Dutch Oven Crusty Bread

Image
Dutch Oven Crusty Bread Our visit home to Salt Lake City over the 4th of July this summer was so much fun!   I always come home with some new favorite recipes and this Dutch Oven Crusty Bread is one of them!  My cute nephew Sam Owens, just started college, and I was so impressed to find out he has become a real bread maker!  He treated us to this family recipe of fresh bread every day!  Every night he would quickly stir together this bread dough and let it sit overnight on the counter.  In the morning, he would bake his bread and we would quickly eat it all up!  Sam's bread is so fantastic and so simple, I had to have him give me a demonstration and share his recipe with me!  Sam demonstrated just how quick you can throw this bread together, no kneading required!  It's just a quick stir and then let the dough stand and rise at room temperature for 12-24 hours before baking in a hot dutch oven.  How easy is that?!  How delicious?  Ma...

Pecan Sticky Buns

Image
Pecan Sticky Buns I am continually mesmerized by the sticky buns I find in the Williams Sonoma catalog.  I have never ordered any from them but I love the idea of having a freezer full of yummy gourmet breads all ready to defrost and enjoy on lazy weekend mornings. (Like I have any of those!)  Nonetheless, my counter top and freezer could still be full of fresh baked breads ready for hungry kids and a husband to come home to. You'll need a large mixer to this recipe, at least a 6 quart electric mixer will suffice.  Course you can make the dough by hand, if you knead it for 10 minutes, instead of mixing it in the mixer for 10 minutes.  If that sounds like too  much work, look at it this way...at least you'll get your exercise!  This recipe will make approximately 72 sticky buns for you to enjoy! Sticky Bun Dough 3 cups warm water 4 tablespoons yeast cup oil cup sugar 1 cup powdered milk 1 cups potato flakes 1 tablespoon salt...

Honey White Oat Bread

Image
Honey White Oat Bread       M y husband and I went to hear the Nora Struthers Band play the other night at this wonderful art deco era theater in Frederick Maryland, called The Weindberg Center. It's such a small theater that you really get to be up close to the performers.  It's such a fun place to attend concerts!  Since it's such a small theater and audience, the performing artists usually come out to the foyer after the performances to mingle with the crowd.  It was really fun to meet Nora, (ya, we're pretty much on a first name basis now.)  It's such fun change of ambiance from the Kennedy Center In downtown D.C!  The Nora Struthers Band was fantastic! Nora has an amazing voice and they have some talented banjo, mandolin, fiddle and drummers in the band.  If you ever get the chance to hear them in person I would highly recommend it!  Check out some of their great tunes here... https://myspace.com/norajanestruthers/music/songs . ...

Spring Strawberry Rhubarb Jam

Image
Spring Strawberry Rhubarb Jam In our backyard at the home where I grew up lies a rhubarb plant underneath a peach tree.   Every spring it would burst forth with pink stalks of red rhubarb and wait to be harvested.  Rhubarb Crisp...Strawberry Rhubarb Pie...Rhubarb Jam... were annual delicious rhubarb creations.  This Strawberry Rhubarb Jam is no exception.  Super easy and fast too.  I love homemade jam, don't you? 3 cups hulled and sliced strawberries, divided 3 cups rhubarb, thinly sliced 3 1/2 teaspoons fresh lemon juice 1 teaspoon vanilla 1 1/2 cups sugar In a medium glass bowl combine half of the strawberries, rhubarb, lemon juice, vanilla and sugar. Stir and let stand at room temperature for 30-60 minutes.  Pour half of the fruit into heavy medium sauce pan and bring mixture to a boil.  Reduce heat to LOW and simmer for 15 minutes, stirring frequently. Add remaining strawberries to the jam.  Simmer another 3 minutes.  Remove from heat and...

Chocolate Chip Banana Bread Muffins

Image
Mini Chocolate Chip Banana Bread Muffins I had a little mini banana bread muffin at a friend's house recently.  I loved how she had added mini chocolate chips to her batter. The recipe she used wasn't her favorite, as she had lost her favorite one.  But I loved the idea and really hadn't made banana muffins in a long time.  So, I got out my old favorite recipe for banana muffins that a friend had given me years ago while we were living in Finland, added some mini chocolate chips and a pinch of oatmeal on top. And voila!  I love these even more with the chocolate chips!  The mini muffins are a perfect kid size muffin too.  These make a yummy after school snack...well more like treat!         1 cup sugar 1/2 cup softened butter 3 over ripe bananas 2 eggs 1 cup flour 1/4 teaspoon salt 1 teaspoon baking soda 1/2 cup mini chocolate chips Preheat oven to 300 degrees.  Line muffin tin with paper liners.  In electric mixer, cream sugar...

Sweet Potato and Corn Chowder with Cornbread Muffins

Image
Sweet Potato and Corn Chowder with Cornbread Muffins Soup season is not over yet!  I've been craving this soup for at least a week now...so it's about time I made it!  I was inspired by a soup we ate at a great restaurant in Park City, Utah.  I love using fresh corn in this recipe in the summertime, but you can use frozen corn all year long, just as easily.  I added the sweet potatoes on a whim and ended up loving the combination of colors and flavors!  This recipe is so easy, fresh and delicious!  For variation, saut some lump crab meat in butter and stir it in just before serving.  Serves six. cup olive oil 1 onion, chopped 1 large sweet potato, peeled and chopped into small 1/2 inch cubes 2 red, orange or green bell peppers, finely chopped 5 cloves garlic, minced handful fresh sage, rosemary, thyme and basil chopped or substitute some dried 1 teaspoons fresh ground pepper teaspoon red pepper flakes 8 ears fresh corn, corn cut off cob or 1 lb....

Soft Honey Wheat Bread

Image
Soft Honey Wheat Bread Any one else love Great Harvest Bread?  My kids love it when I take them there to get a big, thick slice of hot fresh bread, while picking out some loaves to take home. Slathered with butter and honey, whole wheat bread tastes so good, it's almost a dessert!  My friend Melanie Bunker shared this recipe of her grandmother's for this delicious and soft whole wheat bread.  It reminds me a lot of Great Harvest's Whole Wheat Bread.  This recipe will make 5 loaves, so you'll have enough to eat hot out of the oven and still have a loaf for dinner, and a loaf or two to freeze and a loaf to give.  We LOVE this bread slathered with butter and honey... it's oh so good!    3 tablespoons yeast 1/2 cup honey  5 cups warm water  (test: water needs to be warm enough for a comfortable bath) 1/2 cup butter 1 cup brown sugar 1/3 cup olive oil 3 cups white flour 4 teaspoons salt 8-10 cups whole wheat flour Generously grease 5 bread pans. Sweet Potato Biscuits with Molasses Butter

Image
Sweet Potato Biscuits with Molasses Butter Upon entering a favorite Southern restaurant in historic Buckeystown, Maryland, we were greeted with a plate hot sweet potato biscuits served with molasses butter.  We quickly devoured them while musing over the menu.  What a nice surprise to try something the chef had made for his guests just to be nice!   I was so intrigued with the beautiful color and flavors of the biscuits, I recreated them at home, or as my husband likes to say reverse engineered them at home for a get together with friends.  These are a great addition to your holiday table.   2 cups flour 1 tablespoon baking powder 1 teaspoon salt 2 tablespoons brown sugar cup cold butter, cut into bits 2 cups mashed sweet potatoes, you could use canned if needed 2 tablespoons cream Preheat oven to 400 degrees. Soft White Dinner Rolls

Image
Soft White Dinner Rolls Another family recipe from Grandma Carroll are these incredible rolls.   When one teenage grandson comes home for the holidays he tries to break his roll eating record with these dinner rolls.   Just in case you were wondering, the record is 18!    2 tablespoons yeast 1/3 cup warm water 1 cup butter 3 cups milk cup sugar 1 tablespoon salt 3 eggs 9 cups white flour G rease two 11x17 inch rimmed baking sheets and set aside.   In small bowl combine yeast and water and set aside.   In small pot heat butter, milk, sugar and salt until warm, not hot.   Pour milk mixture into bowl of electric mixer fitted with dough hook.   Make sure the milk mixture is no hotter to the touch than a comfortable bath would be. If it is too hot it will kill the yeast.    Add yeast and eggs to warm milk mixture.   Mix just to combine.   Add 1 cup of the flour at a time and mix just to combine until all flour ...

Soft Breadsticks

Image
Soft Breadsticks              Grandma Carroll makes these breadsticks to go alongside her Best Chili.  They are so soft and delicious, my kids love them!   This recipe is so easy and quick you can have homemade breadsticks for dinner any time.  Simply mix, roll out and let rise 30 minutes and bake!   For a heartier flavor I like to  add some whole wheat flour in place of some of the white.  The large recipe makes two 11x17 inch rimmed baking sheets full, perfect for serving a large group of family or friends.   The small recipe makes 6-12 breadsticks on a rimmed baking sheet, which is often the perfect amount on a week night!                                          Small Batch (fi...

Baguettes

Image
Baguettes When I found my grandmas baguette pans and recipe several years ago I decided Id make a go at making them.    After all who doesnt love a hot baguette right out of the oven?    My husband has many fond memories of buying fresh, hot baguettes for lunch in France and devouring it while riding home on his bike.    Baguettes are made with basic ingredients and go alongside just about everything. You can freeze what you dont eat and reheat for another meal.   You can bake this bread on a baking sheet (lined with parchment paper) or use a round casserole dish (with inch of corn meal on bottom) or in baguette pans found at any baking store.    2 tablespoons sugar 1 tablespoon salt 2 teaspoon dry yeast or 1 package 2 cups warm water 6 7 cups flour In large bowl stir sugar, salt, yeast and water until dissolved.   Stir in 5 cups flour, until more or less mixed. Add one more cup of flour and mix. Dough will be a sticky, gooey ...
