These desserts are made with natural sugars and are not heated above ~110 degrees, hence preserving all of the nutritional benefits found in the ingredients. Besides the fact that they are jam-packed full of feel-good nutrients, but they�re also super easy to prepare. Forget the messy cleanup of batters and icing splatters. I really love this recipe for a quick and easy lunch because the chickpea tuna is so simple to create. Made with mashed chickpeas, tahini, lemon, onion and some salt and pepper. It�s dead easy to whip together, just as I remember tuna sandwiches being as a teen. Tuna sandwich in fact was a go-to for me in high school and university because of the minimal effort and maximum taste. The input to output ratio can�t be beat. Plus, mixing up a batch of tuna salad required no cooking skills whatsoever, and as a busy student I wanted nothing less than to spend my time in the kitchen. How things have changed. As for today, my days are not complete without long romantic walks to the fridge, but even still a simple lunch recipe is one that peaks my interest. Ingredients: 3 cups whole almonds, raw 1 cup sugar 1/2 tbsp. cinnamon 1/4 cup water Instructions: In a large skillet or pot combine the sugar, cinnamon and water over medium-high heat until the sugar has dissolved. Add the almonds and stir constantly with a spoon or spatula, coating the almonds with the syrupy mixture. Keep stirring until the sugar crystallizes (this takes about 8-10 minutes) and it looks sandy. Don't stop stirring! Remove the pan from heat and scoop the almonds onto wax or parchment paper. Ingredients: 1 1/4 cups flour 1/2 cup vegan brown sugar 1 1/2 teaspoons ground ginger 1 teaspoon cinnamon 1/2 teaspoon allspice 1/4 teaspoon ground cloves 2 teaspoons baking soda 1/2 teaspoon salt 1/2 pureed banana 1/2 cup water 1/2 cup molasses 1/4 cup real maple syrup 1/2 teaspoon vanilla 2 teaspoons lemon juice Directions: Preheat oven to 350F. Line cupcake tins with paper cupcake liners. Gather all ingredients and supplies. In large mixing bowl, sift dry ingredients. In small mixing bowl, mix wet ingredients. Pour wet ingredients into the dry ingredients bowl and mix until all dry ingredients are wet and there are no lumps. Do not over-mix. Fill cupcake liners 1/2 to 2/3 full. Bake 15-20+ minutes or until toothpick comes out clean. Keep watching the oven after 15 minutes. Let cool another 20 minutes, then add icing. Makes 12. Source
