Tuna and Tomato Galette

I love make galettes , its a free form tart.  No blind baking required. I saw a few tomato galettes on Pinterest and wondered if I can use some tuna along with it and extra cheese. It turned out quiet delicious and I think any Maldivian will like it as its got that chili kick ( although I dont go mad with the chilli like some people), the tuna flavor and the cheese and  sweet tomatoes. So give it a go and serve it along with a nice green salad. If you are making this on a hot day, chill the dough after rolling it  before you put the filling. This way it makes it easier to fold the edges. Double Chocolate Cake

Makes 1 mold of 26 cm Bitter cocoa 120 g Boiling water 250 g Milk 125 g Essence to taste 100 g butter Sugar 350 g Egg 5u Oil 130 g Flour 300 g B. Sodium 1 tbsp. ??Fill and coverage Dulce de leche pastry 500 grs. Semi bitter chocolate 200 grs. . ?? Step by step?? 1?? Mix cocoa + boiling water + milk + vanilla essence in a bowl. Reserve room temperature. 2?? Beat until you get a white cream the Butter + sugar, then add the oil + eggs (not cold!) And continue beating. 3?? Sift flour + baking soda and add to the shake, alternating with step 1??. 4?? Put the mix in a mold of 26 cm previously enmantecado and battered by caco or flour. 5??Slow at 180 degrees 45 minutes approx. Allow to cool, unmold and make 2 cuts or 1 what you prefer. 6?? Fill with the cream of ddl + chocolate (it is easy to melt the Chocolate and mix it with the dulce de leche!, It serves as both a filling and a cover) 7?? Cover all the cake with the chocolate cream and dulce de leche. Ready!

Kashikeyo Baipen (Screwpine fruit Porridge)

I know I posted this a long time ago but I took some of my old posts out due to some comments I got but then again , I realized  different people make their recipes differently, so why bother what people say. Anyway, the first time I heard of this recipe was from my husband. We had just been married and living in Kulhudhufushi as my husband was working there for 6 months.  I love screwpine fruit and its heady perfume. So there I was making, or rather trying to make, kashikeyo kandhi and hubby kept hovering around, going that's not how my mum used to make. Yes I know ladies,  there are lots of new weds, who read this who have heard this line LOL??. Anyway , a few years later,  I finally tasted the  dish , which by the way was a totally different  dish altogether, so my hubby was right???? .   My mum in law  showed me how to make  it and I love making this, especially during Ramadhan, as its not just a desert dish , it can even be eating...

I just have to share this fish curry. It is so yumm! I was looking for good fish curry recipe and came across one in Mohamed Amin's K arunayaa nulaa kehkun cookbook. I adapted it using ground spices and a few tweaks and voila! It's a delicious fish curry recipe, perfect to eat with rice or flat bread. Recipe : Fish Curry Serves about 4-5  * tsp of spices are usually level tsps  1( 350- 400g) fillet tuna fish , cut into small cubes 2 tsp ground coriander 1 tsp ground cumin 1 tsp ground fennel 1 tsp ground red chilli powder 1/4 tsp tumeric 1/4 scotch bonnet ( optional) 3 cloves garlic, grated 1" ginger grated 1 medium onion, thinly sliced 10 curry leaves 3" pandan leaf cut into large pieces 1" cinamon 6 cardamon pods, seeds only 3 cloves tiny pinch fenugreek seeds ( about 6 seeds) 500 ml water 200 ml coconut milk 1/2 tsp tamarind puree oil ( 2-3 tbsp) Grind the cinnamon, cardamon seeds and cloves to a powder. set a side. Chicken Curry puff

One of my favorite Malaysia snacks is Curry puffs. I made Sardine Curry puff  before, and then recently I  tried the chicken one.  It was a big hit in my home and also with my  in laws.  The best curry powder I would recommend would be Baba's meat curry powder, although you can still use the local roasted curry powder, which is also great. I have tried this using uncooked chicken as well as with left over roast chicken. Even left over chicken from a curry is great. What really makes this puff so special and extra delicious is the pastry. I learned this pastry recipe from Zoe @ Bake for Happy Kids. Even though you can use the regular shortcrust pastry to make this or even my patties pastry for this  recipe, just give this pastry a try once and you will want to make it again  and again.  Now , I prefer to make jumbo ones but you can try and make smaller ones. Banbukeyo Hithi ( Breadfruit Curry)

For ages I kept meaning to try one of the Hithi recipes. Hithi means bitter but this is not a bitter curry. Its called hith i because its uses a spice known locally as hithi damui . My mum kept saying its difficult getting hithi damui you can only get it from the local ayuvedhi stalls until my sister discovered after seeing the spice that it was in fact ajwain/ carom seeds . I have seen ajwain seeds in a local shop and also in some of the Indian specialty shops. Ajwain seeds although it looks a lot like tiny cumin seeds  has a slightly different taste. There  are two kinds of hithi , one is this banbukeyo ( breadfruit )  hithi and the other is maalhoskeyo hithi ( plaintain). Tuscan Soup... requested by a guy that hates soup!

Last time... "My guys don't eat soup. One night I was making this soup for my step-mother who wasn't feeling well. My son and husband were in the back of the house playing the play station. They came into the kitchen asking what the terrific smell was... Needless to say, I had to make another batch of soup!" This time the hubby actually asked me to make this soup!  I decided to make it a little heartier. I used Kielbasa because that was all I had on hand. Carrot and Orange Juice

Ramadhan is the time to go crazy with the juice. Its usually served during the breaking of fast. When I was growing up there will be water melon, coconut, gauva , canned jackfruit , canned pears etc. My Father used to be in charge of the juice making.  He would measure the sugar very carefully and then blend everything up. Sometimes he does wierd ones like mixing the previous day leftover juice with some new fruit. I love this combination of carrot and orange.  My 11 year old  loves carrot juice. Although he isnt crazy about the addition of orange. Complains why I cant just juice the carrot and not add the orange. But then again, I love to add that Orange. During Ramadhan we tend to eat less vegetables, so its a great way to get some vitamins in right, especially with so many colds and viral fever doing its rounds these days. Murangatholhi Miruhulun ( Moringa bean Curry)

The first time I heard about this curry was through a friend of mine. For some reason we were talking about food and the topic turned to Muranga tholhi, ( also known as  drumsticks), the bean from the Moringa tree . She mentioned her mom makes this delicious curry, where she prepares a spice paste. I have had Muranga tholhi kiru garudhiya and mas-huni but never the miruhulee version, which in a way means with chilli. Anyways this year I was wondering what other local curry I can make and remembered this Miruhulee muranga tholhi  recipe so called my friend up and asked if her mom would mind sharing her recipe.  So here it is. Its a delicious curry and goes well with rice and even with flat breads. Who is planning to watch the Royal wedding tomorrow? I know I am looking forward to it.  I remember as a  kid I had this Ladybird book  about Prince Andrew and Sara Fergurson Wedding. As any little girl , princes and princesses was pretty fascinating and a real one was like WOW!!.  So  to enjoy watching the big wedding, how about making a delicious Victorian Sponge cake. Of course I will be having mine after the Magrib prayers????. I have tried a few Victorian Sponge Cakes,  but the one I did by following Mary Berry's recipe was the best one.I didn't have self raising flour so I used regular flour and used 2 teaspoons of baking powder. Instead of caster sugar I used regular sugar. Rihaakuru Fathafolhi

I love any thing with Rihaakuru, the salty fish paste  thats a big local favorite. I made rihaakuru boakibaa l ast year  so this year I decided to make something with rihaakuru again. This time I am making rihaakuru fathafolhi or savory pancakes using rihaakuru .   I saw this recipe in one of the local cookbooks and gave it a try. As always had to adjust as the quantity was  quite a large one. I followed my mother's advice and added a little flour so its easier to make the folhi . The chilli may sound excess but you do need a good chilli kick with rihaakuru as well as the taste of curry leaves and ginger. Recipe: Rihaakuru folhi. I remember when I was small, my maternal grandfather would sometimes come home   from the mosque, I think it was during evening or early morning prayers, his handkerchief filled with jasmine buds. We used to put them in our cupboards to let  the flowers perfume our clothes. I love the smell of his handkerchief, he always had this big handkerchiefs that  he would keep rolling around his hand  and then again unroll it again. Anyway , these jasmine buds are not only used to perfume the washed and pressed clothes but also to make jasmine water. Like rose water and orange blossom water is used in the middle east, here in Maldives Jasmine water plays a very large role in sweet dishes.  I recently got some  jasmine buds  and I used it to make some jasmine water. Description Homemade baked donuts overloaded with gooey Nutella filling and crunchy cinnamon-sugar coating are mind blowing treat for all donut lovers. Ingredients Donut batter: 1 cup all-purpose flour 1 teaspoon baking powder Dash of salt � cup unsalted butter-melted (� Tbsp. to grease the pan and 3.5 Tbsp for the dough) 2 � Tablespoons sugar � teaspoon cinnamon 1 egg � teaspoon vanilla 7 Tablespoons milk Filling and Topping: � cup of Nutella (8 oz. or 220 grams) 2 Tablespoons unsalted butter-meted � sugar or light brown sugar 1 teaspoon cinnamon (more or less-to taste) Instructions ?Line donut pan with plastic wrap. Transfer Nutella to a piping bag (or zip-lock bag and cut off the corner). Pipe Nutella in the center of each cavity to make the ring, then place in the freezer until completely firm. Fried Tuna and Potato Patties

Ok I know I have done the baked ones, but this one has a slightly different pastry unlike the baked one. I used the egg to make my pastry richer but its not really necessary to add it.  My mother in Law makes this kind of pastry and its also found in some of the Hedhika ( local snack) shops. Since the theme for this month's challenge in the Muslimah Bloggers' was  to create a Ramadhan Recipe from Islamic world. Well Maldives is a Muslim Country and I feel this recipe fits the bill. Its often made in my home almost like once a week. Even though its not an authentic one , has the influence of Sri Lanka in it.Its almost like a curry puff you get in places like Malaysia , just no curry flavor. This is my version of a tandoori chicken. I have seen a lot of recipes  and there are some that has dried fenugreek leaves which I believe gives the tandoori chicken its unique taste.  But since its something thats not easily available I choose not to include it in. The word Tandoori actually refers to the oven that its cooked in, called a tandoor, which gives the chicken that smokey taste as well. But when you make it home the taste does tend to be different.  But anyway the boys love it, which is the whole point of making it.
