SANDRA'S HOMEMADE PIZZAS from SCRATCH

A fantastic recipe for two 14" pizzas you are able to prepare from beginning to end in 1-1/2 hours, although an hour of that time is kicking back while the dough proofs... Yield:2 (14-inch) pizzas Prep: 20 min Proof/Rest: 1st Proof = 1 Hr -- 2nd Rest = 10 Mins. Bake: 12-14 Mins. INGREDIENTS Crust (makes two 14" pizzas) : 3-1/2 cups all-purpose flour 1 teaspoon granulated sugar 1 envelope instant/rapid dry yeast = 2-1/4 tsps . Churros

We have something similar to the Mexican Churros, known as Kaamaranga or   as I later found out through a reader Balakshaam . Similar in making , but once the pastry is fried they are soaked in a sugar syrup so they don't  have that lovely crispy texture as Churros. My boys love Churros but its a bit hard to pipe them out , I always end up bursting the piping bag.  So  the last time I made them , I piped them on a  baking paper, then removed and dropped them into the hot oil. I found this Churros recipe by Chef Rick Bayless  , its a pretty straight forward recipe and delicious. So I will cut the chit chat and get on with the recipe. Sausage and Spinach Pasta Bake

Pasta, Green Beans, BLT salad and Garlic bread! 1 (12 ounce) package pasta* 1 pound ground sausage, cooked and drained 1 (10 ounce) package frozen chopped spinach, thawed 2 eggs 1/4 cup olive oil 5 cups tomato and roasted garlic pasta sauce 2 cups shredded Cheddar cheese 2 cups shredded Mozzarella cheese Preheat oven to 350 degrees F. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and sausage. Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. Sweet Potato Pie

My sweet potato pie recipe includes fresh sweet potatoes roasted in the oven, which gives the pie an extra rich and yummy taste ;o) Yield: 8-12 servings 1 9-inch pie crust (see P ie Crust 101  for recipe) 1 pound cooked and mashed sweet potatoes (about 2 cups) 1 1/2 cup half and half 3/4 cup coconut palm sugar 2 eggs 1 teaspoon vanilla 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1/2 teaspoon salt Preheat oven to 400 degrees. Bake sweet potatoes in the preheated oven for 60 minutes, or until soft. Reduce heat to 350 degrees. Put cooled sweet potatoes in a large mixing bowl and beat on medium speed until smooth; add cream, sugar, eggs, vanilla, cinnamon, nutmeg, cloves and salt; and continue beating until fully incorporated.  Pour sweet potato mixture in pie crust and bake in preheated oven for 1 hour, or when tooth pick comes out clean. 

Kulhavah

Before I tell you what this post is about  I have to tell you about an old story behind the above picture.  There is a old saying in Maldives that when a person forgets his roots  they say just like " Kulhavafalhu Rani " or the queen from the Kulhavah grown area. Anyway the above picture shows a locally grown ? fruit? known as Kulhavah . It has a sweet sour taste and a very strong smell as it ripens. Now the story behind the food.  There was once this poor girl who lived  in an island in Maldives. These Kulhavah were grown in her house,  and she loved eating them. It can be eaten  in its slightly sour green green stage or overly ripe stage.  Anyway, one day the King discovered her and fell in love with her and took her to live in Male' in his Palace.  After years passed by one of the islanders went to visit the Queen, ( the girl)  and took a basket of Kulhavah as a present. Perfect Apple Pie

There aren't many recipes that I've continued using since I started baking many many years ago ;o) but this is definitely one of them. I adapted it from my very first McCall's cookbook. Although I've tried several different apple pie recipes throughout the years, I always come back to this one. For a tasty apple pie, make sure you choose apples appropriate for baking. I usually use Granny Smith apples because the sugar counteracts their tartness, and they mix well with the cinnamon and nutmeg. Let the fall begin... Vegetable Lasagna

The weather is getting colder so I'm ready for some comfort food ~ yep, lasagna!  When I make lasagna, I like to make my own sauce... it just doesn't seem homemade using spaghetti sauce. This sauce is super easy to prepare too ~ just throw the ingredients in a large saucepan and let it cook while you work on the rest of the recipe. You love mushrooms and sweet peppers on your mozzarella pizza, right ~ so you're sure to like them in your vegetarian lasagna... enjoy! Hoot Owl Cookies

3/4 cup butter 1 cup brown sugar 1 egg 1 teaspoon vanilla 2 � cups flour 2 teaspoons baking powder � teaspoon salt 1 � squares baking chocolate (melted over low heat) 1/4 teaspoon baking soda Cashews Chocolate chips Cream butter and sugar. Blend in egg and vanilla. Mix in flour, baking powder, and salt. Separate out about1/3 of the dough and to this smaller portion of dough, add the melted chocolate and baking soda. Blend well. Chill the chocolate and vanilla dough for about 1 hour. Once they have chilled, roll the vanilla dough into 2 strips�10�x4". Shape chocolate dough into two rolls--10" each. Mold a strip of vanilla dough around a chocolate roll. Repeat. Wrap rolls of dough in foil and chill for at least 2 hours. Cut rolls into 1/4" slices. Place 2 slices together on a greased cookie sheet to resemble owl face. Pinch each slice at the top to form ears. Apple Fritters My son Timothy loves doughnuts.   Ask him what kind of cake he wants for his birthday, and it�s...�I want doughnuts!�   With hot fritters from favorite bakeries in mind I wanted to figure out how to do these at home. Chicken And Corn Tortilla Lasagne

This recipe was inspired by my Roshi Pie recipe. I had some left over roast chicken ( I always try to make sure I have  left overs when I do roast chicken. Anyway, I saw this recipe of Chicken and Sweet corn Canneloni in one  of the magazines I had and wondered if I can try this  and use tortillas and make a sort of Lasagne style dish.  Ready made tortilla's were easily available during the Ramadhan and I made sure I stocked up with them , so they were at hand when I needed to make some quick sandwich wraps or for days when I am just plain lazy to make Roshi . But I won't use the traditional Maldivian roshi for this recipe, but if you are, I would roll them slightly thicker  than  the usual roshi , which are quite thin and will end up too mushy to enjoy. We have been having a rough time in the South/Southeast after Hurricane Matthew. North Carolina is continuing to have flooding issues. Here in South Carolina, many people remain in the dark with no power. I am lucky. I have my power back on, but just 2 miles down the road they are still without power. It is possible that they will be without power for a few more days! With that being said, we got a little tired of the grill. I have never missed my stove more!
