Cherry~Apple Jalapeno Chutney

This month in the Food in Jars Food Mastery Challenge, we are featuring jellies and shrubs. I made Cherry Jelly, so I saved the actual cherries and used them in this chutney! Think about Easter and the Lamb and Mint Jelly combo you've always heard the hype about? How about Lamb (or pork loin, ham or chicken) and this Cherry~Apple Jalapeno Chutney?!?  Cherries strained from the jelly. Since the cherries had already cooked down in the jelly, I combined the other ingredients to cook down and soften.  ... then I added the cherries. Take out the cinnamon stick before canning.  It looks like this when it's finished. You can see a bit of jalapeno sitting on top of an apple in the picture. A delightful change-up to an old  coffee cake classic with the addition of thinly sliced fresh Fugi apples. It's so amazing the incredible enhancement of flavors that predominately come through  once this dessert is allowed to sit overnight... Servings: (12) Prep: 15 min. Bake: 45 to 50 mins. Very moist and flavorful homemade bars, with a distinct hint of banana, apple and cinnamon, including the pop here and there of delicious craisins...  Yields (32 bars) Prep: 10 Mins. Bake: 20 Mins. INGREDIENTS: 1/2 cup (1 stick) unsalted butter, room temperature 1-1/2 cups granulated sugar 2 large eggs 1 cup sour cream 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon ground cinnamon 1 teaspoon baking soda 1/2 teaspoon double-acting baking powder (or regular) 1/4 teaspoon fine-grain kosher salt 1/2 cup mashed ripe banana (1 medium banana) 1/2 cup unsweetened applesauce 1/4 cup craisins, roughly chopped --Cream cheese frosting (recipe below) METHOD Preheat oven to 350 degrees. I used  DOLE�  canned pineapple and use part of the juice as a sauce for the salad. If you use apple or a fruit that might brown, quickly toss in the pineapple juice after slicing.

A wonderful recipe that's easy to prepare in which I used frozen rhubarb  I thawed beforehand, so you're able to prepare this outstanding dessert year round! Also, feel free to substitute rhubarb for apples using this same par-cooking method. Or, changing it up using stone fruit or berries  without par-cooking prior to baking... By gently par-cooking the apples beforehand, I've finally solved the problem of apples shrinking as they cook, and therefore this method prevents leaving a gap between crust and apples that have typically collapsed upon cooling... Apple Crisp

I'm going to interrupt Pumpkinpalooza briefly for an apple crisp recipe. This was served at a recent dinner with family and friends. What I find interesting about it is that it includes graham crackers. But most importantly, this apple crisp is delicious comfort food. This recipe comes from my sister Emily. 4-6 large apples 16 graham cracker squares (2 1/2-inch squares) 1 1/2 cup packed brown sugar 1 cup rolled oats 1 cup flour 2 teaspoons cinnamon 1 teaspoon nutmeg 1 cup butter, melted Prepare topping first. Finely chop graham crackers with food processor (I just put them in a Ziploc bag and rolled with a rolling pin). Combine crumbs, sugar, oats, flour, and spices. Add butter and mix well. Peel, core, and slice apples. Prepare enough apples to fill a 9 x 13 Pyrex dish 3/4 full. Spoon topping mixture over apple slices. Pina Colada Smoothie

Pina colada smoothie is a cool and refreshing summer drink with the goodness of coconut milk & soy milk and essential vitamins from banana and pineapple. Ingredients: 50 ml chilled coconut milk 500 ml chilled soy milk 1 ripe banana, peeled and sliced 1 small pineapple 4 tbsp powdered sugar 1 tsp vanilla essence Procedure: Peel the banana and make round slices. Cut the pineapple into chunks. Freeze the banana and pineapple pieces. Combine the coconut milk, soymilk, sugar, vanilla essence, banana and pineapple chunks in a blender and blend until smooth. Pour the pina colada smoothie into fancy serving glasses. Serve chilled with ice cubes / crushed ice and consume immediately.
