Pizza Toast

Mama called it Cheese Toast, but my son calls it Pizza Toast. It is such a simple, easy and tasty treat. Whether it'd for an after school snack or add meat for a meal, it's sure to please kids of any age! I used my own homemade Pizza Sauce, but you can use your favorite brand. I also used a Colby Jack Cheese blend, but again use your favorite. The possibilities are endless! 1 French Bread Loaf, cut in thick slices Pizza Sauce  (or spaghetti sauce) 2 cups Colby Jack Cheese blend (optional) pepperoni, onion, peppers, olives Preheat oven to 400 degrees. Spread slices of bread with a tablespoon or so of sauce. Top with the toppings of your choice, or simply top with cheese. Place them on a cookie sheet and bake for about 10 minutes or until golden brown. If serving to children, be sure to let them sit until the cheese has cooled enough to be safe. 

Easy Chicken and Rice Foil Packets

I was looking for an easy meal to make pretty quickly this past Sunday. I basically wanted a one pot type meal with minimal effort or clean up. I hate doing a lot of dishes after a meal. These foil packets are an easy week night meal for the family or can be quickly thrown on the grill on the weekend. Super easy clean up is also a plus! 1 can (10 1/2 oz) cream of chicken soup 1 1/2 cups chicken stock 3 teaspoons Greek seasoning Salt, pepper and garlic powder, to taste 2 cups uncooked instant white rice � cup shredded carrot � cup fresh sweet peas � cup chopped onion 4 boneless skinless chicken breasts 4 slices cooked bacon, coarsely chopped 1 ? cups Colby Jack cheese 2 green onions, sliced (optional) Heat oven to 400 degrees. Cut 4 (18x12-inch) sheets of heavy-duty foil. Spray with oil. Measure 1/2 cup of the condensed soup, and set aside. Stuffed Flank Steak Rolls

This one has sauted Mushrooms and Onions with Provolone Cheese! These have onions and Swiss cheese. I saw one of those videos out there that showed something like this, but prettier and very easy and simple looking. So I gave it a shot. It is NOT simple or easy or pretty! They leave out a lot of steps as always. I changed a few ingredients. (Only because I did not have them on hand. It didn't make a difference in the difficulty.) I tried to get a step-by-step photo shoot. The quality isn't that great on the poor old camera I'm using, but you'll get the idea!   No mushrooms or spinach this time, but it will next time. Spread out the vegetable mix. Slice the cheese into strips so it will roll easier. I used Swiss this time.  Carefully roll from the narrow end  holding the stuffing in and keeping it even. Mexican Pizza

1 pound Ground Beef 1 package Taco Seasoning 4 Flour Tortillas 1 can Refried Beans Taco Sauce Shredded Colby~Jack Cheese Possible Toppings... Lettuce, tomatoes, sour cream, guacamole and/or scallions Brown hamburger, drain and season with your favorite taco seasoning. (Follow the package direction.) Spread all 4 of the tortillas with refried beans. On two tortillas spread half of the meat mixture. Drizzle with 2 T of taco sauce. Top with cheese. Add a second layer with the other tortillas and repeat layering meat, sauce and cheese. Bake for 15-20 minutes at 350 degrees or until cheese is melted and starting to get golden brown. Top with your favorite toppings and enjoy!
