Homemade Cake Donuts with Orange Glaze

Image
My sister's family has an annual tradition in their neighborhood called Donuts in the Driveway that started around 2007. They invite neighbors, family, and friends on a designated fall evening to come to their home for freshly cooked doughnuts, a variety of glazes and toppings, apple cider, and and lots of time to visit. The event started out small, but has grown to be a fairly large event. This year we cooked around 900 donuts for about 300 people. Donuts in the Driveway has become a beloved tradition for me even though it isn't even in my neighborhood. To make this event less stressful, my sister buys the donut dough from her local grocery store bakery and has friends and children roll out and cut the dough. This year, however, I decided to mix things up by making homemade cake donuts in addition to the hundreds of raised donuts that we typically make. It's something I've never tried before. But I'm pleased to say that the cake donuts were a big hit! I'll be m...

Quick and Easy Blender Salsa

I've had this recipe on one of my Pinterest boards for a long time, but never got around to trying it until my niece Cate made this for one of our family reunion activities. I was impressed by how good it was. I like the recipe because it is quick, because you can make the salsa year round since it uses canned tomatoes, and because it tastes quite fresh. You can find the original recipe  here . 1- 14 oz can diced tomatoes 1- 10 oz can original Ro-tel 1/2 small onion, roughly chopped 1 clove garlic, peeled and smashed 1/2-1 jalapeno, seeded or not (depends the degree of spiciness you prefer; I actually omitted this) 1 teaspoon honey 1/2 teaspoon salt 1/4 teaspoon ground cumin small to medium size handful of cilantro, washed juice of one lime Put all the ingredients in the base of a food processor or good blender (I used a stick blender) and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and ad...

Peanut Butter Granola

I tried this recipe for peanut butter granola quite awhile ago but never got around to posting it. While I didn't love it as a cereal, I have found that I enjoy this granola very much as a snack. Refrigerator Pickles

Always keep pickles in your fridge.  At least if you like pickles in your sandwiches.  And for sure if you like a cracker-pickle-cheese sort of snack.  And especially if you live in a land where you can't buy pickles at the grocery store.  (Except for the strange flavors of pickled tofu and vegetables and chicken feet, but I'm not after that flavor when I'm having a sandwich.) Sliced onions Garlic cloves Sliced cucumbers Sliced red pepper, if desired Fresh dill, if available Layer a one gallon (or so) container with desired amounts of these ingredients. Brine:  2 cups water             4 cups vinegar             4 cups sugar             4 T. pickling salt             2 T. pickling spice Heat until dissolved, but do not boil.  Pour over cucumbers ...

Homemade Marshmallows

While visiting a friend the other day, I noticed that she had made homemade marshmallows to be used as part of a hot chocolate bar for a wedding reception. She let me taste one, and it was yummy! So much better than what you buy in the store. Ever since that time, I haven't been able to get marshmallows off my mind. So I made them today, and it was easy, though I've always liked marshmallows. I used vanilla the first time, just to familiarize myself with the process. But in the coming days, I'm going to try different flavorings, like mint, chocolate, lemon, cinnamon, etc., plus some complementary colors. And I'm going to experiment with coatings such as chocolate, crushed cookies, crushed candy, etc. I see some potential Christmas gifts in this process. :-) This recipe comes from Ina Garten and the Food Network. 3 packages unflavored gelatin 1 1/2 cups granulated sugar 1 cup light corn syrup 1/4 teaspoon kosher salt 1 tablespoon pure vanilla extract Confectioners' ...

Chocolate and Caramel-Covered Pretzel Rods

Image
The recipe for these addictive Chocolate and Caramel-Covered Pretzel Sticks comes from my friends Liza and Angie. They give them at Christmastime as gifts, and I've been a fortunate recipient. These are really, really good! Normally, I don't even like pretzels, but if they are dipped in caramel and chocolate, so you have the time-tested combination of salty and sweet tastes, then watch out! With Liza's generous permission, I am using photos from her blog , along with some of the text, but I made a few changes based on my own experience in making these pretzel sticks. 1 12-ounce package Rold Gold Pretzel Rods (I think I ended up with about 30+ rods) Dipping caramel (I used about half of a 5-pound package of Peter's Caramel that I purchased at a local cooking store) A'peels dipping chocolates (I used a half bag each of milk chocolate for dipping and white chocolate for drizzling) You can use any microwave-safe bowl to melt your caramel, but it helps to have a containe...

Debbie's Chips and Salsa

My cousin Debbie invited my dad and me up to Salt Lake City yesterday for dinner. In addition to enjoying some wonderful family time, we had a delectable meal of chicken enchiladas, Mexican rice, refried beans, chips and salsa, and coconut cake. Though all the food was delicious, I thought the salsa was particularly good and unusual in that it had a slightly sweet taste to it. So I asked Debbie for the recipe. It doesn't require any fresh ingredients other than fresh cilantro, so it could be made any time of year. 2 cans diced tomatoes 3 tablespoons dried minced onion 1 tablespoon dried minced garlic 2 mounded tablespoons brown sugar 1/2 teaspoon salt 1/8 cup lime juice, fresh or reconstituted Combine ingredients in blender and pulse until the salsa reaches the desired consistency. Allow to sit for at least 10 minutes. Just before serving, add 1 bunch finely chopped fresh cilantro. Serve with Tostitos Hint of Lime Tortilla Chips.
