Onepot Chicken And Chickpea Pilaf

If you are wondering where is the new blog she was talking about , well, it turned out to be a lot more difficult to make so I finally decided I will first have to learn a few tech stuff and just gave up.  I work alone so trying to figure out wordpress  finally took its toll and I  just stopped. Maybe someday I will get some nice techie to help me to make a beautiful blog. So for now, lets get back to my usual topic, food! I love one pot recipes and this one is the kind of meal I make when I have left over  roast chicken.  I love to make this  for lunch , and serve with some raita or tzatziki sauce.  And best of all not much to wash later. Cheesy Broccoli And Tuna Rice Cakes

Sometimes I get tired making fried rice with left over rice, so was looking up  different ways to use up left over rice. I try to cook rice so I don't have leftovers but when I do  I always end up with fried rice. In  Hugh Fearnley Whittinstall's  Love your Leftovers   book he had a recipe for rice cakes, but it  didn't go down so well with me ,and it also meant I needed to add  half a can of beans as well. But the idea of rice cakes was still there, then I saw this cheesy brocolli rice recipe on Pinterest and thought of trying that out with the addition of canned tuna. Its a bit fiddly so you need to be extra careful  when rolling in bread crumbs, so needs to chill a bit in the fridge before  rolling in breadcrumbs. Yes, finally back to blogging , but suffering from a severe cold and cough, so my mind is a bit fuzzy. So how was the holidays! Now its back to reality and the school runs and other daily activities!. You know I noticed I say a lot of times," a handful or two "of something , well I never realized this until my hubby one day  brought it to my notice. He was out doing some grocery shopping and I asked him to bring a handful of chillies, He had taken out 9 year old little guy with him. He calls me up and goes , "whose hand am I to use, my hand size,  little guy or  yours (meaning me although my little guy's hands are almost my hand size now)??" So really it did get me thinking, I mean even Jamie Oliver sometimes  says take a couple of handfuls  and I pretty sure his hands are pretty big. Its the last day of school year!.  The kids are going a bit crazy around the house ,  books getting sorted out , reports being given out and  plans for the holidays.  So the last thing you want to do today is cook. I remember seeing this delicious wrap on the Hairy Dieter's Episode on TLC,  although now adays I hate the TLC channel, mostly dating shows and relationship shows and complete nonsense , I mean really a show called Undressed!!!! Wish our cable  tv providers   would get better  cooking channels  and educational channels. Spagetti With Tuna Balls and Fresh Cherry Tomato Sauce

I  saw these tuna balls  recipe in bbcgoodfood.com, where  pasta was served with these tuna balls made with canned tuna. Of course as you know canned tuna is a pantry staple in my home so I just had to give it try. The boys and hubby loved it, I tried a couple of sauces along with it, but this one , made using fresh cherry tomatoes came out the winner and didn't mask the delicate tuna balls taste. I was planning to use regular tomatoes but on my regular visit to my usual grocery shop, Seagull store I saw these gorgeous cherry tomatoes grown locally in the island of Maafahi. You can use regular tomatoes, chopped  roughly and substitute fresh basil in place of the curry leaves for a different taste. Recipe : Spagetti with Tuna Balls and Fresh Cherry Tomato sauce. Yes I know , the photo doesn't really look very good, mainly because it was made for dinner and it was getting dark, so light wasn't so  good. One of those rushed days , where you want to just finish up and sit down for dinner. This is one of those recipes where that left over roast chicken gets ended up.   I wasn't sure about the apple but I had this green apple half one day ( my little fussy one always eats one half ),  so I just threw it into the mixture. You know what! it was  delicious!  I think the combination of chicken and the crunchy celery and green apple gave a nice  combo.  Its okay if you dont have celery , and replace dijon mustard with the one you use for hot dogs, although that mustard has a more sharper taste and is more yellow. Lemony Chicken and Rice Soup

Sorry haven;t been visiting  much, my little one was down with severe vomiting few weeks back and again this weekend he came down with fever.  So have been dealing with a very tired and  annoyed 6 year old, who keeps asking why he is getting sick so often. The first time I made this was when the boys fell sick. They were getting tired of my usual sick day porridge and  I wanted something with more body than a chicken soup.  I saw this  recipe called Avgolemono , a Greek recipe, where rice is cooked in chicken stock along with lemon juice and then thickened with eggs. The eggs give it a creamy texture.  I added  some Moranga leaves for the extra vitamins.  You can use baby spinach if you like. I used the stock cubes , you can make your own batch of fresh stock or use the liquid stock they sell , we don't get them here so I just use stock cube. Cheesy Tuna And Vegetable Pinwheels

This is a great way to use up left over  roshi, or flat bread, something which I am sure will be in excess during Ramadhan. Its an easy to make  recipe , it can be served as a little snack  or even as a way to get kids interested in eating  vegetables, its quite cheap and can be made in advance and left to chill , just cut it up  before serving. Kopee fai is  a local green, the taste is said to be a lot like Kale. First of all , Iftar is the meal we have after breaking the fast. Since the Holy month of Ramadhan is about to start I wanted to do something different. Even though we fast during the month of Ramadhan ,  the Iftar time is always a special time.  That is the time to break the fast at sunset. I am always on the look out for easy meals to make, snacks , desert and a main meal which isnt so heavy but still filling. So I asked the lovely ladies of the  Muslimah Food Bloggers group on facebook  if they would like to contribute some easy kid friendly  and also budget friendly recipes. When the IHCC   group announced  that their next chef was   Hugh Fearnley Whittingstall  I was ecstatic. I love  him and his easy methods of cooking.  So hopping to try some of his recipes and participate as much as I can. Bit pressed for time these days, boys seem to on " I want to give mumma  a hard time these days"  kind of  mood these days, so  by the time I sit down to write anything my mind is blank. My hubby once brought me this book by Chef Hugh , a book called Love your  Leftovers , its about how to use up leftovers and other food items  instead of throwing them into the bin . One such recipe that caught my eye was this marmalade bread pudding. I had this jar of marmalade ,which needed to be finished as it just past its best before date,  and some bread lurking in the freezer. BBQ Chicken Pizza

 My little one has been battling a very high fever for  a few days so have been busy taking care of him. Its horrible when kids fall sick, and little guy is a bit annoyed cos I keep making him wash his hands and preventing him from jumping into his little brother's bed, in order to avoid little guy from getting sick as well. This post has been sitting in my draft for ages , so finally posting it.My hubby once bought this book for me called Sandra Lee Semi Home made : the complete cook book.       He said the food inside looked nice,. Yes, the recipes had everything coming  from the packet but I have to say some of them were quite handy in giving me ideas  to try new recipes.There was a section on Pizza and Pasta,  and this pizza recipe caught my attention. Chicken And Corn Tortilla Lasagne

This recipe was inspired by my Roshi Pie recipe. I had some left over roast chicken ( I always try to make sure I have  left overs when I do roast chicken. Anyway, I saw this recipe of Chicken and Sweet corn Canneloni in one  of the magazines I had and wondered if I can try this  and use tortillas and make a sort of Lasagne style dish.  Ready made tortilla's were easily available during the Ramadhan and I made sure I stocked up with them , so they were at hand when I needed to make some quick sandwich wraps or for days when I am just plain lazy to make Roshi . But I won't use the traditional Maldivian roshi for this recipe, but if you are, I would roll them slightly thicker  than  the usual roshi , which are quite thin and will end up too mushy to enjoy. Yup, its another bread recipe, sorry my photo is a bit grainy took it during the night so the light was awful. To tell you  the truth I wasn't sure how it was going to turn out but surprisingly everyone, even the boys ,enjoyed it. Gave some for my mom to try who loves fried bread, and she was like" you have to teach me how to make this!!!". I found this in one of the blogs . I   added some canned tuna , hey I am Maldivian with a tuna loving husband, so its a must to add the tuna or some form of meat. I followed the recipe I found in Ruchi's Kitchen but decided to go the unhealthy way by frying it. I did try to pan fry but it kept spitting oil, so I deep fried the rest. Hot buttered Plum Pudding ( Rachel Allen Recipe)

Now this is such an easy recipe you can do it with your eyes closed ( well almost). Its a recipe I found in Rachel Allen's Easy meals. Perfect little treat to eat when breaking your fast. The plums ooze some of their juices into the bread and it gives a yummy taste. Little bits of sugar  gives a little texture. Just double the recipe for more servings and use a larger tray or dish. Recipe :  Hot Buttered Plum Pudding recipe, recipe from Rachel Allen's Easy Meals .  Serves 4 or 2 4 slices of  square sandwich bread, crusts removed ( can be slightly old bread) butter or margerine 2 tbsp castor sugar ( grind regular sugar in a spice grinder if you dont have any ) 3  ripe plums Preheat oven to about 180- 200 degree celcius, you want t moderately hot oven, if too hot the toast will burn. Ramadhan starts tomorrow , that is if the moon is sighted tonight, or Tuesday. This Ramadhan I have a small collection of recipes that uses easily available ingredients and also ways to use up left overs as well. Ramadhan is a month of peace and  a time to clean up your soul and  try and do good things ,not lighten your wallet trying to make extravagant things to eat. Try stress free easy to make foods so you are out of the kitchen in not time and spend more time in prayer and with family. No I am not lecturing LOL. Just a little advice. So to start  this wonderful month I an starting with a very simple but delicious pie called an Apple Charlotte.  A great way to use up left over bread. I have been trying to make Apple Charlotte a few times,  as they say third time is the charm.  I did a Jacques Pepin one on a frying pan instead of a skillet pan and ended up a big mess and my hubby commented if he was getting apples on  toast as the bread came out...
