Fish Curry 3

I just have to share this fish curry. It is so yumm! I was looking for good fish curry recipe and came across one in Mohamed Amin's K arunayaa nulaa kehkun cookbook. I adapted it using ground spices and a few tweaks and voila! It's a delicious fish curry recipe, perfect to eat with rice or flat bread. Recipe : Fish Curry Serves about 4-5  * tsp of spices are usually level tsps  1( 350- 400g) fillet tuna fish , cut into small cubes 2 tsp ground coriander 1 tsp ground cumin 1 tsp ground fennel 1 tsp ground red chilli powder 1/4 tsp tumeric 1/4 scotch bonnet ( optional) 3 cloves garlic, grated 1" ginger grated 1 medium onion, thinly sliced 10 curry leaves 3" pandan leaf cut into large pieces 1" cinamon 6 cardamon pods, seeds only 3 cloves tiny pinch fenugreek seeds ( about 6 seeds) 500 ml water 200 ml coconut milk 1/2 tsp tamarind puree oil ( 2-3 tbsp) Grind the cinnamon, cardamon seeds and cloves to a powder. set a side. Tuna and White Bean Stew

In Maldives we get tuna fresh from the surrounding sea and although we make it into curries and smoke them, I wanted to make something different. I saw this recipe , via pinterest where some white fish is cooked with white beans in tomato sauce and flavored with basil.  I decided to use tuna instead and basil can be easily found  in Maldives, White beans is not especially in the islands. So the second time I did this recipe I used a can of baked beans. I drained (yes I can hear a few gasps) the tomato sauce and used just the beans instead. I used a chilli to give a bit of heat . During the first term mid term break , my husband and his three sibling and all the  families , headed to his island  , Lh. Naifaru.  This was our third visit and I have to come to love and enjoy my time in this small island. One of the things I love about this island is the strong communities and one of my favorite streets is Thitha's street ,where  hubby's aunt Thitha lives in an old run down but cosy  home. The street is old and narrow  and can see inside the coral walled houses . The neighbours are hard working  people and they chip into help one another. If one is making a big batch of masmirus , the rest of the women offer to slice onions and will sit gossiping  and laughing while busily slicing the onions. Fish Curry

Tuna is  used  frequently to make curries here in the Maldives.  After making my home made  coconut based curry powder , I   decided to use it to make fish curry to serve along with Roshi ( local flat bread) Recipe : Fish Curry (2) 1 ( 350g) fillet Tuna, cut into small cubes 1 large onion, sliced 3"  pandan leaf , cut into large pieces 1 sprig curry leaves 1/4- 1/2 scotch bonnet ( depends on how much heat  of chilli you like) 3 cloves garlic, grated 1/2 inch ginger, grated 3 tbsp huni havaadhu ( coconut based curry powder) 2 1/2 cups water 150 ml coconut milk ( canned or packed) or if using fresh,  thick coconut milk  1/4 tsp tamarind puree or a pea size piece of tamarind. salt to taste  corn or sun flower oil about 2-3 tbsp. Valhomas Spagetti

I have two very close friends and occasionally we get together and head out for dinner. So one time last year we headed out for the much awaited dinner night. After much debating we once headed to one of the most happening places in town,Thyme .I  had already done my homework on the place and so choose the much talked about Valhomas Spagetti, or in english smoked tuna spagetti. It was pretty good and loaded with dried chillies  that can cause you to sweat a little, or a lot. if you don't eat much chillies.  I wanted to replicate the recipe , and after much tries,  I came up with this recipe.  Serves 2 adults and 2 kids. This is more like a repost,  I hated the photo so took it down.  You might recall the  Peter Kurvita version of devilled tuna I posted long time back. Well this is the local version, its something I have come across sometimes at weddings on the buffet tables. Speaking of weddings  I once went to this wedding quite recently and wondered why they must have so much varieties of food!!! I mean there were  like  4 varieties of rice, noodles, pasta AND Roti!!! about 8 kinds of curries, 5 salads, and soup!!!?? To make matters worse, this lady who sat next to me had this mountain of food , she  just ate a small bit of it and left the whole plate uneaten!! ??Almost gave a lecture about wasting food! Spice Crusted Tuna Steaks With Hollandaise Sauce

Tuna is a well loved fish , let say its our main source of protein. When I was growing up we usually ate Skipjack tuna  which is a smaller tuna with blue or black lines  going on it. Now adays we get Yellow Fin tuna and I recently bought these fat  fillet of Yellowfin Tuna and  cut it into  steak pieces.  I prefer to cook it all the way through but not tough and chewy. I once went to this  well known restaurant ,here in Male' ,with a couple of friends and one of my friends ordered grilled tuna steak with oven roasted veg  and rice.  On the menu it sounded pretty good but sadly what arrived was over cooked with no sauce and a sad looking piece of carrot and plain  rice.  I am not saying I am a very good cook but as a  customer , had it been  served to someone like Gordan Ramsey    who  would probably send it back or as Manu fidel says 'where is the sauce!!' Theluli Bandaidhoo ( Spicy shallow fried tuna fish belly fillets)

Ok, I have been wracking my mind on how to explain what a bandaidhoo i s. So to put it in a more easier way to  explain, its simply the underside of the fish or the belly.  Usually when they fillet they remove it but here  ,in Maldives, they give it along with the  fish fillets, tuna fish fillets to be exact. My mom makes this delicious spiced   "bandaidhoo " that goes well as a side with rice and a mild curry.  Usually the bandaidhoo comes with the skin  and is cooked with the skin.  In this simple recipe, its slathered with lonumirus or Maldivian chilli paste and then cooked in hot oil, not deep frying but shallow frying over  a medium heat till cooked through . Its absolutely delicious!!
