Chocolate Salami Recipe

Image
The first time I saw a slice of chocolate salami, my heart skipped a beat. Imagine the consistency and richness of a chocolate truffle, but now imagine a whole roll of the stuff, peppered with tiny morsels of all your favorite things: candied ginger, pistachios, almonds, and crispy amaretti cookies Chocolate salami is a very easy no-bake dessert (a lovely option if youre not a fan of baking!) It also makes a great DIY gift to offer friends or family during the holiday season. (Wrap it up in kitchen twine to give it an authentic salami look and I can guarantee a few oohs and aahs)  The salami log can be kept in the fridge for up to 1 week and brought out as needed, cut into slices, and served either as dessert after a meal, or on a tray alongside other holiday cookies. Ingredients : 10 oz dark bittersweet or semi-sweet chocolate 1 stick (1/2 cup) salted butter 1/2 cup almonds (can be slivered almonds if you wish) 1/4 cup shelled pistachios 1/4 candied ginger 1/2 cup crushed ho...

Christmas Lights Cookies

Image
Christmas Lights Cookies with a small batch of royal icing and mini M&Ms as Christmas Lights. Brace yourselves. I am NOT a cute cookie decorator. However, I pushed through and made these Christmas Lights Cookies to impress my kid. I saw a fuzzy photo of some cupcakes on Pinterest where they turned mini M&Ms sideways to look like Christmas lights on a string. I thought that was so cute and clever, but also: so easy, yet impressive. Big emphasis on the EASY. If I havent mentioned to you before, my Camille is very into M&Ms (she pronounces it yem-a-nems), and I know its because of the bright colors. I bought a bag of mini M&Ms for this, and set to work making a small batch of cut-out sugar cookies and a small batch of royal icing. Ingredients : 3/4 cup flour, plus extra for rolling 1/2 teaspoon baking powder pinch of salt 1/4 cup unsalted butter, softened 1/4 cup sugar 1 egg yolk 1/2 teaspoon vanilla 1/4 teaspoon almond extract For the small-batch royal icing: 1 1/2 cups...

Perfect Peanut Butter Blossoms

Image
Simple, classic and iconic, these peanut butter blossoms are Christmas baking at its best! They are soft & chewy (and stay that way!), coated in crackly, sparkling sugar, and have a chocolate Hersheys Kiss in the center of each cookie. They are one of our all-time favorite Christmas cookies! When it comes to Christmas cookies, these are the first to be made in our house, every single year. Who doesnt love a classic, perfect peanut butter blossom after all? They are soft & chewy with a crackle of sugar that each ball of cookie dough is rolled in just before baking and the Hersheys Kiss provides the ultimate chocolate/peanut butter combination. We are especially crazy for them when the cookies are still warm and the chocolate gets all melted from the heat of the cookie before it sets up again. Im not really sure when or why or how peanut butter blossoms came to be associated with Christmas since there is nothing inherently Christmas-y about them in terms of how they lo...

Reese's Peanut Butter Pudding Cookies

Image
Fill your cookie jar with a batch of these Reeses Peanut Butter Pudding Cookies today! Soft and chewy cookies are always a good idea. I love baking a batch of cookies at the beginning of the week to keep on hand for lunches and snacks. With three hungry kids in the house, they usually only last a few days. They take them to school in their lunch boxes, and I see them munching on them after school with a big glass of milk. Its a good thing these cookies have lots of peanut butter in them. At least the kids are getting some protein along with the sugar, right? Yes, I just called cookies a source of protein. I know how wrong that is. Its how my sweet tooth justifies all the sugary sweets I like to bake. There was an extra bag of peanut butter cups in our pantry this week, so I decided to add them to these Peanut Butter Pudding Cookies. It is such an easy cookie to change up based on what candy you have on hand. Ingredients : 3/4 cup butter, softened 1/2 cup creamy peanut butter 1/2 c...

BUTTERFINGER COOKIE BARS

Image
Soft and chewy Butterfinger Cookie Bars with a light, creamy Butterfinger frosting. Its no secret that I totally have a thing for cookie bars. You skip all the scooping, rolling, and chilling, that often comes with making a batch of cookies, and instead, you press all of the dough into one pan, to make bars instead. The possibilities for cookie bars are endless. These are some of my favorites. These butterfinger cookie bars are HEAVENLY. The dough is kind of like a blondie. (Have you had blondies before? They are a non-chocolate version of a brownie). Thick, soft and chewy. Plus, you add 2 cups of chopped butterfinger bits into the batter, too. And if the cookie bars were not delicious enough plain, you top them with a light, fluffy buttercream frosting that also has chopped butterfinger bits in it. WOW. WOOOOOWWW. These were SO GOOD. Ingredients : 1 cup butter 1 cup light brown sugar 1/2 cup granulated sugar 1/2 teaspoon vanilla extract 2 large eggs 2 1/2 cups all-purpose flour 1 ...

ANISEED BISCOTTI

Image
This is a recipe I saw in a magazine probably about 15 years ago. It was made by a lady who immigrated to America from Italy in the early 1900s. 1 cup butter 1 cup sugar 3 eggs 2 tsp vanilla extract 3 1/2 cups all-purpose flour 1 1/2 tsp baking powder 3/4 cup slivered almonds 2 to 3 tbsp aniseed 1 cup semisweet chocolate chips 2 tbsp shortening In a mixing bowl, cream butter and sugar; add eggs, one at a time, beating well after each. Beat in vanilla. Combine the flour and baking powder; add to the creamed mixture. Stir in the almonds and aniseed.  Divide the dough into three 10-inch x 3-inch rectangles on a greased baking sheet. Bake at 325 degrees for 25-30 minutes or until golden brown. Carefully remove to wire racks to cool completely. Transfer to a cutting board; cut diagonally with a serrated knife into 3/4-inch slices. Place slices cut side down on ungreased baking sheets and bake at 325 degrees for 12-16 minutes or until firm and golden brown, turning once. Remove to wire r...
