Although labor intensive, you�ll be reaping rewards many times over each and every time you open a jar and partake of your pickled sockeye deliciousness� Yields: (Appx. 3 Doz., 36, Pint Jars) Curing: 24 Hrs. Prep: 6 to 8 Hrs. Equipment and Supplies: - 3 cases (36) wide-mouth Mason pint jars, with lids and rims, sterilized � Important! ~~~~[I sterilize the jars using the hot setting in my dishwasher, and boil the lids and rims in water using a medium, covered, pot for 10 minutes] - 16 qt. cooler (cleaned using hot water, soap and Clorox)- Important! 2 large stainless steel pots with lids 1 medium stainless steel pot with lid -Wide-mouth funnel (optional), saves clean-up time -Kitchen towels -Plastic wrap -Paper towels -Butter knife -Ladle -Disposable gloves (or very clean hands you�ll be washing often) Curing: 10 Wild Alaska Sockeye Salmon 2 (4 lb.)  boxes Canning and Pickling Salt (do not substitute) 1 cup dark brown sugar Clean and fillet in half 10 sockeye (20 fillet halves)....

MAX�S ALASKAN ALDER-CHARCOAL-GRILLED KING SALMON FILLETS

My husband did an incredible job creating this recipe a few days ago, and since then we've literally made this 3 more times this week because it's simply that spectacular... Servings: (2 or 3) Prep: 3 Mins. Marinate: 30 Mins. Grill: 10 to 20 Mins.  --(Rule of Thumb: Appx. 10 Mins. per 1� of fillet thickness) Special equipment: 1 (6�x9�x1-1/2�) disposable baking pan 1 (9� x 1-1/2�) section of alder branch -- (Note: Soak branch in water 2 hours before placing on hot charcoal coals) INGREDIENTS Marinade: Granulated garlic Sitka Seafood Seasoning (or Old Bay Seasoning) Freshly ground black pepper � to �  cup yoshida sauce -- (Depending upon # of fillets, 2 or 3 respectively) Fish: 2 or 3 Fresh boneless, skin-on king salmon fillets, 1-1/2" to 2" thick METHOD --2 hours before grilling, place alder branch in bowl with water and weigh it down to soak.  --30 minutes before grilling, prepare charcoal in grill so it is ready; ensuring you have � the coals on one side ...

Roasted Salmon with Potatoes and Mushrooms

I know that health concerns should be a more important part of my dietary choices, and I'm moving slowly in that direction. It's just that many dishes/foods that are healthy don't always taste very good. And I have a difficult time forcing myself to eat foods that don't taste very good on any kind of regular basis. Anyway, here is a dish that is both healthy and delicious. Plus it's made largely in a single dish. The recipe comes from Real Simple . I particularly like the accompanying sauce. 1 pound small new potatoes (about 10), halved 8 ounces button mushrooms 3 tablespoons olive oil kosher salt and black pepper 1 1 1/4-pound piece skinless salmon fillet 1 tablespoon red wine vinegar 1 tablespoon whole-grain mustard 1 teaspoon honey 2 tablespoons fresh flat-leaf parsley, chopped Heat oven to 400 degrees. Smoked Salmon Ball

8 oz. cream cheese, softened 16 oz. can of red Salmon, drained 1 bunch of green onions, minced 2 tablespoons lemon juice 1 teaspoon liquid smoke dash hot red pepper sauce chopped nuts or parsley directions: Mix all ingredients except nuts or parsley.  In small bowl lined with plastic wrap, chill mixture until firm.  Shape into a ball.  Remove plastic wrap.  Roll in nuts or parsley. Serve with crackers or chips.
