Mama's Coconut Cake

Mama's Coconut Cake has finally come back to reality. If anyone remembers this legendary cake, let me know. She never publicly released the recipe. Years ago, I asked around. People said they had the recipe, but theirs never measured up to the taste of hers. I remembered a secret step she added to hers, and I think I got it right, finally!!!  This cake was Mama's pride and joy. She never gave anyone the "entire" recipe. She would give them the recipe but left one step out. They would fuss at her and tell her that it didn't taste the same! She would make one for them, (for free) but she kept the recipe for herself. She said that she figured it out and anyone else could too! A while back, I had a man that received this cake for a high school graduation dessert contact me. He described the taste and texture. Valhomas Spagetti

I have two very close friends and occasionally we get together and head out for dinner. So one time last year we headed out for the much awaited dinner night. After much debating we once headed to one of the most happening places in town,Thyme .I  had already done my homework on the place and so choose the much talked about Valhomas Spagetti, or in english smoked tuna spagetti. It was pretty good and loaded with dried chillies  that can cause you to sweat a little, or a lot. if you don't eat much chillies.  I wanted to replicate the recipe , and after much tries,  I came up with this recipe.  Serves 2 adults and 2 kids. Or 3 adults. Peach And Almond Galette

I love making Galettes , they are so easy to make , no blind baking , just chuck everything in and bake.  I came up with this peach galette using canned peaches. Fresh peaches are very expensives here in Male' and not so easily available at times so I used canned peaches. The almonds I added  for texture and also into the pastry.  I spiced up the peaches with cloves and cinnamon. NOTE:  sometimes when the weather gets too hot its best to make sure you chill the dough well. Chill  for a few minutes after rolling it too before adding the filling and forming the gallete Recipe : Peach and Almond Galette 1 large can Peaches or 2 small cans 2 tbsps cornflour 1 tsp ground cinnamon 1/4 tsp ground cloves 1 tbsp sugar Pastry: 200g plain flour, sifted 25g ground almonds 1 tbsp icing sugar pinch salt 90g butter, cold 1 whole egg extra 2 tbsp sliced almonds Prepare the pastry first by  mixing butter and flour till resembles light breadcrumbs, don't over work, add groun...

Rihaakuru Boakibaa

I usually make a small Rihaakuru Boakibaa ( or savory cake made using rihakuru or fish paste), as hubby is not a big fan of it.  So its just me and the boys who enjoy it. Its slightly difficult to get the texture right as it always ends up rather crumbly but its one of my favorites especially when growing up.  I like to grind everything in the food processor  so I get a nice smooth batter.  I prefer to grind my own rice than buy store bought ground rice. Recipe : Rihaakuru Boakibaa 1 1/2 cups basmathi rice 1 1/4 cup grated coconut 1 large onion, very thinly sliced 1 scotch bonnet, thinly sliced 1 inch ginger , grated finely 12 curry leaves, finely sliced 3-4 tablespoons good quality rihaakuru 1/2 tsp tumeric salt to taste 1/4 cup water Juice of 1- 1 1/2 lime oil for greasing First, Soak the basmathi rice in water,  after washing in several changes of water, for at least 3-4 hours. Black Bean, Kale and Avocado Tacos

Lately, I've felt like I should change my greeting to: "I eat a small plant-based diet and everything else in large quantities." If I don't eat healthy, it's usually because I don't think I have the time to make a nice meal. But there are plenty of easy and healthy recipes... it's a matter of just doing a bit of pre-planning. This taco recipe is quick, delicious and healthy. You can have them prepared faster than picking up take-out (unless you happen to live next door to Taco Bell ;o) You'll get plenty of protein with the black beans and quinoa, along with your daily dose of cruciferous vegetables. Strawberry Syrup

I had a request for strawberry syrup, so I went to my friend Jay at Willard Farms .  They smelled delicious, and the hubby could not resist eating a few off the top on the ride back home. Once home, the prepping begins. It takes quite a while to clean and chop two gallons of strawberries! The syrup recipe is a simple one and can be used to make any flavor syrup you would like to try. I've made Blueberry and Blackberry already. Now strawberry, and I think I'll make cherry next. They are great to have on hand for pancakes, crepes, ice cream, yogurt and much more! Basic Syrup 1 cup fruit 3/4 cup sugar 1/3 cup water Clean and chop fruit. Combine fruit water and sugar. Bring to a boil, then simmer until thickened.* (about 20-30 minutes) Cool and pour in jars. Store in the refrigerator or process in a water-bath for 10 minutes for pints and 15 minutes for quarts. *The request I had for syrup was to leave the fruit in the syrup, but you can strain it out if you like. Iftar With Friends part 1

First of all , Iftar is the meal we have after breaking the fast. Since the Holy month of Ramadhan is about to start I wanted to do something different. Even though we fast during the month of Ramadhan ,  the Iftar time is always a special time.  That is the time to break the fast at sunset. I am always on the look out for easy meals to make, snacks , desert and a main meal which isnt so heavy but still filling. So I asked the lovely ladies of the  Muslimah Food Bloggers group on facebook  if they would like to contribute some easy kid friendly  and also budget friendly recipes.
