite our taste but  and I love the cheesy pastry,. Chicken Tumeric Soup With Spinach And Chickpeas

There is always some flu or some bug going around,  especially when the rain stops and the sun comes out.  The boys caught the stomach bug and spent one weekend  throwing up along with  severe diarrhea and  then the  next week end, before I could breathe a sigh of relief ,  a heavy cold with fever came in. Both being asthmatic, this was not a good sign as  especially my little guy spent one day fighting to catch his breath with a really bad wheeze  going on. Its hard for me as a mother , when the kids get sick they loose the appetite and  you have to keep the food going in ,not out. For me the best kind of food to make during sick days is soups.   Apart from my sick day rice porridg e,  chicken soup is one my  favorite sick day soups to make.
