Gluten Free Peanut Butter Cookies

I've seen recipes for this kind of cookie before, but never really gotten around to trying them. Things that are gluten free usually don't taste very good to people that aren't allergic to gluten. But these cookies really are amazing! I love that you can make them so quick. The dough goes together really quickly, I think the total time between making the dough and baking the cookies was less than half an hour. They are also really versatile, you can make them like standard peanut butter cookies, rolling them in sugar, or add chocolate chips to it and make them like a chocolate chip cookie. I doubled the recipe so that we could try them both ways. Browned Tilapia with Avocado Salsa I just love this super flavorful and healthy family meal.  It's really easy and pretty fast too.  We love making fish tacos out of this fish and salsa for a great variation.  Just fill a favorite soft or hard taco shell with fish, avocado salsa and top with  the lemon dressing.  Yummmmmm. Avocado Salsa 4 ripe avocados, diced 2 ripe tomatoes, diced 1/2 cup red onion, finely chopped 4 cloves garlic minced 4 tablespoons cilantro, chopped 2 limes juiced 1 teaspoon cumin 1 teaspoon fresh ground pepper 1 teaspoon coarse salt Combine all ingredients in bowl and mix gently.  Set aside while you prepare the tilapia.  Top prepared tilapia with avocado salsa. I was raised in my maternal grandparents home where three meals a day was served each and everyday. Beef liver was one of my Mama Joe's best loved recipes by not only herself but both of her daughters and son, so it showed up quite often on the dinner table. None of us grandchildren would ever partake of it. We thought it to be a 'foul' thing that only adults could possibly stomach. Moving forward through the years I worked in different Country Clubs and restaurants and Beef Liver & Onions was a highly popular dish. An Army chef by the name of Glen Hicks was leading the kitchen staff at Grandfather Golf & Country Club in Linville, NC and I was one of his front line cooks.
