Tuna and Leek Puffs

First , sorry for being under the radar for a while. Have been working on a project of mine, which I am praying succeeds by next year insha allah and I will be able to share it with you all. ?? So My mum  discovered puff pastry, and life has made it so much easier for her. So now and then she would buy puff pastry puffs and make some pastries for her dinner. Her dinner usually circulates around the house as she has a habit of making a lot and sending them over to my sisters and I.  Anyway she makes these tuna puffs  with sauteed onions and scotch bonnet peppers . My version had leeks, I think leeks and tuna go well together and of course scotch bonnet, although unlike my mum's version I use less. Tandoori Chicken Pizza

I remember the first time I saw A cook's tour and my initial reaction was "what kind of a cooking show is this??" Then I saw No Reservations and I was hooked to it. Its raw, and honest no sugar coating approach. One of my favorite episode was when Anthony Bourdain visited Saudhi Arabia. His respect to the cultures and the belief. How many of you foodies watched it. I also loved watching The Taste. Anyway, back to my recipe for the day, Tandoori Chicken Pizza .  I love tandoori chicken and so do the boys. I had some left over tandoori chicken and wanted to make my own tandoori chicken pizza. I didn't want to use tomato paste or the regular tomato sauce. Huni Hakuru ( Sweet Coconut Pastries)

Huni Hakuru is this sweet pastry which is eaten as a tea time snack. The filling is made of gabulhi huni ( the meat found inside a slightly young coconut, but not as young as the ones you drink) cooked with sugar , pandan and cardamon. Once its well cooked and sticky , its cooled and placed in a dough and shaped like a curry puff. Then fried in oil. Its tasty especially when served warm. Gabulhi is the slightly mature coconut, not the coconut you use for cooking or  the one  that is used for drinking which has a more tender flesh. Recipe : Huni Hakuru Makes about 12 2 cups gabulhi huni 1 1/3 cups sugar 1 pandan 1/2 cup water 1" stick cinnamon 6-8 cardamon 1 tbsp rose water For the dough 1 cup flour 1/2 cup grated coconut pinch of salt a little water Place the gabulhi huni and half the sugar in to a small food processor and process to break any large pieces. Tuna and Tomato Galette

I love make galettes , its a free form tart.  No blind baking required. I saw a few tomato galettes on Pinterest and wondered if I can use some tuna along with it and extra cheese. It turned out quiet delicious and I think any Maldivian will like it as its got that chili kick ( although I dont go mad with the chilli like some people), the tuna flavor and the cheese and  sweet tomatoes. So give it a go and serve it along with a nice green salad. If you are making this on a hot day, chill the dough after rolling it  before you put the filling. This way it makes it easier to fold the edges. Chicken Curry puff

One of my favorite Malaysia snacks is Curry puffs. I made Sardine Curry puff  before, and then recently I  tried the chicken one.  It was a big hit in my home and also with my  in laws.  The best curry powder I would recommend would be Baba's meat curry powder, although you can still use the local roasted curry powder, which is also great. I have tried this using uncooked chicken as well as with left over roast chicken. Even left over chicken from a curry is great. What really makes this puff so special and extra delicious is the pastry. I learned this pastry recipe from Zoe @ Bake for Happy Kids. Even though you can use the regular shortcrust pastry to make this or even my patties pastry for this  recipe, just give this pastry a try once and you will want to make it again  and again.  Now , I prefer to make jumbo ones but you can try and make smaller ones. Victorian Sponge Cake

Who is planning to watch the Royal wedding tomorrow? I know I am looking forward to it.  I remember as a  kid I had this Ladybird book  about Prince Andrew and Sara Fergurson Wedding. As any little girl , princes and princesses was pretty fascinating and a real one was like WOW!!.  So  to enjoy watching the big wedding, how about making a delicious Victorian Sponge cake. Of course I will be having mine after the Magrib prayers????. I have tried a few Victorian Sponge Cakes,  but the one I did by following Mary Berry's recipe was the best one.I didn't have self raising flour so I used regular flour and used 2 teaspoons of baking powder. Instead of caster sugar I used regular sugar. Rihaakuru Fathafolhi

I love any thing with Rihaakuru, the salty fish paste  thats a big local favorite. I made rihaakuru boakibaa l ast year  so this year I decided to make something with rihaakuru again. This time I am making rihaakuru fathafolhi or savory pancakes using rihaakuru .   I saw this recipe in one of the local cookbooks and gave it a try. As always had to adjust as the quantity was  quite a large one. I followed my mother's advice and added a little flour so its easier to make the folhi . The chilli may sound excess but you do need a good chilli kick with rihaakuru as well as the taste of curry leaves and ginger. Recipe: Rihaakuru folhi. Fried Tuna and Potato Patties

Ok I know I have done the baked ones, but this one has a slightly different pastry unlike the baked one. I used the egg to make my pastry richer but its not really necessary to add it.  My mother in Law makes this kind of pastry and its also found in some of the Hedhika ( local snack) shops. Since the theme for this month's challenge in the Muslimah Bloggers' was  to create a Ramadhan Recipe from Islamic world. Well Maldives is a Muslim Country and I feel this recipe fits the bill. Its often made in my home almost like once a week. Even though its not an authentic one , has the influence of Sri Lanka in it.Its almost like a curry puff you get in places like Malaysia , just no curry flavor. Sometimes I get tired making fried rice with left over rice, so was looking up  different ways to use up left over rice. I try to cook rice so I don't have leftovers but when I do  I always end up with fried rice. In  Hugh Fearnley Whittinstall's  Love your Leftovers   book he had a recipe for rice cakes, but it  didn't go down so well with me ,and it also meant I needed to add  half a can of beans as well. But the idea of rice cakes was still there, then I saw this cheesy brocolli rice recipe on Pinterest and thought of trying that out with the addition of canned tuna. Its a bit fiddly so you need to be extra careful  when rolling in bread crumbs, so needs to chill a bit in the fridge before  rolling in breadcrumbs. Its the last day of school year!.  The kids are going a bit crazy around the house ,  books getting sorted out , reports being given out and  plans for the holidays.  So the last thing you want to do today is cook. I remember seeing this delicious wrap on the Hairy Dieter's Episode on TLC,  although now adays I hate the TLC channel, mostly dating shows and relationship shows and complete nonsense , I mean really a show called Undressed!!!! Wish our cable  tv providers   would get better  cooking channels  and educational channels. Chicken Sandwich

Yes I know , the photo doesn't really look very good, mainly because it was made for dinner and it was getting dark, so light wasn't so  good. One of those rushed days , where you want to just finish up and sit down for dinner. This is one of those recipes where that left over roast chicken gets ended up.   I wasn't sure about the apple but I had this green apple half one day ( my little fussy one always eats one half ),  so I just threw it into the mixture. You know what! it was  delicious!  I think the combination of chicken and the crunchy celery and green apple gave a nice  combo.  Its okay if you dont have celery , and replace dijon mustard with the one you use for hot dogs, although that mustard has a more sharper taste and is more yellow. Cantaloupe And Blueberry Smoothie

 I love smoothies and its the only way i can get some diary into me as hate drinking plain milk.The cantaloupe  is a local produce so I feel good about it , the bluerries are good for you and then the milk gives the protein. It was only recently I learnt that smoothies not necessarily have to have yogurt, as long as its a nice thick drink with fresh fruits ,  a dairy ( could be milk or even coconut milk or yogurt) and sweetener.  Juice (especially the ones made on juicers or with blenders with built in strainers) on the other hand doesn't contain the natural fibres ( my hubby  is not a fan of juicers, says it takes away all the natural fibers found in the fruit.) . Recipe : Cantaloupe And Blueberry Smoothie 150g cantaloupe melon cubes 1 punnet ( thats about 1 cup) blueberries 2 cups milk sugar or honey to taste Blend everything together  till smooth and serve. Variation : use honeydew melon instead of cantaloupe.

Grilled Vegetable Submarine Sandwiches

I am trying to get the family to eat more vegetables and depend less on meat and fish. So I came up with meat and fish free night once a week at least.   I  wondered if I can make a vegetable sandwich but it all ended up too dry , and then I remembered the  bean filling I once made for a Quesadilla and how much the boys and hubby loved it, so I used that  to make spread and then pilled up grilled vegetables on top. Its that time of the month, its the 10th of the month and each month since beginning of this year the ladies of the Muslimah Food Blogger's group host a challenge. This month's challenge was to create a dish from one of our fellow blogger's blog something which we had booked earlier. Pineapple And Strawberry Pops

When it gets pretty hot ,  and you want something really cold and healthy. This is one  thing you can make!!.  I saw this recipe on Pinterest ( I know! I love it , very obvious right). This one was so colourful with the double colours. The boys weren't so sure about the strawberry layer , even hubby  commented the strawberry flavor in an ice pop was not that exciting, but then I will let you be the judge of that. Smoked Salmon And Cucumber Sandwiches

Manuka Smoked Sliced Salmon was on sale  at   Fantasy Store ,here in Male' , its a specialty shop  I would say, as its the only place that sold gourmet food, cold meats and various cheeses etc. But I love visiting there and was so excited to finally find smoked salmon at a reasonable price.  As soon as hubby found out I was going to use smoked salmon  he made a l  "I don't really like" that face LOL, talk about fussy kids even the father can be fussy at times . Cheesy Tuna And Vegetable Pinwheels

This is a great way to use up left over  roshi, or flat bread, something which I am sure will be in excess during Ramadhan. Its an easy to make  recipe , it can be served as a little snack  or even as a way to get kids interested in eating  vegetables, its quite cheap and can be made in advance and left to chill , just cut it up  before serving. Kopee fai is  a local green, the taste is said to be a lot like Kale. Tropical Fruit Salad

"Mom,  coach said to bring fruit tomorrow  !."   My now 10 year old was very excited  with this new change into his daily swimming work out.  Apparently the coaches are trying to get  newly appointed junior and senior squads of their swimming club  to start a healthy lifestyle and  asked the kids to bring a fruit to eat after work out everyday. The one who doesn't bring has to do an extra set of laps , (depending on the kids ability).  In my experience with my boys, I think the best way to get kids to eat fruits is to avoid the sugary foods such as sweets and  all during the first few years and introduce fruits with no sweets or chocolates for treats.  My hubby, who recently did an online nutrition  course, also commented how  one can consume the 5 a day fruit concept, my answer fruit salad!.  Its a great way to have cut fruit in hand and its good for both kids and adults a like.  So during this Ramadhan month, w...

Pumpkin and Spinach Calzone

 Calzones are just folded up pizzas , or portable pizzas. The topping goes on one side and then its folded in half and sealed , ufresh from the oven the cheese just oozes out , that is if you have used mozzarella. I made this one while trying out a recipe for pumpkin. As a child I used to hate pumpkin  but now adays I like it better than I did when growing up.
