Preparing for a Healthy Week??

Plan ahead for some healthy meals this week ?? Spending a few hours on Sunday preparing food for the upcoming week will ensure you have no excuses for eating healthy ?? Do you love smoothies for breakfast but run out of time in the mornings to make them? Prepare individual smoothie packets in advance and freeze them so you have ready-made smoothies during the work week.  To prepare smoothie, just place the frozen smoothie ingredients i n a blender and blend until smooth.  If you have a single-serve blender, that'll work perfectly! Healthy soups are also a food you can prepare in advance and freeze in individual servings. I struggle to get enough veggies in my diet ~ eating healthy soups seems to be the easiest way for me to get my recommended veggie intake. I absolutely love  Dr. Fuhrman's soup recipes because they're loaded with green leafy vegetables and legumes. My Experience with an Online Food Delivery Service

Tofu Tortas & Tostones   I was pleased with my Blue Apron experience! I tried 9 meals - and actually liked all of them. The produce was fresh, with the exception of just one avocado. Here's some things I liked about the service: No meal planning or grocery shopping required  No food waste The recipe cards were nicely written and illustrated and, therefore, easy to follow The experience forced me to experiment with some ingredients that I may not have tried otherwise (e.g., plantain, sriracha) The flavor of some common dishes were greatly enhanced due to the seasoning selections The food portions were big, with leftovers for lunch the next day ;o) The recipe cards inspired me to start being more organized while cooking in the kitchen ~ prepare and chop all ingredients before cooking ~ and reuse the pans during the different steps to save time in clean-up. Feel Full with the Least Amount of Calories

Dr. Fuhrman claims that appetite is controlled by fiber, nutrient density, and calorie density ~ and  not  by the weight of the food we eat. He rates foods that make us feel full with the least amount of calories... And no surprise, green vegetables take the gold. In fact, he states that the more of them you eat, the more weight you will lose! He encourages his patients (and readers ;o) to eat at least 1 pound of raw veggies a day; and an additional pound of cooked or frozen green - or non-green nutrient-rich veggies as well.  Fresh fruits take the silver and legumes take the bronze.  So don't forget to eat your veggies if you want to shed a few pounds after eating all those Holiday snacks...

Make your own salad dressings!

A salad is usually a very healthy meal option ~ unless you make the wrong dressing choice! Most brands include high-fat and unhealthy ingredients, including high-fructose corn syrup and artificial dyes and preservatives . Just simply add a bit of olive oil (with or without the same amount of balsamic vinegar), along with salt and pepper, to enhance (not overwhelm!) the vegetables in your in your salads. A study from Purdue University found that olive oil might be the best choice of salad dressing when it comes to absorbing nutrients from the vegetables.  Several light, simple and delicious salad dressing recipes can be found under my "Salads and Dressings" tab ~ happy dressings ;o)

Healthy Habits

I  have found many easy and healthy recipes in  The Food  Lover's Healthy Habits Cookbook with Janet Helm, RD. The book also includes tips on how to improve your health by focusing on changing behaviors. Instead of being diet-focused, it encourages readers to concentrate on 1 of 12 healthy behaviors for an entire month - in hopes that they will turn into habits. These are the 12 Healthy  Habit Goals Cook at least 3 more meals per week Eat a healthy breakfast every day Eat 3 servings of whole grains each day Be active for at least 30 minutes per day, at least 3 times per week Eat 3 servings of veggies each day Make seafood the main entree of 2 meals per week Increase healthy fats and decrease unhealthy fats every day Go meatless 1 day a week Add strength training at least 2 times a week Reduce the amount of sodium you eat Find ways to help decrease "mindless" eating Be mindful, purposeful, and joyful each time you eat I'm working on increasing the number of meals I c...

Soup, soup and more soup

Eating soup is a simple and delicious way to get your daily veggies into your diet. Although you'll want to limit cream-based soups that are high in calories, you can thicken your soups by blending some of the soup liquid and vegetables in a food processor or high-powered blender. Also, you can blend raw cashews or cashew butter to get a creamy texture. Making homemade soups will allow you to keep the sodium content low and the nutritional value high. (Even some prepared 'reduced sodium' soups have half or more of your day's worth of sodium per serving.)  You can make a big batch of soup because it will  keep in the refrigerator for several days - and most soups even freeze well. You'll find several of Dr. Fuhrman's soups on my blog (under soup, healthy options and vegetarian tabs). His recipes are chock-full of nutrient-dense vegetables, legumes and other fiber filled ingredients.

Thanksgiving 2015 ~ Giving Thanks

Thanksgiving is one of my favorite Holidays ~ a time to gather with family and to give thanks for all the blessings received over the past year. I generally host Thanksgiving dinner for my siblings and their families ~ leaving Christmas for my oldest sister ;o)  The host prepares the turkey and dressing, ham, mashed potatoes and gravy, and guests bring a side dish or dessert.  One of our Thanksgiving traditions is for each person to share something for which they are especially thankful. This year, we watched a "surprise" family photo slideshow that played to the songs of, "The Times of your Life" (Paul Anka) and "In my Life" (The Beatles), which brought back many memories ~ and more reasons for being thankful...
