GOLDEN CAKE-LIKE CRUST CHICKEN PIE

Do you love chicken pot pie? If so, then this recipe is a must try. Just trust me! It's simple...yet divine.  In a Pam sprayed 9X12-inch baking dish (or similar size) place 2 1/2 cups of cooked, chopped chicken.  Whisk together 1 can cream of chicken soup, 1 1/2 cups chicken stock and 2 Tbsp. cornstarch and 1 cup shredded cheddar cheese until nice and smooth.   Over top of the chicken place 1 1/2 cups of frozen thawed peas and carrots. Top this with the soup mixture. Now whisk together 1 1/2 cups self-rising flour with 1 stick melted butter and 1 cup buttermilk; place batter evenly over the top of the pie. Take note now of how ultra creamy the batter is. Uh-la-la.. Now place the pie in a preheated 400 degree oven and bake for 40 to 45 minutes until the crust is a nice golden brown. Tuna and Egg Mayonnaise Salad

Made tuna salad for Big C when he came from from school yesterday and he loved it! He wanted to have it for lunch again today, and I decided to add an egg mayonnaise topping as well for more protein and greater variety.  It was great! Very refreshing and colorful, and not as heavy as the usual rice or noodles dishes, which tend to make him sluggish in the afternoon.  Salads make fantastic meals, especially during hot weather and exam time, when I need him to be more alert and less lethargic. They're easy to prepare and don't require any heavy cooking! In a way, I wasn't sure whether this should go under "Main Course" as we usually have salads as a main meal itself, but since restaurant menus tend to have these under "Appetizers", this recipe shall stay here for the time being. Bran Muffins

My neighbour has been posted to the Middle East and whenever the family comes back for vacation, they always bring back the best dates from the region. They gave me another packet of dates from their recent summer vacation, I was determined to look for new ways to incorporate the delicious dates into a muffin recipe.  And these healthy muffins turned out nice and fluffy and yummy!  Even my eldest son, who is usually resistant to health foods, would eat them for breakfast :-). This recipe uses buttermilk, which really helps give the muffins a wonderful texture as the lactic acid present in the buttermilk acidifies the baking powder and baking soda to produce carbon dioxide. You can use half a packet of a 600 ml carton of buttermilk and freeze the remainder for the next time you require it. Double Chocolate Oatmeal cookies are some of my very favorite! One day I went to a book signing and the author happened to have written a cookbook about Chocolate, and she was serving these cookies. One bite and I was hooked! I do need to give a disclaimer, this is not the recipe that Cutler's uses!  Double Chocolate Oatmeal Cookies from Chocolate Never Faileth by Annette Lyon pg 46 1 stick butter 1/2 cup brown sugar 1 egg 1 tsp. vanilla 1 1/4 cup flour 3 tablespoons cocoa 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 1 1/4 cup oats 1 cup semisweet chocolate chips Preheat oven to 350 degrees. Cream together the butter and brown sugar. Add the egg and vanilla, mix. Mix in flour, cocoa, baking powder, baking soda, salt and cinnamon until combined. Add the oats, mix until moistened. Easy Muffin Recipes

A colleague gave this recipe to me years ago, and I've been using it ever since! The muffins are great for breakfast or afternoon tea. Try this out if you're new to baking. The recipe doesn't require any mixers, and you don't need fancy muffin pans either. The ingredients are simple and easily available too. Just get the paper muffin cups from Phoon Huat or SKP and off you go! Muffins (American, makes 8-10 using big muffin cups) Ingredients 225g plain flour 2 teaspoons baking powder 80g caster sugar pinch of salt 250ml milk 100ml sunflower or corn oil 1 medium-sized egg 50g raisins* * You may also substitute with chopped cranberries, almond nuts, dates or whatever you have available Method 1. MEET MAX..A MOST VERY SPECIAL BERNESE MOUNTAIN DOG and HIS SIDEKICK...JEB

Meet Max....our newest canine addition to the Forbes family....he just turned 4 months old and he is highly entertaining to say the least. He is a most handsome Bernese Mountain Dog and that white spot over his right eye is a 'pump knot' from running into something that didn't give back when he was playing with our 6 year old Lab...Jeb. Yes, there were vet bills involved, seems never ending in Carey's Flat. This is our first Bernie and we drove all the way to Western Kentucky to get him....it was love at first sight....more like a panting actually....he grew on us hard and fast. He loves Jeb, and Max is Jeb's baby....make no mistake about it! Pull up in our front yard...you are going to be greeted. Max is growing in leaps and bounds right before our very eyes...everyone who sees him loves him...what's not to love? Chicken Broccoli Alfredo Pizza

Our kids love pizza, but it just gets so boring when you have one variety, or that's what I think anyway, I'm sure not everyone agrees with that! One day when I was making pizza, I thought why not try a pizza that's kind of like one of our favorite ways to have Alfredo-with chicken and broccoli. And so this pizza recipe was born! Chicken Broccoli Alfredo Pizza 1 recipe Bread Sticks  (follow instructions through first rise of dough) Olive Oil Garlic Salt 1 recipe Alfredo Sauce 2 cooked chicken breasts (cook anyway that works for you), cubed 1 bunch broccoli 2-3 Green onions, chopped Mozzarella Cheese, grated Preheat the oven to 425 degrees, you can also preheat your pizza stone if you would like, I don't  because then I can use the counter to make the dough without killing it! Prepare the pizza stone by spraying it with cooking spray.  Start by shaping half the bread stick dough into a circle. Chicken Empanada

Try this version of Chicken Empanada with a hint of Italian gourmet. Perfect for weekend afternoons! WHAT YOU WILL NEED: 3 cloves garlic, crushed 1 pc medium onion, chopped 1/4 kg chicken breast, deboned and diced 1 pc large potato, cut into small cubes 2 tbsp raisins 1 pc medium red bell pepper, diced 1 pouch (115 g) DEL MONTE Quick 'n Easy Italian Pizza Sauce CRUST 3/4 cup evaporated milk 1 tsp calamansi juice 1/2 cup margarine, softened 1 pc  eggyolk 2-1/2 cups all-purpose flour 1 tsp sugar (optional) HERE'S HOW: CRUST: Combine milk, 1 tsp iodized fine salt or 1 tbsp rock salt and calamansi juice. Let stand for 5 minutes or until milk is curdled. Cream margarine and egg yolk until light and fluffy (5 minutes). Add milk mixture gradually while beating continuously until well-blended. Alfredo Sauce

One of our family's favorite meals is Fettuccine Alfredo. It's one of the only things that everyone can agree on. Today, I'm going to share how I make homemade Alfredo Sauce with you. You can use this sauce for whatever you want. I've used it for Fettuccine Alfredo, dipping bread sticks , and red-and-white mostaccioli. How can I forget over broccoli! It's the only way our daughter will eat it!  I also have another use for this sauce coming up in a future post! I got this basic recipe from a friend, but I've kind of tweaked it a bit to make it my own. Alfredo Sauce 1/4 cup butter 2 Tablespoons flour 1/2 teaspoon salt 1 cup milk (I use 1%) 1/4 cup Parmesan cheese (get the grated kind, or buy a block and grate it yourself!) Melt the butter in a saucepan. Stir in flour, and salt until smooth and bubbly. Add milk: cook over medium heat, stirring occasionally, until the mixture comes to a full boil. One of my favorite things to do is watch cooking shows! There are several that I watch and one of them is the Food Nanny . Her name is Liz Edmunds and she is really concerned about families taking time to eat dinner together and have great conversation while eating great food. I love her show. I'm really excited that I get to see her in person in a couple of months and hopefully I'll get to meet her too! On her show the other day, there was an enchilada recipe that I wanted to try, so I pulled out her cookbook and tried it for our family last night. This was a fun meal, the sauce is almost like the green dressing that you get at Cafe Rio, neither of our kids were a big fan of the lime in the rice, but I liked it!
