Chicken Musamma Roast

 Eid is almost here and so I have a special roast chicken recipe to enjoy on Eid day for lunch. I saw this recipe on bbcgoodfood.com, where the chicken is roasted  using the Thai massamam curry paste . We also have a Mussamma although the most popular one is tuna Musamma , chicken mussama is also  there. Its a sweet and spicy curry and I wondered if I can use the same concept of the roast but using the Maldivian mussama version.  The chicken cooked well and the tastes were delicious and its a whole new way to serve mussama, and I in the last minute I forgot to add the Indian Almonds( Kanamadu ). So I just sprinkled it as a garnish, but I think it would be even tastier if I had added it while making the gravy. Its a nice little change to the usual chicken curry, still keeping the flavors but served differently. Spatchcocked Roast Chicken With Couscous

I discovered Nigel Slater's cooking from the IHCC group when they started doing recipes by the acclaimed chef. Then they showed some of his  cooking shows on TLC as well. And I love his method of cooking, fuss free, using easily available ingredients.  So when this week's theme was announced at the IHCC, cook any recipe by Nigel Slater I decided to do his Roast chicken dish . I am partial to roast chicken recipes and love making extras  so I have enough left overs.  This recipe is also a one pot one as the coucous gets cooked in the pan itself soaking up all the juices left in the pan after the chicken is roasted.  Couscous makes a great weekday dinner meal as you just have to add hot water and its ready within less than 10 minutes. Lemon and Garlic Roast Chicken ( a Donna Hay Recipe)

Well technically I would say mine is Lime and Garlic roast chicken as I used limes instead of lemons. I could have used Lemons but its not available every where in Maldives and since its Ramadhan ( the Muslim fasting month) , when everyone is eager to try something new to eat, I decided to use limes instead. Its such an easy recipe.  I roasted two as both boys want the drumstick and one is never enough so I made two, which also mean some leftover meat for later use, yey!!. Recipe : Lime and garlic roast chicken, recipe adapted from Donna Hay recipe Lemon Garlic Roast chicken 2 (1200g) chicken, , skin on, fat trimmed, washed cleaned and dried with kitchen towel. 1 whole head of garlic, left whole with the skin 1 lime cut into wedges 1 tsp red chilli flakes ( I need some chilli here) 1 tsp ground black pepper 1 tsp tried thyme salt Olive oil Preheat oven to about 220 degree celcius .
