SANDRA'S HOMEMADE SWEET THAI CHILI SAUCE

A delightful sweet chili sauce I created today in under 20 minutes, and at the rate we go through this decadent condiment ~ it's bound to be quite the '$$ saver' as well... Yield: 1 cup Prep: 5 Mins. Cook: Appx. 15 minutes INGREDIENTS 1/2 cup white vinegar 1/2 cup + 2 tablespoons granulated sugar 1/4 cup water 3 tablespoons fish sauce 2 tablespoons quality white wine 3 teaspoons garlic granules (or powder) 1/2 to 1 tablespoon dried red chili flakes (1/2 TB mild, or 3/4 TB spicy, or 1 TB hot) --1-1/2 tablespoons cornstarch dissolved in 4 tablespoons cool water --2 drops red all-natural organic food coloring METHOD Place all ingredients (except cornstarch-water slurry mixture, and food coloring) in a small, heavy-bottom saucepan. Marcella Hazan's Tomato Sauce

My kind of recipe. The New York Times has this to say about it: "This is perhaps the most famous recipe created by Marcella Hazan, the cookbook author who changed how Americans cook Italian food. It also may be her easiest. Use your favorite canned tomatoes for this and don�t be scared off by the butter. It gives the sauce an unparalleled velvety richness." 2 cups tomatoes, in addition to their juices (for example, a 28-ounce can of San Marzano whole peeled tomatoes) 5 tablespoons butter 1 onion, peeled and cut in half Salt Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. Add a pinch or two of salt. Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed. Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta.

SANDRA'S EASY PIZZA SAUCE

My favorite pizza sauce that I also serve warm alongside for dipping, as you never have enough sauce, especially when only the edge of the pizza crust remains to be eaten... Yields: (1-1/2 cups) -- Double recipe for 2 pizzas Prep: 5 Mins. Cook: 30 Mins. INGREDIENTS 2 teaspoons olive oil 1 teaspoon granulated garlic 1 tablespoon dried minced onion 1 (15-oz can) stewed tomatoes, mashed to small bits (do not drain) Salt and pepper, to taste Pinch sugar 1/4 teaspoon dried oregano (1/8 teaspoon if using ground) 1/2 teaspoon dried basil -- 1/2 teaspoon red wine vinegar METHOD Add olive oil into a hot pan over medium-high heat. Add garlic and onion, stir to combine. Add the stewed tomatoes with its juices, stirring to deglaze the bottom of the pan. Cook until liquid reduces by half, about 5 minutes; stir occasionally. Add salt and pepper, to taste, and a pinch of sugar. Add the dried oregano and basil. Reduce heat to low and gently simmer, uncovered, for 30 minutes; sauce will reduce and thic...

Turkey Gravy

This hardly qualifies as a recipe. It is basically turkey gravy from a mix, though slightly enhanced. But I made this for Thanksgiving this year, and it was so easy. When trying to get a lot of different dishes all ready at the same time on Thanksgiving Day, anything to simplify the process is welcome, in my opinion. The recipe comes from allrecipes.com . 2 (1.2 ounce) packages turkey gravy mix 1/4 cup all-purpose flour 2 cups water 2 cups turkey pan drippings Place the turkey gravy mix and flour into a saucepan, and gradually whisk in the water, followed by the turkey drippings. Whisk until smooth. Bring to a boil over medium heat, stirring often. Reduce heat to low and simmer the gravy until thickened, about 10 minutes (it took less than five for me, but this may depend on personal preference).

Serves: 4 Prep: 10 Mins. Indoor Grill: 4 Mins. SANDRA'S TERIYAKI SAUCE (Homemade)

An easy and tasty option to make your own Teriyaki Sauce. I always have some of this Asian sauce on hand for those last-minute stir-fry recipes for quick meal options on those busy nights... Prep: 5 Mins. Yields: 1 Pint (2 Cups) 1-� cups dark brown sugar � cup low-sodium soy sauce � cup low-sodium chicken broth 2 tablespoons hoisin sauce (An Asian-style barbecue sauce) 1-inch piece of fresh ginger, grated (or 1 teaspoon ground) 2 garlic cloves, grated � teaspoon freshly ground pepper METHOD Add all ingredients to a nonreactive (glass/ceramic) bowl, and whisk to combine. Use in your favorite teriyaki recipe or as a marinade, including basting grilled meat, poultry, fish, and shellfish. Store in an airtight jar in refrigerator~ Enjoy!

SANDRA'S ASIAN-STYLE STIR-FRY SAUCE (Homemade)

An incredibly quick and easy stir-fry sauce recipe that pairs well combined with a variety of Asian meat, poultry, and vegetable stir-fry main dish meals... Prep: 10 Mins. Cook: 5 Mins. Yields: (Appx. � Cup) INGREDIENTS 2 tablespoons low-sodium soy sauce 1/4 cup + 2 tablespoons chicken broth 3 tablespoons rice wine 2 tablespoons honey 2 teaspoons sesame oil Pinch of white pepper 1 tablespoon vegetable oil 2 teaspoons granulated garlic 2 teaspoons ground ginger 1 tablespoon arrowroot (or cornstarch) 2 tablespoons cold water METHOD In a bowl, combine soy sauce, broth, rice wine, sugar, sesame oil and white pepper. Dissolve arrowroot in 1/4-cup cold water (slurry), and set aside nearby. Heat all ingredients, except slurry, in a small saucepan until gently boiling. Reduce heat to medium and cook for 1 minute. Mix the slurry (as it will tend to settle), and add to saucepan while whisking.  Cook, whisking, until the sauce boils and thickens.  Remove from heat and use this sauce...

Strawberry Freezer Jam

Confession. I haven't made this recipe myself, but I have eaten the end result. My neighbors, Joe and Lisa Nielsen, gave me a jar of this delicious concoction, and I HAD to have the recipe! This is so delicious on homemade bread or toast! I'm going to have to make a batch of this sometime soon. It doesn't look hard at all. The original recipe comes from MCP, a manufacturer of pectin. 3 1/4 cups prepared fruit (buy about 2 quarts fully ripe strawberries) 1/4 cup fresh lemon juice 1 box pectin 1 cup corn syrup 4 1/2 cups sugar, measured into separate bowl Rinse clean plastic containers and lids with boiling water. Dry thoroughly. Crush strawberries thoroughly, one layer at a time. Measure exactly 3 1/4 cups crushed strawberries into large bowl. Stir in lemon juice. Stir in pectin; let stand 30 minutes, stirring every 5 minutes. Stir in corn syrup. Gradually add sugar, stirring until well blended. Flat Iron Steak and Sweet Potato Fries

For dinner tonight, I had steak and sweet potato fries. A rare treat, but yum! As an accompaniment, I purchased frozen sweet potato fries (Alexia is the brand) from Costco and whipped up a little fry sauce (see recipe below) to go with it. Add a small tossed salad (which I didn't ;-) ), and you are set! 2 flat iron steaks (the recipe I have called for flank steak, which I'm sure would be good, but the butcher recommended flat iron steak, which he said was less expensive and more tender) 1/4 cup soy sauce 2 tablespoons vegetable oil 2 tablespoons maple syrup or honey 1 teaspoon vinegar 1 clove garlic, minced 1 teaspoon fresh ginger, grated, or 1/2 teaspoon ground ginger Lay steak in a glass casserole dish and poke the meat all over with a fork. Sweet and Sour Mustard Sauce

This creamy sauce is a delicious accompaniment with ham. It makes ham just a little more fancy. The recipe comes from a former neighbor, Becky Ririe. 2 cups whipping cream 2 egg yolks 1/2 cup sugar 1 1/2 tablespoons flour 4 teaspoons dry mustard 1/2 cup vinegar Blend the cream and egg yolks together and set aside. Combine sugar, flour, and dry mustard in the top portion of a double boiler over boiling water. Gradually add the cream mixture, stirring constantly. Cook until thickened. Gradually stir in the vinegar. Makes about 2 1/2 cups.

Apricot Sauce

This is one of my mom's tried and true favorites and a great way to make ham a little more special. 1/2 cup apricot jam 3/4 cup bottled apricots, drained and pureed 2-3 tablespoons brown sugar 2 teaspoons Dijon mustard 2 tablespoons cider vinegar 1 teaspoon dried minced onion Combine ingredients in a saucepan and heat for 5-7 minutes.

Marinara Sauce

Friends have often told me that it's so easy to make homemade pasta sauces that there's no good reason to rely on store-bought sauces, which aren't nearly as good. And I've tried a few times to make my own pasta sauces, but I just kept returning to bottled versions out of habit and convenience more than anything else. In any case, a marinara sauce such as this one may finally make a believer out of me. It's delicious! Furthermore, the recipe is very simple, uses basic ingredients that I usually have at home, and the end result can be divided into smaller portions and frozen for future use. How can you go wrong with that?
