Chocolate Eclair Dessert

I love eclairs but haven't ever wanted to devote the time and effort required to make them. I'd rather pay someone else for that. But this dessert has the flavor of eclairs without all the fuss. This recipe comes from my friend Angie . 1 (1 lb.) box graham crackers 2 small packages French Vanilla Instant pudding 3 1/2 cups milk 1 (9 oz.) container Cool Whip Frosting: 6 tablespoons cocoa powder 2 teaspoons Karo syrup 2 teaspoons vanilla 3 tablespoons butter, softened 1 1/2 cups powdered sugar 3 tablespoons milk Butter the bottom of a 9x13 pan, line with graham crackers. Mix pudding with the milk and beat at medium speed for 2 minutes. Blend in Cool Whip. Spread half the mixture over the graham crackers and then place a second layer of graham crackers over pudding. Pour remaining pudding over and cover with more crackers. Refrigerate for 2 hours then frost. Refrigerate for 24 hours after frosting.

A Summer Cheesecake (Banana and Coconut)

Image
As temperatures soar in the U.K to around 28 degrees and today it's even hotter than  in  Egypt . I decided to make another summer dish I have not made in sometime and to be truthful I don't know why because it is a epic dish, the combination of Banana 's,Coconut and Chocolate is like a classic film about to win the Palme d'or if you get my meaning.I am a great fan of all foods and very interested in  food stories, facts and history so after a bit of research I decided to share with you some things about the ingredients we probably never ever knew so lets start with Bananas must be transported over long distances from the tropics to world markets. To obtain maximum shelf life, harvest comes before the fruit is mature . The fruit requires careful handling, rapid transport to ports, cooling, and refrigerated shipping. The goal is to prevent the bananas from producing their natural ripening agent , ethylene. This technology a...

Nutella Banana Bread

I found this recipe on Pinterest and couldn't wait to try it. Banana bread and Nutella combined in a single recipe. Yum! And it turned out to be as good as advertised. I will absolutely be making this again. This recipe comes from Chef in Training , by the way. However, I found a recipe called Marbled Nutella Banana Bread on another site that is slightly different but looks more visually appealing. I intend to try that one in the very near future. 2 cups all-purpose flour 3/4 tsp. baking soda 1/2 tsp. salt 1/4 cup unsalted butter, at room temperature 1 cup granulated sugar 2 large eggs 1 1/4 cups mashed ripe banana 1/3 cup skim milk (I used 1% because that's all I had) 1 tsp. vanilla extract 3/4 heaping cup Nutella Preheat oven to 350 degrees. Spray 84-inch loaf pan with nonstick spray. In a medium bowl, whisk together flour, baking soda and salt. In a separate large bowl, beat sugar and butter with an electric mixer at medium speed until blended. Add eggs, one at a time, be...

Roasted Brussels Sprouts

Brussels sprouts often get a bad rap, and I think I've generally avoided them as a result. Yes, I may have tried them once a decade or so when I went out to eat, but I've never cooked them myself. So I decided to be brave and give them a whirl. I found this delicious recipe from a site called Once Upon a Chef . If you don't think you like brussels sprouts, or if you already do, give this a try. 1 1/2 pounds brussels sprouts, halved (stem and ragged outer leaves removed) 3 tablespoons extra virgin olive oil, divided 3/4 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 1 tablespoon balsamic vinegar 1 teaspoon honey Preheat oven to 425 degrees. Line a baking sheet with aluminum foil. In a bowl, toss brussels sprouts with 2 tablespoons olive oil, kosher salt, and pepper. Transfer the brussels sprouts to baking sheet and roast, stirring occasionally to ensure even browning, until tender and caramelized, about 20 minutes. Place brussels sprouts back in bowl. Add rema...

On Wednesday 23rd May 2012 my home town of  Cirencester  welcomed the  Olympic torch relay to our town,I have never seen so many people gather in the town to welcome the Olympic torch and with it the Olympic spirit , I was able to skive of work for fifteen minutes to watch this highlight of Cirencester's year,  or is it with the Diamond jubilee approaching and lots of events planned for this celebration.I was going to waffle on about  Cirencester   and events in history that made this town but I guess if you want to find out about  my town you can do so by following the links above. So to commemorate this event I came up with this recipe Chocolate Olympic Torch with (Ginger and Cardamom Cream) this recipe is also a very light summer dish and like the torch a bit fiery  so I hope you will let me know your thoughts if you try this. HALIBUT TACOS

Image
A friend recently shared his prime catch of halibut with us and were we ever so glad that he did.  Halibut is a beautiful white meat fish with a delicious mild flavor. They can weigh as high as 600 pounds and one fillet can be as large as your front door. When purchasing halibut look for smaller cuts of the fish which have the best taste. To prepare the tacos I fried the fish in a pan of oil after I had coated the fillets in a bowl of flour seasoned with salt and pepper. I then took a fork and flaked the halibut in to bite-sized pieces. Next, I sprayed a baking sheet with cooking spray and then placed 6 small flour tortillas over the pan, slightly overlapping them. Then I took a bottle of 'Sriracha Hot Chili Sauce' and squeezed a fine stream of it over all of the tortillas. The flaked fish got sprinkled over next and then dollops of 'Desert Pepper Trading Company' brand all natural corn, black bean and red pepper salsa (medium strength). My homemade tartar sauce went on...

(Low fat) Chocolate pineapple cake

Image
Product using the English spelling "yogurt" (Photo credit: Wikipedia ) Summer may have reached us today personally I'm not convinced temperatures, soared to around 15 or 16 in parts of the U.K. Today after all the rain and the chilly days strong winds and to be honest totally unfriendly weather. I have still decided to continue with a summer recipe, Pineapple is a great summer fruit well to be honest we don't really get native fresh pineapple in the U.K.But it is coming soon surely. In the mean time we are going to be using tinned pineapple which I do adore, also in this recipe I'm using low fat natural yogurt which has so many uses and health benefits, some of which I never even realized .So I thought  I would try and enlighten you by giving you a couple of these benefits that could enhance your well being. 1. Yogurt is easier to digest than milk. Many people who cannot tolerate milk, either because of a protein allergy or lactose intolerance, can enjoy yogurt. T...

Understanding Chocolate

Image
I am sure you would all agree that it would be wonderful to be able to sculpt something even close to this sculpture featured below.Unfortunately I'm a chocoholic not a chocolatier and I'm sure this would take many years of training and practice.Whilst I will  probably never produce anything like this I realize that without even the basic knowledge of chocolate I would have even less of a chance.I even thought that some people may even be afraid to work with chocolate so I decided to write a post trying to help people understand a little bit more about chocolate hopefully inspiring people to create some chocolate desserts and cakes and well basically anything with chocolate in it. So whilst  I can only aspire to create something like this sculpture I can carry on making some pretty nice chocolate dishes and I am sure you will be doing the same soon if not already. Check the size of this sculpture Storing Chocolate Store chocolate in a cool, dry place away from direc...

Black Forest Trifle

Image
O.K. my quest to bring you the recipes for a lavish tea party is over. I am turning my attention to a  really nice Summer dish  a Black forest trifle. Many of you would probably think that trifle is a relatively modern dish as did I, But I was surprised that the earliest known use of the word trifle was recorded to be in 1596 in England,it was known to be a thick cream flavoured with Ginger and Rose water.Later on around 1747 came the introduction of gelatin or jelly.Whilst I'm sure I have not pioneered this recipe I can highly recommend this dish especially on a hot summers day.Not entirely sure what day summer falls on in the U.K.  this year but you can be sure I will be ready with this recipe so without any more waffle here is the recipe so that you to can be ready. Black Forest Trifle Serves 6-8 Ingredients 6 thin slices chocolate butter cream Swiss roll 2 x 400 g/ 14 oz can black cherries 2 tbsp kirsch 1 tbsp cornflour (cornstarch)...
