Steamed Chocolate Pudding

Pudding is a class example of dessert. Puddings are basically classified into 2 types: 1) a boiled then chilled, texturally a custard set with starch and 2) a steamed / baked, texturally similar to cake. I learned to make basic steamed pudding from my mom-in-law and then started doing various flavoured puddings. Here is the recipe of steamed chocolate pudding , a steamed dessert consisting of milk, cocoa powder, sugar & eggs mixed together and steamed, very similar to the Christmas Pudding. Ingredients: 500 ml milk (ratio is 500 ml milk = 60 gms of sugar) 4 tbsp sugar 2 tbsp cocoa powder 2 tbsp cornflour 3 eggs 1 tsp vanilla essence whipped cream or chocolate curls / shavings, for garnishing Procedure: Mix cornflour with 2 tbsp of milk to form a paste. Roasted Capsicum Salad

A colourful salad, a perfect combination of red & green going to the FIC-Red & Green event, hosted by Neha. I used red & capsicums coz the yellow coloured variety was not available. You can even add chopped onions, pickled jalapenos and spring onions to this salad. Ingredients: 1 medium sized red capsicum 1 medium sized green capsicum 1 tsp salt (to taste) 2-3 tbsp lemon juice (to taste) 3 tbsp olive oil freshly ground pepper a little white oil, for roasting Procedures: Wash the red & green capsicums. Brush the capsicums with white oil and slightly roast over gas flame. Allow to cool, cut & deseed the capsicums. Cut into long thin strips. Put all the sliced capsicums in a large mixing bowl. Add lemon juice, salt and olive oil. Mix well. Chill in the fridge for 1-2 hours before serving. While serving, sprinkle freshly ground pepper and mix well once again. Salad Decoration (FIC - Red & Green)

No prize for guessing.......I think the first thing that comes to mind while preparing salads is a red & green combination of tomatoes & cucumber with the addition of slices of carrots, onions, radish etc..... I love to decorate salads, each time in a unique way....I think I got this fever after participating in the various salad decoration competitions during my school days (our house even won the first position). Simple to prepare also. Wash and peel the cucumber. Wash and cut the tomatoes into roundels. Make thin onion slices. (You can put other vegetales like carrots, beet, radish, capsicum to make it a wholesome salad). Slit green chilli lengthwise (You can keep them whole as well). Cut long strips of ginger. Arrange in a serving plate. Sprinkle juice of 1 lemon. Sprinkle salt & pepper and serve. I am a voracious coffee drinker. I like my cup of coffee in any form be it hot or cold. After the introduction of Aqua Java, Barista in Kolkata, I have a great time in tasting so many varieties of coffee, specially those tempting cold coffees, served with icecream, whipped cream, choco chips, nuts, to list a few... My morning starts with a steaming cup of regular coffee (I do make variations by adding spices and cocoa powder) with some biscuits or homemade cookies (as the picture shows, my favourite coffee mug on the desktop with some choco chips & cashew cookies). Posto Boda (Toasted Chops of Poppy Seeds Paste)

Posto Bora / Posto Bo da is another popular recipe in everyday Bengali Cuisine, made up of poppy seeds (posto / khuskhus) paste and eaten with rice and biuli dal (urad dal). This is a dry dish prepared either by deep frying or shallow toasting of the chops made up of poppy seeds paste. Poppy Seeds are soaked in water and blended to form a coarse paste. This raw paste (known as Kancha Posto ) is a dish by itself where you can mix chopped onions & green chillies with a little mustard oil. Well here is the recipe for Posto Boda (I prepared through shallow frying / toasting method) Ingredients: 1 cup poppy seeds / posto / khuskhus 2 small onions, finely chopped 1-2 green chilli, finely chopped 2 tbsp atta salt to taste mustard oil, to toast Procedure: Soak poppy seeds in hot water for 15-20 mins. Drain and grind in a blender (with a little amount of water) to form a coarse paste. Add atta, finely chopped onions, green chilli to the poppy seeds paste and mix well. Heat oil in a kadhai....

Homemade Mexican Hot Chocolate

I was just about to droop finishing my writing assignments so I made myself a cup of real hot Mexican Hot Chocolate to keep my eyes open. An easy way to spice up your regular hot chocolate drink with a dash of cinnamon and red chilli powder and it only takes just a few minutes. Moreover you can modify the recipe as per you taste. Serve this yummy cuppa with whipped cream, chocolate curls and enjoy. Ingredients: 2 tsp cocoa powder 1 tsp coffee 2 tsp sugar 1/2 cup milk (200 ml cup, makes 2 cups) 1 & 1/2 cup water 1 tsp cinnamon, grounded a pinch red chilli powder chocolate curls / whipped cream, for garnishing Procedure: Put cocoa powder and coffee in 2 serving mugs. In a saucepan, add milk and water and bring to boil. Remove from flame and pour the milk & water mixture in the mug. Stir well. Aloo Posto

Aloo Posto (Potato cooked in poppy seed paste) is a delicious & popular Bengali recipe generally eaten as a dry accompaniment with a meal of steamed rice and daal. This recipe finds a place with biulir daal (urad daal) in every other Sunday afternoon lunch at our home. Ingredients: 4-5 medium sized potatoes 4 tbsp poppy seeds / posto / khuskhus ? cup water (to make poppy seeds paste) 2 tbsp mustard oil 1 tsp panchphoron 1 bay leaf / tej patta 3 green chillies ? tsp red chilli powder ? cup water salt to taste Procedure: Wash, peel and dice the potatoes into one inch sized cubes. Take a pan, boil water and steam the potatoes a little (ensure that the potatoes do not become too mushy). Keep aside. Soak poppy seeds in 1 cup of boiled water for 30 mins. Drain and put poppy seeds in a blender. Add 1 green chilli, ? tsp salt and ? cup water and blend to form a smooth paste. Heat oil in a kadhai. Add bay leaf & panchphoron and let them splutter.
