Moroni Funeral Brownies

That's not what these are called but that's the kind of brownie recipe I was looking for and these fit the bill.  Remember the last funeral in Sanpete County you went to? A large spread of desserts lovingly donated by the Moroni Relief Society? Somewhere among that table is a cookie sheet full of frosted brownies. These are those brownies.  They're originally Lunch Lady Brownies but that moniker conjures no fond memories as I never had brownies like this at school, only funerals.  Anyway, enough about Moroni (oh the marinated turkey!)    It is an entirely different brownie experience eating these warm and gooey out of the oven than the next day completely set. Eat them both ways but set is the Moroni Brownie.  Here's the recipe. Watermelon Checkerboard Salad                        With the world turning green again, we are all gearing up for summer!  Hip Hip Hooray!   Watermelon is a favorite summer staple and this refreshing appetizer salad adds another fun twist on it's traditional serving ideas.  It's just so beautiful!  We had a salad like this on a Caribbean cruise once and I simply loved the artistic element with such a unique flavor combination. 1/4 of a watermelon cut into 1/2 inch squares block of feta cut into 1/2 inch squares fresh mint leaves a couple fresh limes, squeezed Arrange watermelon and feta on a platter in a checkerboard pattern and garnish with mint leaves.  Drizzle with fresh lime juice.

Fresh Strawberry and Cream Cheese Pie Hi everyone!  Hope you all had a fun Spring Break!  I am SO happy Spring is here and with it a whole new group of wonderful foods to enjoy.  This is our grandma Carroll Thomas' recipe for the most positively scrumptious strawberry pie ever!  It has a hidden layer of cream cheese that is so delicious with the strawberries. Ok, you might say after reading the ingredients... I am a certified beach bum. I learned to swim in the ocean. I long for it's breezes to wash down over me. I dream about the salt water covering my body. I long for the day that I will be able to live there. I worship the sun. VODKA PENNE with FRESH SHRIMP 7 tablespoons butter 3/4 cup vodka 3/4 tsp. crushed red pepper 14-oz. crushed tomatoes in puree 3/4 cup heavy cream 1 tsp. salt 16-oz. penne, cooked al dente, drained 4 oz. grated Parmesan cheese 1 lb. fresh medium shrimp Melt the butter in a saucepan.Stir in the vodka and crushed red pepper. Simmer for 2 minutes. Stir in the tomatoes and cream. Simmer for 5 minutes. (Favorite beach house-not my house-but a girl can dream.) Add the salt and mix well. Remove from the heat.
