SANDRA'S WHITE 'N DARK CHOCOLATE WALNUT COOKIES

Watch out folks! These newly created sinfully delicious cookies will knock your socks off, they're every chocolate lovers' dream... Yields: (Appx. 5 doz.) Prep: 15 Mins. Bake: 10 to 12 Minutes (per batch) INGREDIENTS Wet: 1 cup (2 sticks) unsalted butter, at room temperature 3/4 cup granulated sugar 2/3 cup packed dark brown sugar 1 teaspoon vanilla extract 2 large eggs Dry (sift): 2-1/4 cups all-purpose flour 2/3 cup Hershey's unsweetened cocoa powder 1 teaspoon espresso powder 1 teaspoon baking soda 1/2 teaspoon double-acting baking powder (or regular) 1/4 teaspoon table salt Additions: 1/2 cup Mini Semi Sweet Chocolate chips 1/2 cup White Chocolate Chips 1/4 cup finely chopped walnuts (measure after finely chopping) INSTRUCTIONS Preheat oven to 350 degrees.  Line 2 baking sheets with silpat liners or parchment paper; set aside. Mama's One Minute Icing

1 cup   granulated sugar 1/4 cup   cocoa 1/4 cup   butter 1/4 cup   milk 1 teaspoon   vanilla Mix sugar, cocoa, butter and milk together. Over medium heat, bring to a boil and boil for 1 minute. Add vanilla. Cool partially, then beat with a mixer for 3 minutes or until spreadable consistency. This is not a fluffy kind of frosting that you use to decorate a cake. I did use it on the layer cake in the picture, but this is more of a icing that would go on a sheet cake. The mixture will harden some, but it definitely shouldn't be soupy. Be careful not to heat it over too high a heat, or the sugar will start to turn to candy, which will make the mixture grainy. Spread on the cake quickly and let it set until completely cooled. 

Chocolate Buttercream Icing

It's not a great picture, but this is my homemade Chocolate Buttercream Icing. It's an old recipe, but a goof proof one, which is good for me!!! It seems like a recipe gone bad after adding all the sugar. The icing is very dry, but after adding the milk, it whips right up into the perfect spreading consistency!  � cup solid vegetable shortening � cup (1stick) butter, softened � cup cocoa 1 teaspoon vanilla extract 4 cups sifted confectioners' sugar (Powdered Sugar) 3-4 tablespoons milk In large bowl, cream shortening and butter with electric mixer. Add cocoa and vanilla. Gradually add powdered sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use. 

Warm Cocoa

This recipe is pretty simple. I drink a big glass (16 oz.) every morning to help me feel full and satisfied. Drinking this along with two scrambled eggs for breakfast is great for the low carb diet and helps so much with hunger pains.  I honestly don't get hungry until two or three in the afternoon. 16 ounces of warm water ( I use tap water at it's warmest) 1 tsp. baking cocoa 1/2 tsp. pure Vanilla 2 Tbs. Heavy Whipping Cream Since I discovered the dangers of artificial sweeteners I don't add any and don't miss them, some people might like to add a packet or two. Stir these ingredients together and enjoy!

Understanding Chocolate

I am sure you would all agree that it would be wonderful to be able to sculpt something even close to this sculpture featured below.Unfortunately I'm a chocoholic not a chocolatier and I'm sure this would take many years of training and practice.Whilst I will  probably never produce anything like this I realize that without even the basic knowledge of chocolate I would have even less of a chance.I even thought that some people may even be afraid to work with chocolate so I decided to write a post trying to help people understand a little bit more about chocolate hopefully inspiring people to create some chocolate desserts and cakes and well basically anything with chocolate in it. Once more into the breach as I continue to share recipes with you to allow you to be able to create a lavish afternoon tea party yes it really is a quest for me because I was quite taken aback when I heard that people were paying upwards of �80 per head to partake in afternoon tea I just can't believe that someone would pay that much for some nice sandwiches some nice cakes and a pot of tea.I understand it's because your'e paying for the experience, The name of the establishment, the background music, the heavily starched table covers and the sound of people opening their wallets and purses and handing over those crisp notes straight from the cash point. just to feel special.after all we are all in together. With Valentines day fast approaching here's a recipe that will knock your sweetheart for six and make them all yours, This light, souffl�-like cake has a molten-chocolate center made of rich chocolate ganache. Ganache is very simple to make. Once melted and slightly cooled, it is often used to glaze cakes, pastries and cookies. Here, the ganache is scooped into small balls and pressed gently into the top of each cake just before baking. The heart-shaped muffin pan used to bake these cakes is available in retail stores. A regular muffin pan may be used as well.
