Tuna and Leek Puffs

First , sorry for being under the radar for a while. Have been working on a project of mine, which I am praying succeeds by next year insha allah and I will be able to share it with you all. ?? So My mum  discovered puff pastry, and life has made it so much easier for her. So now and then she would buy puff pastry puffs and make some pastries for her dinner. Her dinner usually circulates around the house as she has a habit of making a lot and sending them over to my sisters and I.  Anyway she makes these tuna puffs  with sauteed onions and scotch bonnet peppers . My version had leeks, I think leeks and tuna go well together and of course scotch bonnet, although unlike my mum's version I use less. Baraboa Mas-huni ( Pumpkin and Tuna Sambol)

When growing up I hated pumpkin. Although now a days I have started to enjoy it. My hubby teases me a lot because of it ,as I once told him i hate pumpkin and butternuts  and now he  goes, "so you don't like pumpkin huh?"  Mas huni is a fish sambal , a mixture of onions, fresh coconut, chillies and smoked tuna , although you can use canned tuna. A vegetable of some sort is added, usually a local one ,such as kopee fai , aubergine and in this case, pumpkin. I prefer to use pumpkin to butternut as I feel pumpkin goes much better with savory dishes. Tuna and Tomato Galette

I love make galettes , its a free form tart.  No blind baking required. I saw a few tomato galettes on Pinterest and wondered if I can use some tuna along with it and extra cheese. It turned out quiet delicious and I think any Maldivian will like it as its got that chili kick ( although I dont go mad with the chilli like some people), the tuna flavor and the cheese and  sweet tomatoes. So give it a go and serve it along with a nice green salad. If you are making this on a hot day, chill the dough after rolling it  before you put the filling. This way it makes it easier to fold the edges. Fried Tuna and Potato Patties

Ok I know I have done the baked ones, but this one has a slightly different pastry unlike the baked one. I used the egg to make my pastry richer but its not really necessary to add it.  My mother in Law makes this kind of pastry and its also found in some of the Hedhika ( local snack) shops. Since the theme for this month's challenge in the Muslimah Bloggers' was  to create a Ramadhan Recipe from Islamic world. Well Maldives is a Muslim Country and I feel this recipe fits the bill. Its often made in my home almost like once a week. Even though its not an authentic one , has the influence of Sri Lanka in it.Its almost like a curry puff you get in places like Malaysia , just no curry flavor. So  as you might have noticed I do very few salads, but that doesn't mean I don't eat vegetables, just that eating a bowl of salad  as a meal is not easy as the rest of the family especially the husband will freak out. But I am not getting any younger , going to be the big 4-0 soon in  a years time so I  am determined to try and eat a salad bowl as a meal now and then.  I made this Nicoise salad  one afternoon,  and felt good afterwards. It was quite filling too. Spagetti With Tuna Balls and Fresh Cherry Tomato Sauce

I  saw these tuna balls  recipe in bbcgoodfood.com, where  pasta was served with these tuna balls made with canned tuna. Of course as you know canned tuna is a pantry staple in my home so I just had to give it try. The boys and hubby loved it, I tried a couple of sauces along with it, but this one , made using fresh cherry tomatoes came out the winner and didn't mask the delicate tuna balls taste. I was planning to use regular tomatoes but on my regular visit to my usual grocery shop, Seagull store I saw these gorgeous cherry tomatoes grown locally in the island of Maafahi. You can use regular tomatoes, chopped  roughly and substitute fresh basil in place of the curry leaves for a different taste. Recipe : Spagetti with Tuna Balls and Fresh Cherry Tomato sauce. Quick Tuna And Vegetable Pasta

It can get pretty hot here in Maldives and  on such days I try to make quick meals so I don't end up heating up our home ( our home is an apartment in my parents house, we( my sisters and I) all have our own little apartment with my parents living in the ground floor, and each having our own kitchens.) Now this quick and easy  recipe is  pretty easy on your wallet too, you can use penne, fussili or even bowtie pasta  any short pasta is fine. Canned tuna is household staple in Maldives,  frozen veg such as brocolli or peas (even canned peas is fine), and a jar of cream cheese spread. Cheesy Tuna And Vegetable Pinwheels

This is a great way to use up left over  roshi, or flat bread, something which I am sure will be in excess during Ramadhan. Its an easy to make  recipe , it can be served as a little snack  or even as a way to get kids interested in eating  vegetables, its quite cheap and can be made in advance and left to chill , just cut it up  before serving. Kopee fai is  a local green, the taste is said to be a lot like Kale. Muranga Fai Mashuni ( Tuna and Morainga leaves Sambal)

The Morainga tree in our yard has been there forever.  As a child I was literally forced to eat the leaves, which I hated back then, as most kids do.  It would be served raw  with rice or into an omelette . Or we would be made to sit and pick each leaf ( the most annoying task), no stems mind you , to make Theli fai, the leaves are deep fried and mixed with fried dried chillies and tuna chips and served as a condiment with rice and curries.  But as you grow older your tastes buds change right? and you realize the disgusting leaves you were fed as a child is actually now considered a superfood around the world and its grown in the back yard. So lately I started to head into the yard and pick  a branch or two of the morainga tree and started to incorporate them into my daily dishes. Masfathafolhi ( mini tuna cakes)

 I actually prefer these little domes of tuna cakes to the usual Boakibaa .  Its best made with  smoked tuna but if you cant get your hands on them use canned tuna.  Its almost the same as a boakibaa except the size and shape is different. I prefer to grind my  rice rather than buy the pre ground packs found in the markets.  I don't know why but it just seems easier to handle and I can get the consistency I want. My mum thought I have gone bonkers when she found out I was doing this rather than the easy way. I also mix the onion mix and then pulse a few times in the processor so they are roughly chopped, the boys don't like big strings of onions .... They make good portable  snack for kids lunch box too, I mean its healthy right , its not fried , its got tuna ( which is good for you),  and its baked , not fried .Just add a few vegetables on the side  and  I think it makes a nice little snack for the kids. Eggplant Rice Pilaf

Eggplants, Aubergine , Brinjals , whatever you may call them, I love  them.  I love their slightly meaty taste. I saw this eggplant pilaf once but I adapted it a bit so I can use  easily available ingredients. I added a can of tuna just so there was some protein , you  can leave it out if you want to make this  vegetarian or serve it along with some griled fish , chicken or meat dish.  I served this up with some raita . Tuna And Avocado Sandwiches

 I have my new found love for avocados, I discovered these sandwich recipes of replacing mayonnaise  with Avocados and it was an instant hit with the boys. I have become addicted to Pinterest. Its such a fun app and I love browsing around for ideas and its where I came across this recipe.  I have made this a couple of times and am now getting ready to have this a few more often for dinner during the upcoming hot days.
