Christmas Chocolate Peanut Butter Dippers

Ingredients: 1 Box of Ritz Crackers (You can use Wheat, Original or Reduced Fat. I usually use reduced fat.) 1 Small 18 Oz. Jar Of Smooth Peanut Butter (I use Reduced Fat or Whipped, but you can use any kind of smooth Peanut Butter) 2-11.5 Oz. Bags of Chocolate Chips 1 Bar of Wax Mini Baking Cups (You will need about 75 and you will need to open them up and flatten them out) 1 Knife to Spread The Peanut Butter Plastic Dipping Tool (Made Specifically to Dip Candy), or a fork Directions: Take two crackers and place a small amount of peanut butter on one, then place together like a sandwich. Continue the process until all crackers are used up. While putting crackers together begin to melt the bags of chocolate chips and bar of wax in a double boiler (use more wax if chocolate is too thick). After chocolate has completely melted begin dipping cracker sandwiches into the chocolate at least a couple of times. Ingredients: FOR THE SHORTBREAD LAYER 2/3 cup butter, softened 1/4 cup sugar (I use and LOVE In The Raw Sugar Organic White) 1 1/4 cup all purpose flour 1/4 teaspoon salt 1 teaspoon pure vanilla extract FOR THE CARAMEL LAYER 1 (11 ounce) bag of caramels 1/4 cup heavy cream 1 cup dry roasted (plain) peanuts FOR THE CHOCOLATE LAYER 12 ounces good quality milk chocolate chips Instructions: Preheat oven to 350F. Line a 9x9 inch baking dish with parchment paper. Set aside. Cream together the butter, sugar, flour, salt, and vanilla until crumbled and fully incorporated. Press the shortbread mixture into the bottom of the lined baking dish and cook for approximately 20 minutes, until slightly golden. Remove from the oven and set aside. Place the caramels and the cream in a microwave safe bowl and microwave for 2 minutes, stirring every 30 seconds. Stir in the peanuts and pour the mixture evenly over the shortbread. This Raspberry Walnut Torte recipe was adapted from an old Taste of Home magazine (June/July 2001). Serve it for special occasions, and it's sure to get rave reviews. I use less raspberry preserves than what the original recipe calls for (or it has too much of a "peanut butter and jelly sandwich" taste). Healthy Almond and Cinnamon Christmas Stars

Ingredients: Makes about two full baking sheets � 2 cups of freshly ground almonds (250g) � 1/2 cup of coconut sugar (100g) � 1 tablespoon of ground chia seeds � 2 tablespoons of cold water � 2 tablespoons of maple syrup � 3 teaspoons of ground cinnamon � a pinch of vanilla powder � a pinch of powered xylit for decoration Instructions: Start by grinding the almonds into a flour if you are using whole almonds. Place the ground chia seeds and the water into a small bowl. Whisk together with a fork and place into the fridge for about 10 minutes. Place the coconut sugar, ground almonds, cinnamon and vanilla powder into a food processor or big bowl. If you are using a food processor, then mix it shortly. If you are using a hand mixer, just quickly mix everything. Add the chia mix and maple syrup and mix everything for about 30 seconds until a sticky dough forms. Pre-heat the oven to 160�C (320�F).  Ok!, today I am not posting a recipe.  Today I want to show you something . If you have already checked the photo above you are probably wondering what it is right? This is called a Mudi locally. Its the solidified fat  that forms inside the  coconut as it ages.   When growing up we used to have three huge coconut palm trees in  our house.  To prevent the coconuts from falling on people's heads my father would get someone to pick  the coconuts. Some  will be young while the  others will be slightly older ones.  The young coconuts will be sent to friends and family and we would drink for our hearts content. While the older coconuts with more meatier flesh will be   left to use for making various dishes. Now usually  there will be quite a huge  pile of coconut, while my mum has some of them husked and cleaned  the others are left with the husk . Fish Tacos with Chipotle Slaw and Guacamole

Many restaurants serve tasty fish tacos but they are most likely higher in fat and salt than homemade ones. Making fish tacos at home is a way to ensure only the finest ingredients are used. This version features a fish marinade of coconut oil, cumin and chile power. The simple slaw is seasoned with a good quality mayo with chipotle flavoring, and the avocado topping includes fresh lime, garlic and cilantro. Christmas Funfetti Cake Batter Truffles

Ingredients: 1 cup white cake mix 1/2 cup all purpose flour 1/2 cup granulated sugar 1/4 cup butter, melted 1/2 teaspoon vanilla 2 tablespoons milk 1 tablespoon Christmas sprinkles + more for decoration 1 1/2 cups white chocolate chips or vanilla almond bark Instructions: In a large bowl, whisk cake mix, flour and sugar. Stir in melted butter, vanilla, milk and sprinkles. Mixture should be moist and be able to hold its shape easily when formed. Using a cookie scoop, form mixture into even balls and refrigerate 20-30 minutes. In the mean time, melt chocolate in a double boiler or slowly in the microwave. Using a fork, drop one of the cake batter truffles into the chocolate and roll around to coat. Tap off the excess gently and transfer to cookie sheet lined with wax paper. White Chocolate Dipped Peppermint Sugar Cookies

Ingredients: 2 3/4 (390g) cups all-purpose flour 1 tsp baking soda 1/2 tsp salt 1/2 tsp cream of tartar 1 1/2 cups (320g) granulated sugar 1 cup (8 oz) unsalted butter, softened 1 large egg 1 large egg yolk 1 tsp vanilla extract 3/4 tsp peppermint extract 2 1/2 cups (15 oz) white chocolate chips 2 1/2 Tbsp (30g) shortening 1/3 cup (60g) peppermint bits or finely crushed candy canes Directions: For the cookies: Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking soda, salt and cream of tartar for 20 seconds, set aside. In the bowl of an electric stand mixer fitted with the paddle attachment, cream together sugar and butter until combined. Mix in egg then mix in egg yolk, vanilla and peppermint extract. With mixer set on low speed slowly add in dry ingredients and mix just until combined (dough with will thick, so stop mixer and mix by hand to get flour at bottom if needed). When Jamie Oliver's 30 minute and 15 minute meal cook book, came out  and  after watching the series on television I wondered if he knew that not all of us come equipped with a dish washer, because if I was to use the food processor , the  4 pans I will spend another 15 minutes washing everything and wiping them.  Now don't get me wrong I love Jamie Oliver , but  you know what I mean right? For me, my 30 minute meal has to come from  one pot recipes, so I have to spend less time washing up. This delicious spagetti dish came to me after I saw this recipe on Pinterest ( yes I know I seem to get a lot of inspiration from there these days and you can also find my pins there was well). Maple Bacon Monkey Bread

I saw a post earlier using biscuit dough, maple syrup and bacon to make a wonderful looking Maple-Bacon Biscuit Bake. I thought, "I'll turn that into monkey bread." Yeah! I know a few spots got a little to browned, but that's because I had the oven on 400 instead of 350. It yours starts to brown to quickly, lay a piece of aluminum foil over it. Don't cover it tightly, just lay a piece over the top. Syrup: 1/2 pound bacon, cooked until medium-brown 1/3 cup brown sugar 1/4 cup All-Purpose Flour 1/2 cup maple syrup 2 tablespoons melted butter Bread: 4 tubes refrigerator biscuits 1/2 cup Sugar Preheat oven to 350 degrees. Chop the cooked bacon into 1/2" pieces. Combine the bacon with the remaining syrup ingredients, stirring until well combined. Set aside. Cut biscuits into fours and roll into balls. Ingredients: 24 ounces white chocolate (I used 2 bags of white chocolate chips) 2 tablespoons vegetable shortening (I use Spectrum) 1 cup chocolate cookies crumbs Instructions: Cover a cookie sheet with foil or parchment paper. Stove top Method: Place the white chocolate and shortening in the top pan of a double boiler. Heat while stirring until thoroughly melted. Microwave Method: Melt 12 ounces of white chocolate chips and 1 tablespoon shortening in a microwave safe bowl. Repeat with the remaining white chocolate and shortening. Once the white chocolate is melted stir in � cup of the cookie crumbs until just blended. Do not over-stir. Spoon the melted chocolate onto the cookie sheet. Then use a spatula to spread it evenly over the cookie sheet. Let sit for 2 hours to firm up or put it in the freezer for 30 minutes. Break the cookies and cream bark into pieces. I love making meals that are both delicious and healthy, like these Millet and Hemp Seed Veggie Burgers. Whole grain millet is gluten-free and a "smart carb" with lots of fiber and low simple sugars. It's also a good source of some important nutrients such as copper, manganese, phosphorus and magnesium. And hemp seeds are a complete protein and rich in B vitamins, dietary minerals, iron and dietary fiber. Ingredients: 3 cups flour (do not firmly pack) 1 tsp. baking powder 1 cup unsalted butter 1 cup sugar 1 large egg 1 tsp. vanilla extract Instructions: In a separate mixing bowl, whisk together flour and baking powder. In the bowl of a kitchen mixer, beat together unsalted butter and sugar. Once mixed well, add in egg. Mix again, then add in vanilla. Slowly add in flour mixture (about a cup at a time). Mix until dough forms and begins to clump together. If your dough is still crumbly, keep mixing! Gather up dough and knead it with your hands until it�s nice and smooth. Roll it into a ball, wrap with plastic wrap and place in fridge to chill. Twenty minutes is usually optimal. You will want it to be firm, but not hard. If it�s too hard, leave it out on the counter for a little bit until it softens up. You can also knead it a tad with your hands to help soften it up.
