Sweet Potato Black Bean Burritos

My sister Emily introduced me to this recipe recently, and I think it's a great addition to our regular meal rotation. It's a meatless dish that is hearty, healthy (depending on what extra filling ingredients you use), and delicious. I also like that it is a little out of the ordinary. This recipe has been lightly adapted from the one on this blog . 1/2 cup dry rice (I used basmati rice because it's what I had but the original recipe called for brown rice) 2 medium sweet potatoes, chopped into 1 inch cubes 2 tablespoons olive oil 1 teaspoon chili powder 1/2 teaspoon garlic powder 1/4 teaspoon paprika 1/4 teaspoon smoked paprika (I omitted the regular paprika and just used about a half teaspoon of smoked paprika) 1/4 teaspoon cumin Sea salt and pepper to taste 1 medium onion, diced 1 tablespoon olive oil 2 garlic cloves, minced 2 cans black beans, rinsed and drained 6-8 large flour tortillas 1 medium head of romaine lettuce, thinly sliced 2-3 medium Roma tomatoes...

Mexican Haystacks

Many of you may have tried Hawaiian Haystacks, but here's a Mexican version. I tried this dish for the first time yesterday, and I can tell already that it's going to be a favorite that I will make again and again. This recipe would be great for a family or even a large group. I think it would appeal to both adults and children. And like many recipes on this blog, it's very easy to make. Quick and Easy Blender Salsa

I've had this recipe on one of my Pinterest boards for a long time, but never got around to trying it until my niece Cate made this for one of our family reunion activities. I was impressed by how good it was. I like the recipe because it is quick, because you can make the salsa year round since it uses canned tomatoes, and because it tastes quite fresh. You can find the original recipe  here . 1- 14 oz can diced tomatoes 1- 10 oz can original Ro-tel 1/2 small onion, roughly chopped 1 clove garlic, peeled and smashed 1/2-1 jalapeno, seeded or not (depends the degree of spiciness you prefer; I actually omitted this) 1 teaspoon honey 1/2 teaspoon salt 1/4 teaspoon ground cumin small to medium size handful of cilantro, washed juice of one lime Put all the ingredients in the base of a food processor or good blender (I used a stick blender) and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. I created this recipe after being inspired by several variations that I've had in the past. Here's my 'Alaska Spin' on this delightful appetizer -------- You are able to make it to your exact spiciness level versus my medium version ~ simply substitute milder salsa for a lighter dip or hotter salsa for a dip with more zest... Melt in your mouth cookies that are superbly airy and tender� INGREDIENTS 2 sticks unsalted butter, at room temperature 2-1/2 cups confectioners� sugar, divided 1 teaspoon bourbon-vanilla extract (or regular vanilla extract ) 2 cups all-purpose flour, sifted Pinch of fine-grain sea salt 2 cups pecans, very finely chopped METHOD Preheat oven to 350 degrees. Set aside a couple of baking sheets lined with parchment paper or Silpat liners. Debbie's Chips and Salsa

My cousin Debbie invited my dad and me up to Salt Lake City yesterday for dinner. In addition to enjoying some wonderful family time, we had a delectable meal of chicken enchiladas, Mexican rice, refried beans, chips and salsa, and coconut cake. Though all the food was delicious, I thought the salsa was particularly good and unusual in that it had a slightly sweet taste to it. So I asked Debbie for the recipe. It doesn't require any fresh ingredients other than fresh cilantro, so it could be made any time of year. 2 cans diced tomatoes 3 tablespoons dried minced onion 1 tablespoon dried minced garlic 2 mounded tablespoons brown sugar 1/2 teaspoon salt 1/8 cup lime juice, fresh or reconstituted Combine ingredients in blender and pulse until the salsa reaches the desired consistency. Allow to sit for at least 10 minutes. Just before serving, add 1 bunch finely chopped fresh cilantro. Serve with Tostitos Hint of Lime Tortilla Chips.

White Chicken Enchiladas

Pinterest is turning out to be a great source for new recipes, and that's where I found this one. Yummy White Chicken Enchiladas! And I used a store-bought rotisserie chicken to make this even easier. The recipe comes from Joyful Mama's Kitchen . 10 soft taco shells 2 cups cooked, shredded chicken 2 cups shredded Monterrey Jack cheese 3 tablespoons butter 3 tablespoons flour 2 cups chicken broth 1 cup sour cream 1 (4 oz) can diced green chillies 1. Preheat oven to 350 degrees. Grease a 9 x 13 pan. 2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan. 3. In a saucepan, melt butter, stir in flour and cook for 1 minute. Add broth and whisk until smooth. Cook over medium heat until thick and bubbly. 4. Stir in sour cream and green chilies. Do not bring to boil, you don't want curdled sour cream. 5. Pour over enchiladas and top with remaining cheese. 6. Bake 22 min and then under high broil for 3 min to brown the cheese.

Green Enchiladas

This enchilada recipe comes from my friend Lyndsee. She brought this dish to our office Christmas party this year, to rave reviews, I might add. 1 4-ounce can green chilies 2 packages cream cheese 1.5 pounds chicken, cooked and diced (I used at least 2 pounds or more) 2 small cans green enchilada sauce 6 to 8 flour tortillas (however many you need to use up the filling) Mild cheddar cheese, grated Cook the cream cheese, chicken, and green chilies over medium-low heat until the cream cheese is melted and the mixture is well combined. Spread about 1/3 of the sauce evenly in the bottom of an 9 x 13-inch baking dish. Roll up however much filling you want inside each tortilla and place in pan. Pour the rest of the sauce over the enchiladas. Top with cheese. Bake at 350 degrees until the cheese is melted. Then turn the oven on to broil for a few minutes to get the cheese all bubbly.
