Yogurt And Berry Terrine with Strawberry coulis

Eidhul Adha is here!! So its pretty chaotic on the streets of Male' everyone is running or rather zooming around trying to head to the islands or resorts or abroad for Eid holidays. So for this Eid I have a very elegant dish , quite a show stopper I would say  one that took me ages to perfect. Great desert to serve  for a special occasion . I love berries, but they are sooooo expensive here in Maldives, I mean its not something you can buy every day to enjoy..  The first time I ate this  terrine was in Bandos Island Resort and the taste just left its mark on me that I finally realized maybe its really a yogurt panacotta.  After a lot of ups and downs I finally found the perfect recipe.   I made this  for my in laws once , when they came over for lunch. Manuka Smoked Sliced Salmon was on sale  at   Fantasy Store ,here in Male' , its a specialty shop  I would say, as its the only place that sold gourmet food, cold meats and various cheeses etc. But I love visiting there and was so excited to finally find smoked salmon at a reasonable price.  As soon as hubby found out I was going to use smoked salmon  he made a l  "I don't really like" that face LOL, talk about fussy kids even the father can be fussy at times . I promised him he will like it. Even the boys ate it without a big fuss.  I referred to a few recipes online and went for the most kid friendly one, chopped up smoked salmon mixed with dill, cream cheese and instead of chives I used spring onion. Soups  are one of my go to recipes when ever there is someone having a cold in the house.   Thankfully the boys find it easier to eat  soups when sick than a heavy meal.  I made this one  on a rainy day,  the kind of day you want to go to  curl up on the sofa and do nothing but enjoy the cool air.Sadly my biggest baby, aka hubby, is not such a big fan of soup... but then he still has to eat it as I make it for him as well, when he comes down with a cold . Hamburger and Potato Casserole with a Bechamel Twist

I was trying to figure out what to cook for supper with the things I had on hand. The cabinets are getting pretty bare, and those that know me, know that "running to the store" is not an option out here. I need a couple of hours to be able to do the shopping. Well, I had ground beef in the freezer and thawed it out. I had a few potatoes, a couple of onions and some cheese. Most recipes would call for some cream of mushroom or broth next, but I didn't have any on hand. I decided to go with a bechamel with a garlic kick. Here's a step by step, and the recipe is at the end. Layer potatoes and onions. Next combine hamburger, spices and bechamel, then top the potatoes and onions. Next Cheese! Another layer of potatoes and onions. More meat mixture. Continue layering. After 4 hours cooking on high. All plated and ready to gobble up! Getting a good quality mince is not easy.  Not knowing whats inside a packet that comes from abroad keeps me back from buying it. But every now and then I buy a pack , I prefer the Ayam brand which tastes the best or I mince  some boneless chicken breast in the food processor.  I make a batch , cook them and then freeze them so I have a batch to make pasta or pop into rice or even for sandwiches during the week. Recipe : Chicken Meat balls Makes 20- 22 meatballs 400g chicken mince ( store bought or freshly ground in food processor using 400g boneless chicken) 1/2 cup  quick cooking oats  2 cloves garlic, grated 1 tsp grated ginger 1 tsp ground black pepper 1 tsp salt (level tsp) 1/2 tsp ground  cumin 1 tbsp finely chopped parsley ( if available) 1 small egg, lightly beaten Oil (2 tbsp) Place the oats in a spice grinder and pulse a few times. Hot Pepper Sauce for Collard Greens

With all the peppers the hubby planted, I have so much to make with them! Pepper Jelly, Pickled Peppers, Cowboy Candy (candied jalapenos) and much more! This was one that my MIL requested! Southern Collard Green with Ham Hocks 1 cup vinegar 1 tablespoon sugar 1 teaspoon salt about 30 small peppers Clean jar, lid, and band and rinse well. Mix together sugar, salt and vinegar in a stainless steel saucepan. Cook over medium heat until it begins to boil. Fill jar with peppers and pour hot vinegar mixture over the peppers. Leave about 1/4 inch of head space from the top of the jar. Remove air bubbles in the jar by tilting jar slightly to allow bubbles to escape as pepper press against opposite side of the jar. Wipe jar rim to clean. Place lid on top of jar and tighten ring. Mexican Haystacks

Many of you may have tried Hawaiian Haystacks, but here's a Mexican version. I tried this dish for the first time yesterday, and I can tell already that it's going to be a favorite that I will make again and again. This recipe would be great for a family or even a large group. I think it would appeal to both adults and children. And like many recipes on this blog, it's very easy to make. Quick and Easy Blender Salsa

I've had this recipe on one of my Pinterest boards for a long time, but never got around to trying it until my niece Cate made this for one of our family reunion activities. I was impressed by how good it was. I like the recipe because it is quick, because you can make the salsa year round since it uses canned tomatoes, and because it tastes quite fresh. You can find the original recipe  here . 1- 14 oz can diced tomatoes 1- 10 oz can original Ro-tel 1/2 small onion, roughly chopped 1 clove garlic, peeled and smashed 1/2-1 jalapeno, seeded or not (depends the degree of spiciness you prefer; I actually omitted this) 1 teaspoon honey 1/2 teaspoon salt 1/4 teaspoon ground cumin small to medium size handful of cilantro, washed juice of one lime Put all the ingredients in the base of a food processor or good blender (I used a stick blender) and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Grape Jelly and Mosto Cotto Balsamic

The hubby planted a cutting from his Dad's grape vine several years back, and we are now finally getting enough to can! This vine is special to the Vining Family (no pun intended!) because it was brought to this country by his ancestors. He told me last night that it was his great, great, great, great Grandfather's cutting that started the vine on American soil! What a heritage to pass down! I washed and sorted the grapes. This is some of the heritage that I have from my  Grandmama Bradham. Her chinois or stainless steel cone with pestle. You can see it was well used! The pestle is seasoned with many grapes and other fruits and vegetables! I got 8 cups of juice from the grapes. About the Mosto Cotto...
