An updated classic cake from scratch that's super delicious and fun to take to any potluck, picnic, or party... Servings: (12) Prep: 30 Mins. Bake: 30-35 Mins. INGREDIENTS Wet: 1/4 cup unsalted butter, melted 1 cup granulated sugar 1 egg, beaten 1 teaspoon vanilla extract Dry (sift): 1/4 teaspoon ground cinnamon 1/4 teaspoon salt 1 teaspoon double-acting baking powder (or regular) 1/2 teaspoon baking soda 1 cup all-purpose flour Add: 2 medium, ripe bananas, peeled and mashed 1 (8-oz. can) crushed pineapple, drained 1/2 teaspoon finely grated, lemon zest Topping: 1 tablespoon granulated sugar 1/2 teaspoon ground cinnamon METHOD Preheat oven to 350 degrees. I got this recipe from my Mama's recipe file and modified it a little. When I made it, I realized it tastes just like the Chinese Restaurant's Red Sauce! I had been trying to duplicate that sauce for years because that's the main reason the hubby eats Chinese Food! LOL Stumbling on to this recipe was a real find! Mama called this Hawaiian Sauce!  My version of Chinese Take-out! Sweet and Sour Chicken This is Mama's recipe... Chicken Hawaiian Style 1 � lbs Chicken Breasts, cut into strips or cubes 1 cup Pineapple Chunks 1 cup Pineapple Juice � cup Vinegar 6 oz Tomato Paste � cup Sugar 1 cup Water 1 t Salt 1/2 Green Bell Pepper 1/2 Red Bell Pepper 1 medium onion 2 T Cornstarch Brown chicken strips in butter.* Drain pineapple, reserve syrup. Simple Fresh Fruit Salad Cantaloupe Watermelon Honeydew Melon Strawberries Grapes, Red and Green Granny Smith Apples Gala Apples Pineapple (can/cans of  DOLE� chunk) Mint, optional Simply cut the fruit into bites size chunks and toss. I used  DOLE�  canned pineapple and use part of the juice as a sauce for the salad. If you use apple or a fruit that might brown, quickly toss in the pineapple juice after slicing.

My lickity-split and delicious fruity jello layered dessert now has a much-less chilling time to under 30 minutes. This process used to take 2 hours for the 1st layer, then overnight for the second in the refrigerator...Whew. This newly created quicker method I've just devised has truly made my day!   Servings: (8 to 10) Prep: 15 Mins. Chilling: 25 Mins. INGREDIENTS 2 (small 3 oz pkgs) strawberry jello 1 cup boiling water 1 (16 oz pkg) frozen whole strawberries, thawed, drained (reserve juice) then cut into quarters 1 (8 oz can) pineapple tidbits-or crushed, drained (reserve juice) 3 slightly ripe bananas, quartered lengthwise and diced 1/4 cup pecans, finely chopped, (optional) 1 cup sour cream 2 tablespoons confectioners' sugar (more or less to your desired sweetness) 1 teaspoon vanilla extract METHOD In a medium bowl, dissolve gelatin in water. Bacon-Wrapped Pineapple Bites

Easy, easy appetizer. The salty, chewiness of the bacon makes a good combination with the sweetness of the pineapple and the brown sugar. 1 whole pineapple, cored and cut into 1-inch chunks (the original recipe called for canned pineapple, so that is an option, but fresh pineapple is so much better; actually, I used pre-cut fresh pineapple from Costco) 1 pound thin-sliced bacon, cut in half 3 to 4 tablespoons dark brown sugar Preheat oven to 375 degrees. Wrap each chunk of pineapple in a half strip of bacon and secure with a toothpick. Place on a wire baking rack or lined cookie sheet. Bake for about 20 minutes. Remove and sprinkle with brown sugar. Preheat broiler. Place the pan under the broiler for a few minutes. Keep your eyes on the pineapple bites so they don't burn. Let cool slightly and serve. Makes 25 pineapple bites.

I have still decided to continue with a summer recipe, Pineapple is a great summer fruit well to be honest we don't really get native fresh pineapple in the U.K.But it is coming soon surely. In the mean time we are going to be using tinned pineapple which I do adore,also in this recipe I'm using low fat natural yogurt which has so many uses and health benefits, some of which I never even realized .So I thought  I would try and enlighten you by giving you a couple of these benefits that could enhance your well being. 1. Yogurt is easier to digest than milk. Pineapple Cheese Dip

My sister Amy brought this dip to our family's Christmas Day brunch this year, and I really liked it. 2 8-ounce packages of cream cheese, softened 1/2 cup chopped green onion 1 20-ounce can crushed pineapple, drained Chopped pecans Mix the first three ingredients together in a small serving bowl. Garnish with chopped pecans. Serve with crackers.
