Chicken Meat balls

Getting a good quality mince is not easy.  Not knowing whats inside a packet that comes from abroad keeps me back from buying it. But every now and then I buy a pack , I prefer the Ayam brand which tastes the best or I mince  some boneless chicken breast in the food processor.  I make a batch , cook them and then freeze them so I have a batch to make pasta or pop into rice or even for sandwiches during the week. Recipe : Chicken Meat balls Makes 20- 22 meatballs 400g chicken mince ( store bought or freshly ground in food processor using 400g boneless chicken) 1/2 cup  quick cooking oats  2 cloves garlic, grated 1 tsp grated ginger 1 tsp ground black pepper 1 tsp salt (level tsp) 1/2 tsp ground  cumin 1 tbsp finely chopped parsley ( if available) 1 small egg, lightly beaten Oil (2 tbsp) Place the oats in a spice grinder and pulse a few times. SANDRA'S ALASKAN HEARTY MOOSE LASAGNA

I created this lasagna recipe using ingredients I had on hand this morning. It turned out fabulous just in time for lunch! We'll be enjoying this for dinner as well... Servings: (12) Prep: 15 Mins. Bake: 1 Hr. Let Stand: 15 Mins. Chicken Cordon Blue recipe Ingredients for chicken cordon blue: 25 Ritz crackers (I used whole wheat crackers and loved the extra nuttiness) 4 slices hearty sandwich bread, white or wheat (again, used homemade wheat bread and it was hearty and delicious) 6 tablespoons butter, melted 8 thin slices deli ham (about 8 ounces) 2 cups shredded swiss cheese 4 thick boneless, skinless chicken breasts (about 2 pounds total), see note Salt and pepper 3 large eggs 2 tablespoons Dijon mustard 1 cup all-purpose flour Directions: Preheat the oven to 450 degrees. Pulse the crackers and bread in a food processor until they are coarsely ground. Trickle(drizzle) in the melted butter and pulse to incorporate together. Transfer the crumbs to a rimmed baking sheet and bake in the preheated oven for about 3 - 5 minutes, stir it occasionally, until the crumbs are lightly brown golden. PORK CHOPS WITH APPLES

This yummy recipe ended up as dinner last night and it was divine! Add a side of mashed potatoes and a crusty baguette. 2 1-inch thick bone-in pork loin chops sea salt & freshly ground black pepper olive oil & butter 1 Gala apple, sliced Place saute pan over medium heat. Add 1 tablespoon of olive oil and 1 tablespoon butter. Cook pork chops about 5 minutes on each side until golden. Remove from pan and add add apple slices, adding a little more butter to the pan if needed. Cook one side until golden and then turn and cook the other side. BBQ RIBS BEACH-STYLE (Slow-Cooker)

On our last trip to the coast of North Carolina we developed a huge craving for BBQ Ribs. I had some honey barbecue sauce and discovered a can of pineapple rings, and added to this mixture a sweet onion and green bell pepper.  So I made layers of all of these ingredients in the slow cooker with generous sprinklings of sea salt and freshly ground pepper, and the rest as THEY say is history. The end result turned out to be some of the best ribs we had ever had the pleasure of passing over our tongues to out bellies. That being said....be sure and try it...it is simple and soul satisfying. Cook it on the LOW setting for 8 to 10 hours. You'll be glad you did!
