Southern Style Tomato Pie

I asked the Hubby to go pick the ripest, prettiest tomatoes he could find from the garden. I told him that I wanted to cook a tomato pie. He said, "A what?" I laughed and told him he'd like it! Most people don't know much about tomato pie unless their Grandmama made it. Quite frankly, I don't remember Mama or my Grandmama making a tomato pie. The first time I tried it was in Santee, SC at  Lone Star Barbecue & Mercantile . That first taste was enough to inspire me to make them from then on! I finished the pie and offered a slice to him. He is now hooked!  I was short on tomatoes because I had already processed a lot for sauce the day before, so this pie is a little pitiful. The next one will be more substantial! Bacon Cheddar Biscuits

I have made the Cheddar Bay Biscuits, and I've made Bacon Puffs! I've tried a lot of combinations including biscuits with bacon, but I've never been satisfied with the bacon flavor in the biscuit itself. Well, last night the light bulb went off! Take out the oil and substitute the grease/oil rendered from cooking the bacon! No one can yell at me about this one, because you are only subbing one oil for another! Nothing wrong with bacon "oil"! :-) 2 cups All-purpose Flour 1 teaspoon Baking Powder 3/4 teaspoons Salt 1/4 cup Crisco Shortening 2/3 cup Milk 1/4 cup Bacon Grease* 1 Egg 1 pound Bacon, fried and crumbled** 1/2 cup Onion, diced small 1 cup Sharp Cheddar Cheese, shredded Sift together flour, baking powder, and salt. Using a fork or your hands, cut in shortening until all combined. Add the bacon, onions, and cheddar cheese to the flour mixture and stir to coat with flour. Breakfast Bowl... Cheese Grits with Sausage and a Fried Egg!

Very easy breakfast for supper!  1 cup stone-ground grits 4 cups beef stock 1 cup sharp cheddar cheese 6 sausage patties, cooked and chopped 1 egg, fried over easy, per bowl Make the grits in a large heavy saucepan. Bringing 4 cups of beef stock to a boil. Whisk in the grits a 1/4 cup at a time. When you have added all the grits, reduce the heat to a very low simmer and cook over low heat for 35 to 40 minutes, stirring occasionally at first and more frequently toward the end. When done, taste and add salt and pepper to taste. Stir in cheese and sausage. Place each portion in a bowl and top with a soft fried egg.

Mama's Macaroni and Cheese

There were certain dishes that my Mama made especially for her Daddy for Sunday Dinners. The most requested was her Chicken and Dumplin's, but the runner up was her wonderful Ole Fashioned Macaroni and Cheese! This one will be on my Thanksgiving table this year for sure! 1 cup Macaroni, uncooked 2 Eggs, beaten 2 cups, Milk � pound, Sharp Cheddar Cheese Salt & Pepper 2 T Butter Cook macaroni, drain. Combine eggs and milk in a large bowl. Stir in macaroni, cheese and seasonings. Spoon mixture into a casserole dish that has been sprayed with oil. Dot with butter and bake at 325 degrees for 40 to 60 minutes or until set. You can try the knife method. Stick a knife in the center. It should come out clean. Mainly just check that it's not watery. (I use the giggle method. I shake the pan gently, and if it barely moves in the center, it's done... If it's set hard and doesn't move, it's over-done and hard.
