UPSIDE DOWN PIZZA PIE

This recipe is from an old church cookbook. 1 lb. ground beef 1/2 cup chopped celery 1/2 cup chopped onion 1/4 cup chopped green bell pepper 1 tbsp shortening 1/2 tsp salt 1 can (10 3/4-oz) tomato soup 1 1/2 cup Bisquick mix 1/2 cup milk 3 slices of processed cheese, cut diagonally Preheat oven to 450 degrees. In a heavy oven-proof skillet, brown beef with the celery, onion, and bell pepper in the shortening. Remove from heat and drain off all excess fat. Add the tomato soup and salt; mix together well. Spread the mixture evenly in the pan. Mix the Bisquick mix and the milk together. Roll the dough into a circle slightly smaller than the skillet. Place dough over the top of the meat mixture. Bake at 450 degrees for 15 minutes or until the biscuit mix crust is golden browned. Remove from oven and turn upside down on serving platter. Top with the cheese slices and allow cheese to melt. Cut into wedges and serve.

Tandoori Chicken Pizza

I remember the first time I saw A cook's tour and my initial reaction was "what kind of a cooking show is this??" Then I saw No Reservations and I was hooked to it. Its raw, and honest no sugar coating approach. One of my favorite episode was when Anthony Bourdain visited Saudhi Arabia. His respect to the cultures and the belief. How many of you foodies watched it. I also loved watching The Taste. Anyway, back to my recipe for the day, Tandoori Chicken Pizza .  I love tandoori chicken and so do the boys. I had some left over tandoori chicken and wanted to make my own tandoori chicken pizza. I didn't want to use tomato paste or the regular tomato sauce. So decided I would make the masala sauce that's used to make chicken tikka  masala recipe. It turned out quite well. I  still cant get my pizza base to taste like the one I had in Salamiya restaurant in Kandy, Sri Lanka. Pizza Toast

Mama called it Cheese Toast, but my son calls it Pizza Toast. It is such a simple, easy and tasty treat. Whether it'd for an after school snack or add meat for a meal, it's sure to please kids of any age! I used my own homemade Pizza Sauce, but you can use your favorite brand. I also used a Colby Jack Cheese blend, but again use your favorite. The possibilities are endless! 1 French Bread Loaf, cut in thick slices Pizza Sauce  (or spaghetti sauce) 2 cups Colby Jack Cheese blend (optional) pepperoni, onion, peppers, olives Preheat oven to 400 degrees. Spread slices of bread with a tablespoon or so of sauce. Top with the toppings of your choice, or simply top with cheese. Place them on a cookie sheet and bake for about 10 minutes or until golden brown. If serving to children, be sure to let them sit until the cheese has cooled enough to be safe. 

Pumpkin and Spinach Calzone

 Calzones are just folded up pizzas , or portable pizzas. The topping goes on one side and then its folded in half and sealed , ufresh from the oven the cheese just oozes out , that is if you have used mozzarella. I made this one while trying out a recipe for pumpkin. As a child I used to hate pumpkin  but now adays I like it better than I did when growing up. Iftar With Friends part 1

First of all , Iftar is the meal we have after breaking the fast. Since the Holy month of Ramadhan is about to start I wanted to do something different. Even though we fast during the month of Ramadhan ,  the Iftar time is always a special time.  That is the time to break the fast at sunset. I am always on the look out for easy meals to make, snacks , desert and a main meal which isnt so heavy but still filling. So I asked the lovely ladies of the  Muslimah Food Bloggers group on facebook  if they would like to contribute some easy kid friendly  and also budget friendly recipes. BBQ Chicken Pizza

 My little one has been battling a very high fever for  a few days so have been busy taking care of him. Its horrible when kids fall sick, and little guy is a bit annoyed cos I keep making him wash his hands and preventing him from jumping into his little brother's bed, in order to avoid little guy from getting sick as well. This post has been sitting in my draft for ages , so finally posting it.My hubby once bought this book for me called Sandra Lee Semi Home made : the complete cook book.       He said the food inside looked nice,. Yes, the recipes had everything coming  from the packet but I have to say some of them were quite handy in giving me ideas  to try new recipes.There was a section on Pizza and Pasta,  and this pizza recipe caught my attention. Deep Dish Pizza

I am not a big fan of deep dish Pizzas I am   more of a thin crust girl. But  I wanted to give one a try and see how my boys liked them.  I checked out this recipe from an episode of American Test Kitchen, where the chef  makes the dough more richer using butter . I have to say the crust was quite crumbly and very rich in taste but I enjoyed it.  For the filling ,... well I went a little lazy and used a jar of good quality pasta sauce , and  Al khaleej meatballs ( I like their meat balls, love adding both their beef and chicken meatballs). But you can still used home made tomato sauce and use home made meatballs. SANDRA'S EASY PIZZA SAUCE

My favorite pizza sauce that I also serve warm alongside for dipping, as you never have enough sauce, especially when only the edge of the pizza crust remains to be eaten... Yields: (1-1/2 cups) -- Double recipe for 2 pizzas Prep: 5 Mins. Cook: 30 Mins. INGREDIENTS 2 teaspoons olive oil 1 teaspoon granulated garlic 1 tablespoon dried minced onion 1 (15-oz can) stewed tomatoes, mashed to small bits (do not drain) Salt and pepper, to taste Pinch sugar 1/4 teaspoon dried oregano (1/8 teaspoon if using ground) 1/2 teaspoon dried basil -- 1/2 teaspoon red wine vinegar METHOD Add olive oil into a hot pan over medium-high heat. Add garlic and onion, stir to combine. Add the stewed tomatoes with its juices, stirring to deglaze the bottom of the pan. Cook until liquid reduces by half, about 5 minutes; stir occasionally. SANDRA'S PIZZA DOUGH HOMEMADE (Double Batch)

The perfect pizza dough that never fails me. Be sure to check the expiration dates on both your yeast and baking powder prior to using... Yield: (2 pizza crusts) Prep: 10 Mins. Rise: 1 Hr. INGREDIENTS 2-1/4 teaspoons (or 1 packet) active dry yeast--not rapid or instant 1-1/2 cup warm water 1 teaspoon sugar 4 cups all-purpose flour 1 tablespoon double-acting (or regular) baking powder --(Makes for a crispier crust) 2 teaspoons kosher salt 4 tablespoons olive oil, plus more to lightly oil bowl METHOD Sprinkle active dry yeast over 1-1/2 cups of warm water, add sugar, stir and let bloom for 5 minutes. Meanwhile, in a stand mixer with the paddle attachment, combine flour, baking powder and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Pepperoni Pizza Burger Bombs!

The Kids love pizza and burgers, So I combined the two for these Pepperoni Pizza Burger Bombs! As you can tell by the picture at the bottom of the post... It got them all here! :-)  This was the test run. It tasted good, but not very pretty! This was the second run. Very good and looks good too! Pizza Sauce: 1 tablespoon olive oil 1 clove garlic, grated 1 small onion, chopped 1 tablespoon tomato paste 1 teaspoon Italian seasoning One 14-ounce can crushed tomatoes Burger Bombs : 1 pound ground beef Kosher salt and black pepper Pizza dough , room temperature 8 ounces mozzarella cheese, sliced 4 ounces thin pepperoni (about 32 slices) 1/4 cup olive oil, for brushing For the sauce: To a small saucepan over low heat add the oil, garlic and onion and cook until fragrant. Add the tomato paste and seasoning, and mash with the back of a wooden spoon. Stir in the crushed tomatoes and bring to a simmer. Simmer for 15 minutes, then remove from the heat. SANDRA'S 15-MINUTE INDIVIDUAL ROMA PIZZA

When faced with preparing lunch for myself today, this is the end result; a flavorful mini roma pizza that turned out fabulously well.... Serving: (1) Prep: 5 Mins. Bake: 10 Mins. INGREDIENTS: Roma Pizza: 1 (7� round) store-bought Mama Mary�s Gourmet Pizza Crust 2 teaspoons, Extra Virgin Olive Oil (EEVO), divided 2 tablespoons, crumbled goat cheese, divided 2 Heaping teaspoons, Jarred, basil pesto sauce 4 Jarred, kalamata olives, quartered lengthwise 2 Jarred, halve sliced sun-dried tomatoes in olive oil, roughly chopped 4 Jarred, marinated quartered artichokes in olive oil, quartered Greens (to wilt over hot pizza): Small handful, baby spinach and arugula mix Slight drizzle with: EEVO, Balsamic Vinegar, Agave ~ Including a bit of Sea Salt and Freshly Ground Pepper ~ Toss and set aside. METHOD: Preheat oven to 400 degrees. Place pizza crust atop baking sheet.  Brush surface, including edges, very lightly with EEVO. Low Carb Pizza Crust

Ingredients 1 medium head cauliflower, cut into florets 1 egg 1/2 cup mozzarella, shredded 1 teaspoon oregano or Italian seasoning blend salt and pepper to taste Directions Rice the cauliflower in a food processor, place it in a microwave safe dish and microwave for 8 minutes or until cooked. Place the cauliflower in a tea towel and sqeeze as much moisture out as you can. Mix the cauliflower, egg, mozzarella, oregano, salt and pepper, press the mixture onto a baking mat or parchment paper lined baking sheet and bake in a preheated 450F oven until lightly golden brown, about 15-20 minutes. Add your favorite pizza topping on this crust. You should be able to pick it up with your hands.  Try half size unless you have a lot of people are going low carb with you.

Pizza Crust

   THIN AND CRISPY PIZZA CRUST 8 ounces mozzarella cheese, shredded 4 ounces cheddar cheese, shredded 3 eggs 1 teaspoon garlic powder 1 teaspoon basil, optional Toppings of your choice * Mix the cheeses, eggs, garlic powder and basil well. Line a 16-inch pizza pan with parchment paper or nonstick foil. Evenly spread the cheese mixture in the pan, almost to the edge, making it as thin as possible. Bake at 450� 15-20 minutes until golden brown. I suggest checking it after about 10 minutes. If it's getting very dark on the edges and top, turn the oven down to 400� and continue baking until brown all over and no longer pale on the bottom. Pat off any excess grease then add your toppings. Keeping the oven rack in the center position, put the pizza under the broiler until the toppings are hot and any cheese you added is melted and bubbly, about 4-5 minutes. Normal Pizza doesn't have many very many carbs except for what is in the crust.  I modified the crust and it worked out pretty well. Low Carb Pizza Crust 1/2 Tablespoon yeast 1/2 tsp Salt 1/2 tsp Splenda 2 eggs 2  Cups of Almond Flour 1 Tablespoon Oil This 'dough' will not act like other dough because it doesn't have gluten.  I buttered a pie pan, poured the 'dough' into the bottom and baked it for about 15 minutes at 400 degrees.  Then I added the tomato sauce, cheese, pepperoni, ham and a sprinkling of Parmesan cheese and baked it again for 15 minutes.  The crust sticks together nicely when it is baked because of the eggs.

Barbecue Chicken Pizza

2 cups shredded cooked chicken breast 1/3 cup barbecue sauce 1 (10 oz.) pre-baked Italian bread shell (12-inch) 3 Italian plum tomatoes, sliced 1/4 cup diced purple onion 1 cup shredded Monterrey Jack cheese Cilantro (if desired) Preheat oven to 450 degrees. In small bowl, combine chicken and barbecue sauce; mix well. Place bread shell on ungreased cookie sheet. Spread chicken mixture over shell. Arrange tomatoes and onions over chicken. Sprinkle with cheese. Bake at 450 degrees. for 10 minutes, or until cheese is melted and bread shell is browned. Yield: 6 servings.

Classic Cheese Pizza and my first set of Awards

The great thing about pizzas are that you can add whatever you want to them and they still taste good (in the course, you invent unique pizza of your own). All you have to do is to prepare the dough correctly. My son likes to have pizza with lots of cheese as toppings. So here is the recipe for classic cheese pizza . Pizza Dough warm water (110-120 degrees F): 1 1/4 cups active dry yeast: 1 packet sugar: 1 ? tbsp flour (sifted) 3 ? cups salt: ? tsp olive oil / butter flavoured oil: 2 tbsp Toppings: Tomato sauce: 4-6 tbsp Mozzarella cheese (shredded / grated): 6 tbsp Parmesan cheese (grated): 1 tbsp Olive oil: 2 tbsp Dried Oregano seasoning (crumbled) (to taste) Freshly crushed black pepper (to taste) Red chili flakes (to taste) Procedure: To make the dough: Dissolve yeast and sugar in water.
