Sausage and Spinach Pasta Bake

Pasta, Green Beans, BLT salad and Garlic bread! 1 (12 ounce) package pasta* 1 pound ground sausage, cooked and drained 1 (10 ounce) package frozen chopped spinach, thawed 2 eggs 1/4 cup olive oil 5 cups tomato and roasted garlic pasta sauce 2 cups shredded Cheddar cheese 2 cups shredded Mozzarella cheese Preheat oven to 350 degrees F. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and sausage. Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. Country Sausage Biscuit and Gravy Breakfast Casserole

I found a recipe for a biscuit and gravy breakfast casserole. It looked so good, but when I got into the recipe it was obvious that the recipe did NOT match the picture. That is the problem with some food sites. They take a picture from someone and just find a recipe with the same ingredients! That is why so many people get frustrated when their dishes look nothing like the pictures online! As I have said, "My food might not be pretty, but it usually tastes pretty good!" LOL    2 cups Sausage Gravy, recipe below 1 lb. pork breakfast sausage 1 cup Cheddar Cheese 6 eggs � cup milk Salt and Pepper 1 can Pillsbury Grands Biscuits Preheat oven to 350 degrees. Spray  a 13X9 pan with non stick cooking spray. Cut the biscuits into 1" pieces and line bottom of pan. Sausage and Cheese Mini Quiche

1 lb Mild Sausage 1/3 cup Onion, chopped 1 Garlic Clove, minced 1/4 cup Italian Bread Crumbs 5 Eggs 3 tsp Dijon Mustard 1/2 tsp Sweet Basil, dried 2 cups Mozzarella Cheese � cup Parmesan Cheese, grated Salt & Black Pepper, to taste Preheat the oven to 350 degrees.  Cook sausage, onion and garlic in a heavy skillet over medium heat until meat is brown; drain. In a large bowl, combine bread crumbs, meat mixture, egg, 3 tsp mustard, parsley, cheeses, salt and pepper. Spoon meat mixture into mini muffin pans. Baked for about 15 to 20 minutes or until golden brown and cooked through. Note: Serve with your favorite hot mustard or horseradish�

Breakfast Bowl... Cheese Grits with Sausage and a Fried Egg!

Very easy breakfast for supper!  1 cup stone-ground grits 4 cups beef stock 1 cup sharp cheddar cheese 6 sausage patties, cooked and chopped 1 egg, fried over easy, per bowl Make the grits in a large heavy saucepan. Bringing 4 cups of beef stock to a boil. Whisk in the grits a 1/4 cup at a time. When you have added all the grits, reduce the heat to a very low simmer and cook over low heat for 35 to 40 minutes, stirring occasionally at first and more frequently toward the end. When done, taste and add salt and pepper to taste. Stir in cheese and sausage. Place each portion in a bowl and top with a soft fried egg.

A simple but addicting breakfast/brunch casserole with sausage, mild green chilies, cheese and tater tots, oh my! INGREDIENTS: 1 lb. ground country style sausage, browned 1 (4 oz. can) mild diced green chilies, drained (or medium-heat for spicier flavor) 2 cups medium shredded cheddar cheese 2 cups milk 3 large eggs, beaten 1-1/2 lbs. frozen crispy Ore Ida tater tots (='s 3/4's of a 2-lb. bag) METHOD Preheat oven to 350 degrees. Place sausage in a large skillet, and cook over medium-high heat until evenly brown using a spatula to bread into small bits. Drain, and spread evenly in bottom of a glass 9x13" baking dish. Just tried this hearty soup recipe from one of my favorite online sources-- Mel's Kitchen Cafe --as my first new recipe of the new year, and this is a winner! I love the combo of sausage, veggies, beans, and pasta. Lots of flavor plus a sprinkling of Parmesan cheese to finish it off.
