Tuscan Soup... requested by a guy that hates soup!

Last time... "My guys don't eat soup. One night I was making this soup for my step-mother who wasn't feeling well. My son and husband were in the back of the house playing the play station. They came into the kitchen asking what the terrific smell was... Needless to say, I had to make another batch of soup!" This time the hubby actually asked me to make this soup!  I decided to make it a little heartier. I used Kielbasa because that was all I had on hand. I added large chunks of mushrooms and a teaspoon of minced garlic. I also a cup of evaporated milk. The basic recipe is listed below. Fell free to add or take out what you'd like! Stuffed Flank Steak Rolls

This one has sauted Mushrooms and Onions with Provolone Cheese! These have onions and Swiss cheese. I saw one of those videos out there that showed something like this, but prettier and very easy and simple looking. So I gave it a shot. It is NOT simple or easy or pretty! They leave out a lot of steps as always. I changed a few ingredients. (Only because I did not have them on hand. It didn't make a difference in the difficulty.) I tried to get a step-by-step photo shoot. The quality isn't that great on the poor old camera I'm using, but you'll get the idea!   No mushrooms or spinach this time, but it will next time. Spread out the vegetable mix. Slice the cheese into strips so it will roll easier. I used Swiss this time.  Carefully roll from the narrow end  holding the stuffing in and keeping it even. Sausage and Spinach Pasta Bake

Pasta, Green Beans, BLT salad and Garlic bread! 1 (12 ounce) package pasta* 1 pound ground sausage, cooked and drained 1 (10 ounce) package frozen chopped spinach, thawed 2 eggs 1/4 cup olive oil 5 cups tomato and roasted garlic pasta sauce 2 cups shredded Cheddar cheese 2 cups shredded Mozzarella cheese Preheat oven to 350 degrees F. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and sausage. Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. SANDRA'S SAVORY CURRIED PUMPKIN SOUP

OMGoodness!! My favorite soup creation to date! A culmination of ingredients I had on hand today, and usually do most days, so I'll be able to remake this delectable delight quite often... Prep: 15 Mins. Cook: 30 Mins. Servings: (4) INGREDIENTS 1 slice center-cut bacon, cut crosswise into 1/2" pieces (or 1 TB olive oil) 1 medium yellow onion, diced 1 cup sliced celery 1 red bell pepper, diced 1 garlic clove, minced 1 (15-oz can) pure pumpkin puree (not pumpkin pie mix),,,(or 2 cups pureed squash, just puree 1st) 1 (14-oz can) fat-free low-sodium chicken broth (or veggie broth) 1 cup filtered water (or more to reach your desired soup consistency)...or 1 cup quality white wine) 2 teaspoons fireweed honey 1 teaspoon yellow curry powder 2 teaspoons Worcestershire 1 teaspoon paprika 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground pepper --2 cups baby spinach leaves, obvious stems removed, roughly chopped --1 tablespoon cold, unsalted butter, cut into quarters METHOD In 3-quart...

Spinach Dip

1 box (10 oz.) frozen chopped spinach, cooked, cooled and squeezed dry* 1 container (16 oz.) sour cream 1 cup Mayonnaise 1 pkg Knorr Vegetable Mix 1/4 tsp Garlic Powder 1/4 tsp Onion Powder Dash of Cayenne Pepper Combine all ingredients and chill about 2 hours. Serve with your favorite dippers. I use club crackers and scoops corn chips! * When I make this for a crowd I use 5 pkgs of chopped spinach and multiply all the other ingredients by 4. It comes out great that way!

SANDRA'S 15-MINUTE INDIVIDUAL ROMA PIZZA

When faced with preparing lunch for myself today, this is the end result; a flavorful mini roma pizza that turned out fabulously well.... Serving: (1) Prep: 5 Mins. Bake: 10 Mins. INGREDIENTS: Roma Pizza: 1 (7� round) store-bought Mama Mary�s Gourmet Pizza Crust 2 teaspoons, Extra Virgin Olive Oil (EEVO), divided 2 tablespoons, crumbled goat cheese, divided 2 Heaping teaspoons, Jarred, basil pesto sauce 4 Jarred, kalamata olives, quartered lengthwise 2 Jarred, halve sliced sun-dried tomatoes in olive oil, roughly chopped 4 Jarred, marinated quartered artichokes in olive oil, quartered Greens (to wilt over hot pizza): Small handful, baby spinach and arugula mix Slight drizzle with: EEVO, Balsamic Vinegar, Agave ~ Including a bit of Sea Salt and Freshly Ground Pepper ~ Toss and set aside. Saag Aloo Mattar (Peas & Potato in Spinach Gravy)

Thought of making Saag-Aloo (a nutritious dish made of spinach & potatoes) dish for tonight?s dinner. While preparing I found out there was no coriander leaves (which I generally use for spinach gravy recipes) but a handful bunch of mint leaves were available. Well wary at first of the taste, substituted coriander leaves with the mint leaves and voila...the final dish was also delicious with the typical smell of mint. A few bunch of mint leaves were extra so I prepared mint, cucumber & yogurt raita and instead of plain roti made pudina parantha to have a whole course "minty" menu for tonight's dinner. Soya Palak

Somehow preparing a dish with spinach (palak / palong shak) always meant to me palak paneer or fried spinach (shak bhaja as known in bengali cuisine). But learnt to substitute vegetables like potatoes (shaag aloo) or soya granules (soya palak) in place of paneer after coming to my in-law?s place. Whenever I prepare the palak puree for soya palak , it?s the same procedure, I use while making palak paneer, I only replace paneer with the vegetables / soya chunks. This is extremely nutritious dish with protein from soya granules and iron and minerals from Spinach.
