English Toffee Sugar Cookies

My son loves soft sugar cookies. I made him a batch and decided to use the Heath's English Toffee Bits I bought on sale and make another batch. The hubby was my test tester on these. After "Mmmmm!" and "Oooooo!"-ing and 6 cookies later, he declared that they are delicious! 2 1/2 cups self rising flour 1 cup (2 sticks) butter, softened 1 1/4 cup granulated sugar 3 egg yolks 1/2 teaspoon vanilla extract 1/2 to 1 cup Heath's English Toffee Bits 1/4 cup granulated sugar, for rolling Preheat oven to 350 degrees.  In a large bowl, using an electric or stand mixer, cream together the butter, and granulated sugar until combined. Add egg yolks and vanilla extract. Add flour and mix until just combined. Using a spoon fold in the toffee bits. I used 1 cup, but use as little or as much as you like. We like a heavy toffee taste. Soft Sugar Cookies

After all the cooking and baking during the holidays, my son, Elliott says, "You know what I'm in the mood for? A good warm soft sugar cookie!" What do I do? Pull out the mixer, flour, butter, sugar, eggs, vanilla................" Sugar Cookies... he's in the shower! 2 1/2 cups self rising flour 1 cup (2 sticks) butter, softened 1 1/4 cup granulated sugar 3 egg yolks 1/2 teaspoon vanilla extract 1/4 cup granulated sugar, for rolling Preheat oven to 350F degrees. In a large bowl, using an electric or stand mixer, cream together the butter, and granulated sugar until combined. Add egg yolks and vanilla extract. Add flour and mix until just combined. Using a cookie scoop,  scoop dough into balls, roll in sugar and place onto prepared baking sheet. Bake for 12 minutes or until tops of cookies start to crack. This versatile dough can be used to make a variety of Christmas cookies. They're also the BEST Dang Cookies in the World! I wrote about them and shared the method on my other blog . Christmas Sugar Cookies 2 cups flour 3/4 cup sugar 3/4 cup butter- 1 1/2 sticks 2 large egg yolks 1 tsp. vanilla 1 tsp. almond extract Chill dough for several hours or overnight. (see other blog for more details) Here are some ways to use this dough to create a variety of Christmas cookies. Preheat oven to 325-degrees Warm some of the chilled dough by squeezing in your hands. Roll it into a log about 1 inch in diameter. Divide the log and roll some in colored sugar. Some can be rolled in chopped nuts. This is my daughter's favorite Christmas cookie. I make the nut variety just for her. Cut these logs into cookies. Bake for 8 minutes. Do not over-bake. I like NO color on the bottom. For another variety, roll out dough to about 1/4 inch thick.
