Sweet Potato Casserole

This sweet potato side dish is the kind of thing you could serve at Thanksgiving or Christmas, among other times, but instead of toasted miniature marshmallows on top, this has a brown sugar pecan topping. It is rich and yummy! Sweet Potato Layer 8 cups sweet potato, cubed (3 or 4 sweet potatoes) 1/3 cup white sugar 2 eggs, beaten 1/2 teaspoon salt 4 tablespoons butter, softened 1/2 cup evaporated milk 1 teaspoon vanilla extract 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg Topping 1 cup packed brown sugar 2/3 cup all-purpose flour 6 tablespoons butter, softened 1 cup chopped pecans Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash. In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, evaporated milk, and vanilla extract. Mandarin Orange Cream Cake

My son always picks this for his birthday cake in December. But this cake is awesome in the summer because the icing is light and creamy. Mandarin Orange Cream Cake 1 box yellow cake mix 1/2 cup vegetable oil. (I use canola) 15 oz. can of mandarin oranges including juice 4 eggs Orange Cream Frosting 15 oz. can of crushed pineapple plus juice 15 oz can mandarin oranges drained 1 small box instant vanilla pudding 1  8-ounce container of Cool Whip thawed Preheat oven to 350-degrees. Start by preparing the cake pans. I use two 9-inch round pans to make a two-tiered cake, but you can make a 9 X13" cake. If you need to remove the cake from the pan to make the round layer cake, rip off two sheets of waxed paper. and stack them one on top of the other. Trace around the bottom of the cake pan you are using. Cut out the two rounds of waxed paper at the same time. Place a waxed paper round into the bottom of each cake pan. ADELE'S DECADENTLY DELICIOUS ALMOND COOKIES

How can I possibly explain how wonderfully delicious these cookies are without you having taken just one bite? Impossible maybe, but I'll try, try, try.  Butter, sugar, powdered sugar, oil, eggs, almond extract, flour, whole wheat flour, almonds, almond brickle chips....more sugar. Coleslaw

This simple recipe comes from allrecipes.com and has very favorable ratings there. It's called Mom's Coleslaw . 1 small head cabbage, shredded 3 medium carrots, shredded 1 cup mayonnaise 1/3 cup sugar 1/4 cup cider vinegar In a large bowl, combine cabbage and carrots. In a small bowl, combine the mayonnaise, sugar and vinegar. Pour over cabbage mixture and toss to coat. Serve with a slotted spoon. Makes 10 servings.

Chef's Salad

I went to the Cow Town restaurant to celebrate a friend's birthday.  We had  such a great time.  The Chef's Salad is a great low carb choice when you eat 'out'.  I have had to eat out a lot lately and was kind of worried about the carb count while I was out of town.  Not to worry.  You can get this at McDonalds or really any restaurant anywhere.  The birthday girl and I each had one of these while another friend had  French Dip and a huge pile of french fries.  I had some food envy, but I enjoyed my salad and didn't feel guilty all day.  Yea for me! Chef's Salad Lettuce Boiled egg Cheese (any type you choose) Olives Mushrooms Carrotts Cucumbers Onions Turkey Ham Tomatoes Mix it all or arrange it nicely on a plate.  Yum!

Olive Garden Chicken and Gnocchi Soup

I really like this soup at Olive Garden and this is pretty darn close.  I found gnocchi in the frozen pasta section, like next to the ravioli and tortellini. Make some breadsticks to go with it or you'll regret it. I used whipping cream and didn't do the cornstarch thing. Ingredients 3 -4 chicken breasts, cooked and diced 4 cups chicken stock 2 cups half-and-half 1 stalk celery, diced 1 garlic cloves, chopped 1/2 carrots, shredded 1/2 onions, diced 1 cup fresh spinach, chopped 1 tablespoon olive oil 1 teaspoon thyme salt and pepper 16 ounces potato gnocchi 1 tablespoon cornstarch (optional) Directions Saute the onion, celery, garlic, carrot in oil over medium heat until onion is translucent. Add chicken, chicken stock, half and half, salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes. In my eyes this is the most delicious macaroni and cheese recipe out there. We are talking caramelized onions, saltine crackers, white Cheddar cheese, Parmesan cheese and a beautiful creamy sauce. One taste and you will be hooked for life! 1 (8 oz.) pkg. large elbow macaroni 2 tablespoons butter 2 large onions, halved and thinly sliced 1 teaspoon sugar 1 (16 oz.) block white Cheddar cheese~shredded 1 cup freshly grated Parmesan cheese 32 Saltine crackers~finely crushed and divided 6 large eggs 4 cups milk 1 teaspoon salt 1/2 teaspoon pepper 2 tablespoons melted butter Prepare macaroni according to package directions; drain well and set aside. LAMB CHOPS ON THE GRILL

I love lamb....baaa...it flicks my trigger, especially when paired with my friend Revonda's hot pepper jelly. Small lamb chops are perfect fare for the grill. The recipe is very simple~just brush them with olive oil and salt and pepper both sides them throw them on a hot grill and cook just until they have grill marks and are a perfect medium-rare~3 to 4 minutes each side, no more. Pair with some rosemary roasted potatoes and some boiled cabbage. You will be so glad that you did!
