Simple Fresh Fruit Salad Cantaloupe Watermelon Honeydew Melon Strawberries Grapes, Red and Green Granny Smith Apples Gala Apples Pineapple (can/cans of  DOLE� chunk) Mint, optional Simply cut the fruit into bites size chunks and toss. I used  DOLE�  canned pineapple and use part of the juice as a sauce for the salad. If you use apple or a fruit that might brown, quickly toss in the pineapple juice after slicing.

SANDRA�S FRESH and LIGHT TROPICAL FRUIT SALAD

I at first served this fresh salad as is, then later with a dollop of yogurt. I found both methods to be incredibly delicious.... Serves: (8 to 10) Bearrs Seedless Limes were used  in this recipe from my indoor dwarf citrus tree... Prep: 15 Mins. Stand: 15 Mins. INGREDIENTS Dressing: 1 tablespoon honey 6 mint leaves, finely sliced 1 tablespoon freshly squeezed lime juice Fresh Fruit: 1 mango, peeled and chopped 1 papaya, peeled and chopped 1 gala apple, cored and chopped 1 granny smith apple, cored and chopped 2 cups whole red seedless grapes 6 whole strawberries, sliced 1-1/2 cup pineapple, chopped Garnish: -Sprig of whole mint leaves METHOD In a large, glass (non-reactive) bowl, whisk the lime juice, honey, and mint.  Add all the prepared fruit, toss with a wooden spoon to combine ensuring all the dressing has been incorporated. Let salad stand 15 minutes, toss, and serve. ~ Enjoy!

Mint M&M Chocolate Chip Cookies

I realize that many people are probably still coming down from the massive sugar high that is the Christmas holiday, but I wanted to try this recipe while mint M&Ms are still available in the grocery stores. I don't know if it's different elsewhere, but around here, the mint variety are only available around Christmas time. In any case, these cookies are very tasty. They are also delicious if you prefer to use regular M&Ms instead of the mint variety. Or if you are looking for another M&M chocolate chip cookie recipe, here is another I recommend. Pudina Parantha

It is the turn for the final dish of tonight's menu, pudina parantha. The process of making the dough for pudina parantha is just like kneading the dough for ordinary roti only here I added a few chopped mint leaves in the whole wheat flour. You can also prepare pudina roti / chappati instead of the parantha. Ingredients: 200 gms wheat flour / atta 4 tbsp freshly mint leaves / pudina patta, finely chopped 1 tsp thymol seeds / ajwain 2 tbsp white oil, to knead dough ?-1 cup warm water (for kneading dough) 1 tsp salt (to taste) ? tsp red chili powder (to taste) white oil, for frying Procedure: Sieve atta and take in a mixing bowl. Add chopped mint leaves, ajwain, white oil, salt and red chilli powder and mix well. Slowly & gradually add water and knead to form a soft dough. Cover with a moist cloth for 30 mins. Mint, Cucumber & Yogurt Raita

I generally prepare cucumber & yogurt raita as it is liked by the family members. As tonight I am having a mint based menu, just added a few chopped mint leaves in the curd mixture to form a mint, cucumber & yogurt raita. Ingredients: 2 cups sour curd 1 small cucumber, grated ? cup fresh mint leaves, finely chopped 3-4 cloves garlic, peeled and finely minced 1 tsp powdered sugar 1 tsp salt ? tsp red chilli powder (optional) 1 tsp roasted cumin seed / jeera powder a pinch rock salt, for garnishing Procedure: Wash, peel and grate the cucumber and place the grated cucumber on a strainer to drain the excess water. Strain the curd in a clean & thin / muslin cloth to squeeze out the water and collect the curd in a mixing bowl. Add the grated cucumber (press to ensure that there is no excess water, chopped garlic & mint leaves and mix well. Add salt, powdered sugar, red chilli powder and mix well (Add ? cup water, if required). Refrigerate for 4-6 hours. Sprinkle rock salt ...
