Apple Fritters My son Timothy loves doughnuts.   Ask him what kind of cake he wants for his birthday, and it�s...�I want doughnuts!�   With hot fritters from favorite bakeries in mind I wanted to figure out how to do these at home. This recipe was meant to satisfy Timothy's doughnut craving and use some fresh apples at the same time.   Needless to say he loves these!   (As do the rest of the kids.)   My husband asked me to make these only once a year as they are hard to stop at just one! 4 � teaspoons dry yeast � cup warm water 1 � cup milk, scalded then cooled 1 � cups sugar, divided 1 teaspoon salt 2 eggs 1/3 cup shortening 5 cups flour, divided 2 apples, peeled, cored and chopped rather small 1 cup sugar plus 3 teaspoons cinnamon   Canola oil for frying In small bowl mix 1 cup sugar with 3 teaspoons cinnamon and set aside.  In bowl of electric mixer.   Mix warm water and yeast until combined.   Add milk, � cup sugar, salt, e...

Fresh Peach Pie It's peach season!  You can't let summer go by without making this amazing fresh peach pie!  This pie is Grandma Carroll�s famous peach pie, made regularly during peach season. It�s nothing short of incredible, and yes I know it has Jell-O in it�it�s still incredible!   My family goes CRAZY for this pie and I know you all will love it too!  I photographed these peaches at local farm just outside Leesburg, Virginia and brought them home to make this pie. Sugar Cookie Tarts These amazing sugar cookie tarts are one of my very favorite spring and summer desserts! Sugar Cookie Tarts are the best of both worlds...delicious sugar cookies and scrumptious fruit tarts, combined!  These give you the look of beautiful fresh fruit tarts without all the fuss of an actual French pastry.  These tarts look like you've put in a lot of time and effort, but they are really simple and fast.  They are perfect for brunches, open houses and parties and best of all, they are positively mouthwatering!  This recipe will make 27 Sugar Cookie Tarts. For an elegant dinner party dessert, serve a sugar cookie tart with a mini scoop of sorbet on the side. Lemon Ice Cream I'm a sucker for anything lemon...can you tell? Here's a fast and easy Lemon Ice Cream to add to your Mother's Day dessert ideas.  No cooking required!  No ice cream maker required!  Just mix, freeze and repeat.  DELICIOUS!   How easy is that?  Hope you enjoy making this throughout spring and summer!   4 cups milk, cream or half and half 8 tablespoons fresh squeezed lemon juice 2 cups sugar Stir all ingredients together in a freezer proof container.  I like to use a Tupperware.  Freeze or for several hours or over night.  Scoop ice cream out of container in to bowl of electric mixer and whip for a minute or two.  Return ice cream to freezer proof container and freeze until ready to serve.  Garnish with a sprig of mint.

Lemon Sour Cream Pie Hi friends!  With Mother's Day already on the horizon...we will all be menu planning for Sunday.  This week I will be featuring some delicious additions to your menu ideas for your Mother's Day table.  I LOVE this Lemon Sour Cream Pie!  My dear friend Tiffany Walker made this family recipe for a get together one evening...it was so good, I HAD to have the recipe!  You can use a store bought pie crust or make this simple, homemade Perfect Pie Crust.   Have your crust baked and ready to fill with this delicious lemon filling and then refrigerate until ready to serve!  Perfect Pie Crust 2 cups sifted all-purpose flour 1 scant teaspoon salt 2/3 cup butter 4-6 tablespoons ice water 1 egg white, slightly beaten In food processor, mix flour and salt slightly.  Dice cold butter, and toss gently in flour, careful of sharp blades.   With mixer running add ice water, 4 tablespoons is usually sufficient, by the tablespoonfu...

Luscious Lemon Sugar Cookies Hi friends!  COOKIE FRIDAY is here again! Today I am featuring these Luscious Lemon Sugar Cookies.  They are the perfect spring and summertime cookie! They turn out gorgeous every time and have amazing flavor!  I started with a my friend Carrie Spencer's cookie dough for toffee cookies and turned them into these beautiful lemon sugar cookies!  These are a wonderful cookie for luncheons, open houses, parties or just for the weekend!  Have a great one! 1 cup sugar � cup butter, softened 1 egg 1 teaspoon vanilla 1 teaspoon pure lemon extract 1 lemon, juiced and zested 2 cups flour 1 � teaspoon baking powder � teaspoon baking soda Heat oven to 350 degrees.  In bowl of electric mixer combine sugar, butter, egg, vanilla, lemon extract and lemon zest. Fresh Strawberry and Cream Cheese Pie Hi everyone!  Hope you all had a fun Spring Break!  I am SO happy Spring is here and with it a whole new group of wonderful foods to enjoy.  This is our grandma Carroll Thomas' recipe for the most positively scrumptious strawberry pie ever!  It has a hidden layer of cream cheese that is so delicious with the strawberries. Ok, you might say after reading the ingredients... THE "PIZZOOKIE" redefined We were dinning out with friends the other night at a great restaurant, called Ayse, in Frederick Maryland... talking "food," as our friends started telling us about this dessert they make, called a 'PIZZOOKIE.'  According to Brigg and Melanie Bunker, it's the bomb!  "What is a 'PIZZOOKIE'" I asked?  Answer: Press your cookie dough into a pie dish and bake.  Be careful not to over bake, rather under bake it a bit.  Remove from oven and immediately place some big scoops of vanilla ice cream on top, and drizzle with a homemade hot fudge.  Directions:  "Dig in!" Well, I was hooked from the get-go.  Brigg and Melanie serve this as a big dessert to share among family and friends.  I love that idea!  However, we were having some people to dinner that I thought would appreciate their "own" individual desserts.  So I decided to bake the dough in jumbo cookies and make mini 'pizzookies' on in...
